Poppy is a very popular product in cooking, and it is not surprising, since many people have enjoyed the delicious taste of buns with black seeds inside since childhood. But besides them, with the addition of this component, you can cook so much delicious! In addition, baking with poppy seeds has useful properties: it relieves a headache, helps to cope with a cold and recover from an illness.

How to prepare and use poppy seeds for baking

The key to successful baking with poppy seed filling is its proper pre-processing. Culinary experts give a series of standard tips on how to prepare poppy seeds for baking.

Ingredients Composition:

  • poppy;
  • sugar (ratio with poppy seeds should be 1: 2);
  • water.

Cooking method:

  1. Rinse the poppy thoroughly in running water. This step should be skipped if milled seeds are needed in the recipe, because you can’t load them raw in the coffee grinder.
  2. Pour boiling water over the product and allow time for swelling (about half an hour). If the poppy is overdried, it makes sense to boil it for a couple of minutes.
  3. Drain the water through a sieve.
  4. If necessary, pass the poppy through a meat grinder. However, those who love the very structure of the seeds skip this stage or only slightly grind the product in a mortar.
  5. Mix poppy seeds with sugar until smooth.

Before you start cooking, you need to focus on the choice of poppy seeds. Prepackaged product should be preferred by weight, because only in it you can track the presence of defects or impurities.

Buns with poppy seeds from yeast dough

The first thing that comes to mind with the word “poppy” is buns. The classic recipe for their preparation is as follows.

Ingredients Composition:

  • 180 g of poppy seed;
  • ¼ milk packaging (+ 200 ml for the filler);
  • a glass of sugar (+ 2 tbsp.spoons for the filler);
  • 600 g premium flour;
  • 95 g spread;
  • a small package of vanilla sugar (for filler);
  • 2 eggs (+1 to cover before baking);
  • 2 tbsp. tablespoons of vegetable oil;
  • bag of dry yeast;
  • a pinch of salt.

Cooking method:

  1. Make a bun base. Pour warm milk into a deep bowl, add yeast and 1 tbsp. a spoonful of sugar. Sift a couple of tablespoons of flour to them, stir and leave the dough warm for half an hour. It should double, or better, three times.
  2. Beat eggs with a glass of sugar. When it is completely dissolved, pour in the molten oil and salt. Pour the mixture into a yeast base and add vegetable oil.
  3. Pour in flour, knead the dough thoroughly and form a ball out of it. Cover with a towel and leave for 1.5 hours at room temperature. After that, it is good to rinse the dough and leave it for proofing again, so that it becomes lush again.
  4. Cook the filling. Pour poppy seeds into boiling milk and keep on low heat for 5 minutes. Cover and let it brew for about an hour.
  5. Strain the grains through a sieve and grind with a blender. Mix with regular and vanilla sugar and grind again.
  6. Knead the suitable base of buns and divide into 2 parts. Roll out a layer of 5 mm or thinner on a powder-coated countertop.
  7. Lay out the filling according to the dough, form a roll and cut it into rolls 4 - 5 cm wide. Perform the same manipulations with the rest of the dough.
  8. Put the blanks on a baking sheet covered with parchment and let them stand for 20 minutes - they should increase in volume. After that, they need to be greased with an egg, slightly beaten with a fork.
  9. The approximate baking time of such muffin at a temperature of 180 ºС ranges from 20 to 30 minutes.

Delicious roll

Ingredients Composition:

  • 500 g of poppy;
  • 100 g of honey;
  • a pinch of salt;
  • 13 tbsp. tablespoons of sugar (3 - in the base, 10 - in the filler);
  • 500 g flour;
  • 400 ml of milk (200 - in the base, 200 - in the filler);
  • 150 g of butter and vegetable oil (50 - in the base, you can use margarine, 100 - in the filler);
  • 3 eggs (2 - in the dough, 1 - for lubrication);
  • yeast.

Regarding the amount of yeast, there is no strict recommendation. It is worth focusing on a specific product, since each manufacturer indicates on the label the amount of flour for which the package is designed.

