Condensed milk tubes are a simple and simple dessert, but, despite this, they are the first to scatter from the tables of school tea parties and gatherings of adult sweet tooth. You can prepare goodies in different ways: from bulk dough with milk or mayonnaise, from puff pastry or a thicker batch used for Soviet-style waffle irons. All the secrets and methods of creating cakes are presented in popular recipes.

Cream with condensed milk for tubes

Creation of tubes with cream is not particularly difficult.

Various compositions can be used as filling for baking, but the filling with a pleasant caramel flavor based on condensed milk remains an indisputable favorite among sweets lovers.

To prepare it you will need:

  • 370 g of boiled condensed milk;
  • 150 g butter.

Cooking sequence:

  1. Remove the oil from the refrigerator, leave at room temperature so that it melts a little and becomes soft.
  2. Beat the prepared fat with a mixer into a lush white mass. Continue the process by adding boiled condensed milk in portions.
  3. When the ingredients are fully combined, the cream will be ready. For flavor at the end of whipping, it is advisable to add a little (15-20 ml) of alcohol, cognac or liquor.

Boiled condensed milk for cream can be prepared independently. Pour a tin can of ordinary product with water and send to the stove. After boiling, cook for 1.5-2 hours, making sure that the jar is always covered with liquid.

Classic wafer rolls with condensed milk

There are different variations of the test tube recipes, but the classic dessert involves the use of a sufficiently liquid composition in milk, which spreads well on a waffle iron.

The proportions of the ingredients in this case will be as follows:

  • 3 eggs;
  • 180 g of sugar;
  • 200 g margarine;
  • 300 ml of milk;
  • 320 g of flour;
  • 1.5 g of salt;
  • 2 g of soda;
  • 2 g of vanillin.

Working process:

  1. Melt margarine to a liquid and allow it to cool slightly. Meanwhile, beat eggs with sugar into a lush mass. Next, combine both structures.
  2. Stir in the dough flour, combined with other loose components. Dilute the resulting thick mixture to the desired consistency with milk.
  3. Smear the surface of the hot waffle iron with a brush dipped in vegetable oil, bake the waffles. While they are still hot, wrap in tubules.

After cooling, fill the pastries with cream using a pastry syringe, bag or cornet from baking paper. Both ends of the tube can be sprinkled with crushed waffles or crushed nuts.

From puff pastry

Puff pastry rolls are pastries available even for beginner confectioners, all the more so since you can buy a finished product, rather than spend time mixing it yourself.

For a serving for eighteen tubes you will need:

  • 500 g of ready puff pastry;
  • 1 yolk;
  • vegetable oil for lubricating the cones and flour for dusting.

How to bake delicious straws:

  1. Thaw the dough at room temperature, roll it out a little, sprinkling flour on the table, and then cut the rolled layer into strips a centimeter thick.
  2. Lubricate the cones for the formation of tubes with oil and wrap with strips of puff pastry a little overlap. Place the blanks on a baking sheet covered with parchment at a distance from each other.
  3. Grease the top of the tube with beaten yolk and the oven in an oven preheated to 200 degrees for about 15-20 minutes. Remove the finished products from the cones, cool and fill with cream.

If in the arsenal of kitchen utensils there are no special devices for decorating the tubes, they can be made independently from baking paper. Roll a piece of baking paper with a cone so that it holds its shape. Put crumpled foil or parchment in the middle, then wrap the workpiece with strips of dough.

Tasty recipe:cream for wafer rolls

Cooking in an electric waffle iron

The electric waffle iron is suitable for baking wafer rolls from various types of dough: classic on milk, margarine, sour cream, kefir or mayonnaise. In the latter version, baking is moderately crispy and sweet.

The composition of the test on a white sauce includes:

  • 4 eggs;
  • 160 g of sugar;
  • 100 g butter;
  • 200 g mayonnaise;
  • 240 g of flour;
  • 3 g of salt;
  • 1.5 g of vanillin.

Cooking tubes in a waffle iron in steps:

  1. Thoroughly grind eggs with sugar. Then add melted butter and mayonnaise. Rotate the whisk to achieve mass uniformity.
  2. Lastly, add flour sifted with salt and vanilla into the resulting mass, mix everything.
  3. Heat the waffle iron well. Put a tablespoon of dough on the lower baking base, press with the upper surface, bake for 3-4 minutes, depending on the capacity of the device.
  4. Get hot cakes and quickly turn into a tube. When all the hollow billets are baked and cooled, fill them with cream of boiled condensed milk.

An important point: if the waffle iron is an old (Soviet) sample, then before baking the first cake it must be greased with oil.

Modern devices, as a rule, have a non-stick coating, so they do not need to be treated with fat.

Crispy rolls with boiled condensed milk

Friability and crunch of finished wafer rolls can be added if you replace part of the flour with starch. It is better, of course, to take a product based on corn, but the first option is quite suitable.

Twenty-five crispy tubes will need:

  • 3 eggs (category C0);
  • 100 g butter;
  • 100 g of sugar;
  • 60 g of flour;
  • 60 g of starch.

Bakery products:

  1. Rub the butter softened to the consistency of soft plasticine with sugar. In a sweet mixture, mix the eggs one at a time.
  2. When the composition becomes homogeneous, add sifted flour with starch. Stir the mass thoroughly. It should be thick, as for fritters.
  3. Bake wafer rolls using one tablespoon for each serving of dough. Very carefully, so as not to break the cooled workpieces, fill them with butter cream on boiled condensed milk.

In order not to burn your hands when folding products into tubes, you can use cotton gloves or, laying out a hot blank on a clean cloth towel, fold the edge of the fabric.

Option for the Soviet waffle iron

Old-style heavy waffle irons continue to serve their mistresses faithfully. Even having the opportunity to purchase a lighter modern model with non-stick coating of baking surfaces, home confectioners prefer to bake the tubes in the proven “Soviet” devices.

The dough for such waffle irons is prepared from the following set of ingredients:

  • 4 eggs;
  • 200 g of sugar;
  • 200 g margarine (butter);
  • 130 g of flour;
  • vanillin to taste.

The sequence of actions:

  1. Beat butter softened to a creamy consistency with sugar. So that all the crystals dissolve faster, they can be replaced with powder.
  2. Then eggs are introduced one by one, placing each subsequent one after stirring the previous one.
  3. It remains only to attach the flour with vanilla, and the dough is ready. The mass turns out to be a rather thick consistency, but this does not matter, since heavy baking surfaces easily flatten it into a thin waffle cake.

The proportions of the test for one tube remain the same as in the previous recipes - a tablespoon. Boiled condensed milk, whipped with soft butter, will be an excellent filling for such baking.

Calorie content of the presented recipes

Condensed milk tubes are a dessert, the calorie content of which depends not only on the composition of the cream, but also on the list of products that make up the dough. For people watching their figure, information about the calorie content of this treat will be useful.

The data in the following table will help determine it:

Recipe NameCalorie content
total, kcalper 100 g, kcal
Cream with condensed milk for tubes2211,6425,3
Classic wafer rolls3827,5307,3
Puff pastry rolls2790,0558,0
Tubes in an electric waffle iron3719,1393,8
Crispy tubules1730,9346,2
Tubules in a Soviet waffle iron3292,9374,2

To calculate one tube, you need to divide the total calorie content by the number of blanks, then add the same cream index, taking into account the volume of the sweetener filler. Simple mathematical calculations will always help to accurately determine the number of calories “eaten” during a tea party with your favorite dessert.
