  • proteins - 4 pcs.;
  • sour cream (with high fat content) - 2 tbsp. l .;
  • cocoa powder - 1 tbsp. l .;
  • lemon juice - 1 tsp;
  • sugar (to your taste) - about 200 g.

Composition (for decoration):

  • chocolate - 100 g;
  • whole nuts, coarsely ground or nut "flour".

Stages of preparation:

  1. The product will be baked in the oven at 200 degrees. Before mixing products set this temperature.
  2. Sift the flour several times, refining and saturating with oxygen.
  3. In a dough mixing bowl, quench soda with vinegar.
  4. Yolks are produced for soda, whipped with a whisk.
  5. Sugar is added, the resulting mass is beaten at medium power for 3 minutes.
  6. 250 g (half a serving) of flour are added to 1 spoon, while continuing to beat for 2 minutes.
  7. The remaining 250 g of flour is sprinkled after they have finished whipping.
  8. The dough comes out elastic, as if for pies. It is left in the cold while the cream is prepared.
  9. Sugar, lemon juice crushed.
  10. In sugar with lemon injected proteins, sour cream.
  11. Beat the cream mass to a dense and lush texture.
  12. Nuts are introduced into this cream gently using a spoon (whisk).
  13. The mass is divided into 2 equal portions.
  14. Cocoa is added to one serving of cream, lightly whipped.
  15. The second portion of the cream remains clean.
  16. Both portions are placed in the cold.
  17. Chilled dough is divided into 3 pieces.
  18. Roll out the parts (thickness - 3 cm).
  19. Applying a round shape to the dough, cut out cakes.
  20. Cooking cakes 40 min. on carefully oiled baking paper.
  21. Collecting the cake, they alternately smear the cakes with chocolate or light cream. White cream is placed on top: - on the sides and the “cover”.

Composition (cakes):

  • eggs - 6 pcs.;
  • butter (only with high fat content) - 200 g;
  • flour - with the top 2.5 cups;
  • sugar (regulated as desired) - without a top 2 cups;
  • nuts - at least 1 cup;
  • soda, baking powder - 1 tsp;
  • salt - a few grams.

Composition (cream):

  • boiled condensed milk - 1 package;
  • soft butter - 5 tbsp. l

Stages of preparation:

  1. Proteins are used separately from the yolks. Gently separated yolks are ground with ¼ of all sugar. Proteins cool.
  2. Creamy soft butter knead with yolks.
  3. Soda is quenched (using boiling water or vinegar), poured into the mass.
  4. Pour baking powder, whisk until porous texture.
  5. The dough should not be clogged with flour (hard, crumble). It is kneaded until it ceases to remain in the hands.
  6. Cut the dough into 3 equal servings.
  7. Roll out one, line her form, make the sides.
  8. Beat cold proteins, salt, sugar, so that dense peaks remain.
  9. Nuts are introduced into the protein foam; they are carefully interfered.

  • sugar - 200 g;
  • sour cream - 1.5 cup.

Glaze:

  • milk - 3 tbsp. l .;
  • soft oil - 2 tbsp. l with horseback;
  • Cocoa - 25 g;
  • granulated sugar - 75 g.

Stages of preparation:

  • From butter, sugar, sour cream, baking powder make a homogeneous mass.
  • Make white and chocolate dough. To do this, the oily mass is divided by 2. Cocoa is introduced into 1 half. Pour 0.5 prepared flour into each serving.
  • Each type of test is divided by 3.
  • Cakes are cooked at 200 degrees for about 7 minutes.
  • The cream is prepared by whipping sugar, sour cream (until the first is dissolved).
  • The cake is formed by alternating 2 types of cakes, which are covered with cream.
  • To decorate melt several varieties of chocolate (white, bitter, milk) and draw a bear with them.

Structure:

  • wafer cakes;
  • can of condensed milk (boiled);
  • oil (in soft form) - 6 tbsp. l .;
  • salt (optional) - a pinch;
  • ground nuts (optional) - 150/200 grams.