Cooking method:

  1. Make a dough of yeast, a handful of sugar and 100 ml of warm milk. Put the resulting composition warm until the formation of the "caps".
  2. Sift the flour with a hill. Separately, heat half a glass of milk and dissolve oil in it, salt.
  3. Combine 2/3 of the flour with the milk-butter mixture, yeast, sugar and eggs. While stirring, gradually introduce the remainder of the flour.
  4. Mix the products with a mixer for 10 minutes, then roll the resulting dough into a lump, cover and leave alone for 2 to 3 hours. It should rise 3-4 times. After that, it should be removed and crushed well.
  5. Steam poppy for 10 minutes. Drain and repeat the procedure, reducing the time to 5 minutes. Remove excess fluid.
  6. Twist poppy seeds with sugar through a meat grinder.
  7. Mix the seeds with honey and butter and gradually introduce milk (as a result, it may require a smaller amount than indicated). Cook in the area of ​​the hour. The filling should turn out friable and not spread.
  8. Roll out the dough in the shape of a rectangle, slightly rounding the edges. Spread the filling on it and curl it from the longer side. Coat the product with an egg diluted in 1 tbsp. a spoonful of milk.
  9. Cook roll with poppy seeds at 180 degrees in the region of 40 minutes, lowering the temperature every 10 minutes by 20 degrees.

Puff pastry pie

You can use poppy in baking not only in the form of a filling. Often it finds application in the form of a sprinkle.

Ingredients Composition:

  • 1 kg of ready-made puff yeast dough;
  • 150 g of poppy seeds;
  • 50 g margarine;
  • 120 ml of milk;
  • 60 g of sugar;
  • icing sugar for decoration.

Cooking method:

  1. Defrost the dough.
  2. Grind the poppy in any way possible.
  3. Heat milk, add sugar and butter, stir until a single composition is obtained. Add poppy seeds and boil the mixture for 5 minutes. Cool.
  4. Form 2 rectangles from the dough, trying to roll it minimally so as not to damage the layers.
  5. Distribute the filling in one rectangle and cover with the second one on top. Pinch the edges and, if desired, make cuts on top.
  6. Place the workpiece on a laid and oiled baking sheet and bake for about 20 minutes at medium temperature.

Triangles with apples and poppy seeds

Ingredients Composition:

  • a full glass of flour;
  • 150 g of cottage cheese;
  • 3 apples
  • 6 tbsp. tablespoons of vegetable oil;
  • a handful of poppies;
  • 175 g of sugar (75 - in the dough, 100 - in the filler);
  • 1 egg
  • 1 sachet of vanillin and baking powder;
  • 1 teaspoon cinnamon;
  • a pinch of salt.

Cooking method:

  1. Combine cottage cheese, flour with baking powder, butter, egg and vanillin. Salt, mix the dough and let it brew for 20 minutes.
  2. Form 2 circles with a diameter of 24 cm and cut each into 8 triangles.
  3. On their wide side lay sliced ​​apple slices, sprinkled with sugar and cinnamon. On the narrow side, make a couple of incisions.
  4. Collapse each triangle with an envelope, put them all in a form, where grease with yolk mixed with milk and sprinkle with poppy seeds.
  5. Bake for 20 to 25 minutes at 180 degrees until a golden crust appears.

Cookies with poppy seeds and sesame seeds

  • 1.5 cups flour;
  • 150 g of sugar;
  • 3 eggs;

  • 2 tbsp. spoons of poppy seeds;

  1. Of all the necessary ingredients, knead regular yeast dough.
  2. Pour poppy seeds with boiling milk, add sugar and cook until the grains absorb all the moisture. Cover and keep warm.

  • 0.5 kg of flour;
  • 1 egg
  • 250 g of poppy;
  • 175 ml of milk;
  • 170 g margarine;
  • 140 g of sugar;
  • a pinch of vanillin;
  • some salt;
  • a glass of hot water;
  • dry yeast;
  • a handful of dried lemon peel, grated on a fine grater.

Cooking method:

  1. Mix the yeast base in advance and leave it warm so that it rises.
  2. Dissolve sugar in boiling water. Add poppy seeds, zest and vanillin.
  3. Roll out 4 circles with a diameter of 24 cm from the dough. Cut each of them into 8 triangles.
  4. Put a tablespoon of the filling in the middle of each piece of dough. It should be placed on a wide edge.
  5. Roll products into bagels and let them brew for 10 minutes. Grease each bagel with an egg.
  6. Bring the workpieces to readiness in the oven (it will take about 15 - 16 minutes).

