Fried carp is a dish familiar to us since childhood. To fry carp in a pan, you do not need a lot of time and effort, just follow the cooking technology, sequentially performing simple steps.

Whole carp fried in a pan

To prepare the fried carp in a pan, you will need:

  • 1 live fresh carp (1.5-2 kg);
  • a mixture of spices for fish;
  • flour or crushed crackers for breading;
  • vegetable oil;
  • salt and spices for marinade.

Step-by-step instruction:

  1. Whole fish in cold water.
  2. We clear the body of the scales and cut off the fins.
  3. Remove the remains of the black film from the back of the carp.
  4. We make a neat incision along the abdomen (no more than 2 cm deep so as not to touch the gallbladder).
  5. We completely remove the insides and wash the fish again.
  6. Rub the carcass with spices and put marinated in the refrigerator for 20 minutes.
  7. If there is an unpleasant odor, put in a grated clove of garlic in the abdomen.
  8. Bone the fish in flour or breading.
  9. We fry the carp in a pan with the addition of a small amount of vegetable oil for 5-7 minutes on one side and on the other hand until a brown crust appears.
  10. We spread it on the dish to the side dish and decorate with greens if desired.

Cooking in slices

To fry carp in pieces, you will need:

  • 700-800 g of fresh carp;
  • 3 medium-sized onions;
  • 1/2 lemon
  • any vegetable oil;
  • flour or breadcrumbs prepared for breading;
  • salt and spices for marinade.

Step-by-step instruction:

  1. We wash the carp, clean from scales and viscera, separate the head.
  2. Cut into steaks 4-6 cm wide.
  3. Sprinkle lightly with lemon juice.
  4. Rub with spices for fish and put in the refrigerator to marinate for 20 minutes.
  5. While the fish is pickling, chop the onion into rings and fry over low heat until rosy.
  6. Next, roll the pieces of fish in breading or flour.
  7. Put the steaks in the pan, preheating it with vegetable oil. Fry until cooked for 5-6 minutes on one side and the other.
  8. Serve to the table on a dish with your favorite side dish and stewed onions.

How to fry in sour cream

Fried carp in sour cream sauce has a delicate creamy taste, which allows you to use fish as a complement to any side dish or as an independent dish. As in the previous recipe, a dish of fried carp can be supplemented with stewed onions and carrots, seasoned with fresh herbs.

The main ingredients:

  • 700-800 g of fresh carp;
  • 4 tbsp. l sour cream (at least 15% fat content);
  • 2 large onions;
  • flour or bread crumbs to choose from;
  • any vegetable oil;
  • salt and spices for marinade.

Cooking Instructions:

  1. We clean the carp from the scales, take out the insides, carefully wash it and separate the fillet from the ridge, cut into portioned slices.
  2. Cooking sour cream sauce: mix 250 g sour cream and 2 tbsp. l water, add salt and pepper to taste.
  3. Next, rub the carp fillet with spices for fish and leave to marinate for 10 minutes.
  4. While the fish is pickling, fry the chopped onions in a pan until golden brown.
  5. Before frying, roll in flour or breading.
  6. Cook on low heat for 2-3 minutes on one side and on the other hand until golden brown.
  7. Drain the remaining vegetable oil from the pan, put the fried onions on top of the fillet and pour in the sour cream sauce.
  8. Leave the fish to fry in sour cream on low heat for 5-10 minutes, then let it brew under a closed lid for another 15 minutes until fully cooked.

Cooking technology in batter

The main ingredients:

  • 800 g of fresh carp fish;
  • 2-3 tablespoons of flour;
  • 3 eggs;
  • 3 tbsp. l fat mayonnaise;
  • any vegetable oil;
  • salt, pepper, spices for batter and marinade.

Step-by-step instruction:

  1. We wash the fish in cold water.
  2. We clean it from scales, cut off the fins, and separate the head.
  3. Completely remove the insides and rinse again, cut the carcass into pieces.
  4. We prepare the batter for frying: we mix the eggs, spices and mayonnaise, gradually pour the flour and beat until a homogeneous consistency.
  5. Dip steaks in batter and put in a preheated pan with vegetable oil.
  6. Cooking fish on low heat. We fry no more than 5 minutes on one side and on the other hand, so that the batter does not burn.
  7. Serve the dish with your favorite side dish and herbs.

In crispy flour

To cook fried carp you will need:

  • 700-800 g of fresh carp fish;
  • 2 large eggs;
  • 4-5 Art. l flour;
  • 2 tbsp. l ready breadcrumbs;
  • any vegetable oil for frying;
  • salt and spices for marinade.

Step-by-step cooking instructions:

  1. We clean the fish from scales, cut off the fins, take out the insides, wash and cut into portioned pieces.
  2. Preparing breading: mix salt, pepper, flour and crackers for breading. Beat eggs separately until smooth.
  3. Wet steaks a little with water, roll in flour and dry finished breading.
  4. Dip the slices in the egg and place in a preheated pan with vegetable oil.
  5. Fry on one side and on the other hand until a golden crust appears.
  6. To remove excess fat, put the fish on paper or napkins, wait 5 minutes and the dish can be served. Bon Appetit!