Stages of preparation:

  1. Beat butter, salt, and condensed milk well.
  2. Cover with a mass of waffles.
  3. Top can be covered with crushed 1 cake and nuts.

With protein cream

Structure:

  • flour - 600 g;
  • thick sour cream - the same amount;
  • sugar - 450 g;
  • oil - 2 tbsp. l .;
  • cocoa - 1, 5 tbsp. l .;
  • soda - 0.5 tsp;
  • nuts - 0.5 cups;
  • salt - a little (optional).

Stages of preparation:

  1. Soft butter, sugar, quick soda, and sour cream are ground.
  2. Half of the flour and the liquid mass are mixed to make an average density of the dough (similar to sour cream).
  3. The mass is divided in half.
  4. With the help of cocoa, part of the mass is stained with chocolate color. The second part remains white.
  5. The unused portion of the flour is evenly sprinkled in two masses, the dough is kneaded.
  6. From the white and dark halves get 3 cakes.
  7. Make a pair of punctures in each cake.
  8. Bake at 200 degrees for at least 7 minutes (check several times).
  9. The cream is prepared from the remaining sour cream, sugar (with a mixer or just a whisk).
  10. Dark and light layers alternate, covering with cream and a layer of nuts.

Structure:

  • oil - 2.5 tbsp. l .;
  • cocoa - 1.5 tbsp. l .;
  • soda - 1 without top tsp;
  • sugar - 220 g;
  • flour - about 400/450 g (+ adding);
  • sour cream - 1 cup.
  • You can have some salt.

For creams (2 types):

  • condensed milk and butter - 100 g each;
  • sour cream - 450 g;
  • sugar for one cream - 1 cup;
  • sugar for the second cream - 2 tbsp. l .;
  • cocoa - 1 tsp;
  • nuts (almonds + walnuts) - 2 tbsp. l for each cream.

Stages of preparation:

  1. Sugar is dissolved in slightly warmed oil.
  2. Soda, sour cream, ½ flour are introduced into the oil.
  3. Divide the resulting mixture in half. Cocoa is added to one piece.
  4. Pour well-sifted flour in parts (in both pieces), knead until a soft texture is obtained.
  5. Each ball of dough is divided by 3.
  6. Roll out the balls, pierce with a fork, bake (8 min., 190 degrees).
  7. Smooth circles are cut out of hot cakes.
  8. Sugar-fried nuts cool. Nuts do not forget to shake during frying.
  9. The nuts are crushed, cocoa is added to them, mixed.
  10. Sour cream, sugar are brought to the consistency of a strong cream, cool.
  11. Types of cakes alternate, covering with a layer of cream, nuts.
  12. The top cake is clean.
  13. The cake is standing all night, soaked.
  14. Oil, condensed milk, cocoa-nut mixture are ground to a soft texture. Oil, sugar should "go".
  15. The cake is covered with the resulting chocolate condensed milk.

Sour cream cake "Bear in the North"

Composition (dough):

  • sifted flour - about 400/450 g;
  • oil - 200 g;
  • fine sugar - 1 cup;
  • cocoa (to taste) - about 2 tbsp. l .;
  • eggs - 3 pcs.;
  • sour cream - 1 cup + 2 tbsp. l .;
  • baking powder - a small bag.

Composition (cream):

  • sour cream (homemade, fat content - high) - 3 cup;
  • sugar - 2 (with a slide) a glass.

Stages of preparation:

  1. All components (without cocoa) are mixed, knead the dough.
  2. ½ of the dough is made chocolate (injected cocoa). The rest of the dough is white.
  3. Each species is cut into 4 pieces.
  4. Stretch them with fingers on a baking sheet or rolling pin on a table.
  5. For baking each cake, 10 minutes is enough. (at 180 degrees), but it’s worth checking readiness a couple of times. Readiness indicator - ruddy color, golden “tubercles”.
