Kefir pancakes with holes

To bake thin pancakes on kefir with holes, we need:

  • kefir - one liter;
  • eggs - three pcs.;
  • sugar - four tbsp. l .;
  • salt - one tsp;
  • flour - fifteen tbsp. l with a slide;
  • vegetable oil - three tsp;
  • butter - 50 g.

How to cook:

  1. Place eggs, sugar and salt in a deep bowl, mix, then beat.
  2. Add kefir, stir once more.
  3. Add the flour, mix well. Thickness dough should resemble liquid sour cream.
  4. We bake pancakes in a hot frying pan, after having greased it with oil.

Please note that for pancake dough it is better to use kefir, the expiration date of which is near the end. During this period, fermentation intensifies, and pancakes are more tender and delicate.

Custard pancakes

The secret component of custard pancakes is hot water. Topping it up in pancake dough, we get unusual pancakes on kefir with boiling water, thin, appetizing and with holes.

 

What do we take:

  • kefir, flour and boiling water - one glass each;
  • eggs - two pcs.;
  • vegetable oil - three tbsp. l .;
  • salt - half tsp;
  • sugar - two tbsp. l

How to cook:

  1. Beat eggs until foam, pour salt.
  2. Continuing to stir, add boiling water to the mixture (foam should again form).
  3. Gently, slowly add kefir.
  4. Pour flour, continuously stirring.
  5. Add sugar, add oil.
  6. Fry in a well-heated pan.

Boiling water helps the dough to become homogeneous, and pancakes - tender, but strong.

On kefir, with the addition of milk

If you cook pancakes not on kefir alone, but also on milk, we get airy dough and wonderful thin delicate openwork pancakes.

What do we take:

  • kefir - half a liter;
  • milk - one glass;
  • flour - one and a half glasses;
  • eggs - two pcs.;
  • sugar - two tbsp. l .;
  • salt - half a tbsp. l .;
  • soda - one tsp;
  • vegetable oil - three tbsp. l

Order of preparation:

  1. Kefir (preferably warm) is mixed with salt and sugar.
  2. Add eggs to the mixture, beat.
  3. Pour the flour, knead, as it should, until smooth.
  4. Heat the milk, hot, add to the dough, stir.
  5. Fry in a hot frying pan greased with oil.

Pancakes with kefir and milk can be served with jam, honey, sour cream, butter, with a variety of fillings, you can make pancake roll or pie from them.

Lean without eggs

If you are going to make pancakes, and there are no eggs left in the refrigerator, you can cook pancakes without this component.

 

What do we take:

  • kefir - one and a half glasses;
  • flour - three quarters of a glass;
  • soda - half a tsp;
  • salt - half tsp;
  • sugar - two tbsp. l .;
  • vegetable oil - two tbsp. l (in the dough) + how much is needed for frying

How to cook:

  1. We heat half the kefir, add soda, flour, salt and sugar, as it should, stir to a homogeneous mass.
  2. Add the rest of the kefir, mix again.
  3. Add oil, mix and insist for about fifteen minutes.
  4. Fry in a well-heated pan.

Of course, such pancakes can not be called completely lean, since kefir is present in the recipe. The most strict adherents of fasting can choose a recipe without eggs, on the water.

Sparkling Water Recipe

  • it is better to add flour to the liquid, rather than liquid to the flour, it is more convenient to knead the dough;
  • fry only in a proven pan (it is better to choose a cast-iron or special pancake bowl), the dough on kefir is more sticky;
  • the dough burns faster, so pancakes should be baked over medium heat;
  • Before first use, fry a new pan with salt.
