With sour cream

The most common recipe is Lady’s fingers cake with sour cream. Sour cream is surprisingly well combined with soft custard dough. And the result is amazing: a cream with a slight acidity, absolutely natural and at the same time not too high-calorie. This delicacy is loved by many.

The basis of the cake is “fingers”, that is, oblong cookies in shape, such as “Savoyardi”, but from custard.

For the test, prepare:

  • one and a half glasses of milk and flour;
  • 150 g butter;
  • 6 eggs.

We make the cream out of two glasses of sour cream (it is better to use the fattest that you find) and 1 cup of granulated sugar. Plus, you need a little melted chocolate to decorate the top.

The cake is prepared like this:

  1. Melt the butter in the milk, add a little salt.
  2. Sift the flour.
  3. Put the milk mixture on a small fire and quickly introduce flour into it, mixing quite intensively so that there are no lumps.
  4. Rubbing to smoothness, allow to cool.In all recipes of custard dough, there is a main condition - to beat eggs slowly, stretching the dough, making it a little "rubber".
  5. Enter slowly, in turn, eggs, each time kneading the dough until smooth.
  6. On the greased baking sheet, plant the resulting composition in the form of non-thick strips and bake them at t 180 ºC.
  7. While the “fingers” are baking, we prepare the cream: beat the sour cream with sugar.
  8. Having dipped each "finger" in sour cream, spread the woodpile.Pour over the rest of the cream and decorate with chocolate. You can grate it, or you can melt and draw a beautiful grid.

Choux pastry

You can bake a delicious cake for a children's holiday from custard dough, smearing it with sour cream. But the surprise will be inside the "fingers": in each - a little prune or dried apricots.

For the test:

  • 150 g of good margarine or butter;
  • one and a half glasses of flour and water;
  • 6 medium sized eggs;
  • half a teaspoon of salt.

For cream:

  • a pound of oily sour cream or the most oily cream;
  • 1 glass of powdered sugar (for those who don’t really like sweets, it can be reduced);
  • pack of cottage cheese.

On the icing:

  • half a bar of dark chocolate;
  • some butter;
  • a spoonful of milk to dilute the icing, if thick.

For the filling of eclairs: 100 g of prunes or prunes in half with dried apricots.

  1. Cook the choux pastry, bake small sized sticks or balls.
  2. While baking the billets, mix all the components for the cream and beat with a mixer.
  3. Soak dried fruits for 5 minutes in hot water, cut into small pieces.
  4. Open the cooled baked "fingers" on one side and stuff with dried fruits.
  5. Fold the “logs” in layers and coat each layer with cream.
  6. Mix all the ingredients for the icing and, until it has cooled, apply on the cake.
  7. Let the finished dessert stand for at least an hour.

Recipe from Emma's Grandma

Another very delicious and beautiful custard cake is baked by one culinary craftswoman, YouTube star Emma's grandmother. The cake comes out not only delicious, but also very beautiful, because such a miracle is decorated with fresh fruits.

  • Choux pastry is prepared in water (300 ml), butter or margarine (100 g) with the addition of 170 g of flour. In the same composition goes 0.5 tsp. salt and 7 eggs (if large, then 6 is enough).
  • The cream will be from 1200 g of fat sour cream, 150 g of fat cream, 530 g of granulated sugar and 1 tbsp. tablespoons of vanilla sugar. Plus fruit for decoration. It can be kiwi or strawberry, or all taken together.

How to make a cake according to the author’s recipe:

  1. We cook choux pastry according to the same principle. Combining water, salt and melted butter, bring the composition to a boil and pour the flour. Then one by one we drive in the eggs and mix. You can do this with a mixer. Next bake.
  2. For cream in a large bowl, mix sour cream with vanilla and sugar, whisking until splendid.
  3. The secret of the beauty of the cake from Emma's grandmother in the correct assembly. It will require a detachable mold with a diameter of 28 cm, in which you need to put the film, and then spread five tablespoons of cream. Fingers dipped in cream are laid out on it. After the first layer is a thick layer of strawberries or kiwi. Then fingers and fruit again.
  4. On top, align the cream layer on the fingers and, putting a small flat oppression (plate), put the dessert in the cold.
  5. For the last decoration, when the cake stands for 5 hours in the refrigerator, beat the cream with sugar into a lush mass. Now it remains to gently turn the delicacy upside down, remove the form from its sides and decorate them with cream and chopped fruits.

Lady's fingers cake with condensed milk

The dough is ordinary choux. It is prepared from a glass of flour, 125 g of margarine, a glass of water, four eggs and a pinch of salt. But we make cream for the cake with condensed milk. For those who love this combination, familiar from childhood, - condensed milk and butter - this cake will be the most delicious.

The cream is made from ordinary condensed milk, but not from boiled condensed milk!

The butter is whipped until white, then the condensed milk is gradually added to it. Layers are smeared with cream, the top is decorated with melted chocolate.

With custard

A pleasant dessert is obtained with custard. Choux pastry is prepared and baked in the same way as the previous options. Take a pack of margarine, two and a half glasses of flour, eight medium eggs and half a liter of water.

How to make a cream, we will tell in more detail:

  1. In a small saucepan, beat eggs (4 pcs.) With sugar (1 cup) with a whisk or mixer until they become whitish.
  2. Then add and mix flour well (2 tbsp.spoons).
  3. Heat half a liter of milk to a boil.
  4. Add hot milk to the egg-sugar mixture, constantly mixing. Then put the resulting composition on a very small fire and, stirring, brew the cream.
  5. Allow it to cool and stir in whipped butter.

Grease the "fingers" with the finished cream. Chocolate or cocoa icing can be a decoration for this cake.

Unusual dessert with cherry

 

An ordinary cake made from custard eclairs can be greatly varied by adding cherries. So, ready-made “fingers” can be coated with any cream, but sour cream is ideal. In the middle of the cake you need to lay a thick layer of canned seedless cherries, thrown into a colander. We cover the cherries with another layer of eclairs soaked in cream, and send all this splendor for several hours in the refrigerator - the cake should be soaked and ripen. It turns out a delicious and unusual dessert.

  • For cream, take a glass of condensed milk and 150 g of good sour cream.
  • To soak cookies, you need to mix a glass of hard-brewed coffee with sugar and a little cognac.

Let's make a cake like this:

  1. In the coffee mass we will dip the cookies (1 packet is enough) and coat the layers with cream. This should be done alternately, after which the finished product is stolen with icing.
  2. For glaze, heat 100 g of cream and 60 g of butter, crumble a half bar of chocolate into the resulting composition and mix.
  3. Cover the top of the dessert with icing and let it brew for 5 hours, if time permits.