A traditional cheesecake hardly expected anyone to think of adding poppy seeds to it. However, such pastries come out very tasty and, perhaps, even exotic.

  • 200 g of cookies;
  • 90 g of spread;
  • 200 g of poppy;
  • 100 g of sugar;
  • 1 orange
  • 3 eggs;
  • half a glass of cream;
  • 100 g of powdered sugar with the addition of vanillin;
  • 750 g cream cheese.

Cooking method:

  1. Grind cookies into crumbs and mix with butter. Take a detachable shape with a diameter of 20 cm and with wet hands form a cake-base from cookies.

Cooking method:

  1. Following the classic recipe, make a dough, introduce flour into it and allow time for the yeast dough to rise. Then carefully knead it.
  2. Pour poppy seeds with raisins with boiling water and leave in this form for half an hour.
  3. Drain excess water from the poppy mixture and break through with a blender. Add honey.
  4. Make pies, inside of which place a small spoon of the filling.

Ingredients Composition:

  • 1 glass of flour and sugar;
  • 4 eggs;
  • impregnation (6 tablespoons of water and 3 tablespoons of sugar);
  • filling (300 ml of milk, 2 tablespoons of raisins, 3 tablespoons of semolina, 4 tablespoons of sugar, 5 tablespoons of poppy seeds);
  • coconut flakes and chocolate icing for decoration.

Cooking method:

  1. Turn the eggs into a foam with a glass of sugar, then gradually sift all the flour and knead the biscuit dough.
  2. Cover the baking sheet with baking paper and pour the resulting composition onto it. Bake for 15 minutes.

  • 50 g of poppy;
  • 180 g of granulated sugar (100 - in the base, 80 - in the glaze);
  • 3 tbsp. tablespoons of milk, water and cocoa.

Cooking method:

  1. Grind chicken yolk with sugar, pour ghee. To salt.
  2. Supplement the composition with sour cream, flour and soda and divide the resulting dough into 2 parts.
  3. To form balls from the first part - these are the future tops of the "mushrooms". Bake them in the oven for 15 minutes.
  4. From the rest of the dough, form an equal number of “legs” and bake for 15 minutes by analogy.
  5. In the "hats" make a notch with a knife. Dip the “legs” in sugar syrup and attach in the groove. Let the mushrooms dry.
  6. Then dip the bottom of the “legs” first in syrup, then in poppy seeds and dry again.
  7. Dip the hats in chocolate icing and let it harden.

  • 330 g flour;

Honey cake with poppy seeds

Ingredients Composition:

  • 0.5 kg of sour cream;
  • 2 eggs;
  • half a glass of milk;
  • 300 g of sugar (for the preparation of glaze, take an additional 4 tbsp.spoons);
  • 250 g of flour;
  • 2 tbsp. tablespoons of honey;
  • a handful of poppy seeds;
  • soda on the tip of a knife;
  • a couple of drops of vegetable oil;
  • 2 tbsp. tablespoons of cocoa powder.

Cooking method:

  1. If necessary, melt the honey. Then combine it with eggs and sugar. In addition, introduce sour cream with baking soda.
  2. Stir in flour until lumps disappear.
  3. Pour poppy seeds directly into the dough.
  4. Bake the base of the cake in the oven until golden brown. If necessary, cake can be divided lengthwise into 2 layers.
  5. The cream is a combination of sour cream and sugar, which need only be whipped together.
  6. Prepare icing from 4 tbsp. tablespoons of sugar, milk, cocoa and butter. Boil everything for 7 minutes from the moment of boiling.
  7. Pour the top of the finished product with glaze.

  • 2 tbsp. spoons of poppy seeds;
  • a pinch of vanillin and ground cardamom;
  • half a pack of semolina;
  • 250 g of flour;
  • 100 g butter;
  • 1 cup of kefir and sugar;

Cooking method:

  1. Of all the ingredients, knead the dough at once. It is necessary to ensure that the products are evenly distributed in the mass.
