Georgian traditional pie Achma
A feature of this type of cake is that the dough is pre-boiled. Therefore, before starting cooking, you need to prepare two wide aluminum bowls or pans with cold water and boiling water.
Dough:
- 2 eggs;
- 1 tea l olive oil;
- 15 table. l flour;
- a couple of spoons of water
Filling:
- 500 g of suluguni / feta cheese / Ossetian or Adyghe cheese / mozzarella (several types can be mixed);
- pack of fatty oil.
Step by step description of the cooking process:
- We prepare the dough from the above products. Flour should be introduced in small portions - all of it may not be needed, depending on the type of product and its variety. When the workpiece becomes soft to the touch, but not too dense and elastic, we roll the dough with a ball, wrap it in a film and leave it to rest for half an hour.
- Rub cheese into a bowl.
- We cut the dough into approximately equal 7-8 parts, then roll out a layer from each. The correct cake comes out very thin, while its size should be 3-4 cm larger than the size of the form. We put all the layers on a tray, pouring them with flour so that they do not stick together.
- Melt the butter before adding to the filling in a steam bath. Pour a few large spoons into the cheese and mix well. We leave the rest to create a layered achma pie.
- Lubricate the form with a portion of ghee. We spread a layer of raw (not boiled!) Dough into it and generously cover it with ghee, using a brush.
- We lower the second layer with neat, gradual movements into boiling water.The dough should be laid in a wave - so as not to stick together. When the water boils again, it should be quickly removed with a wooden spoon in a colander, and then transferred to ice water.
- After a few seconds, manually remove the dough and lay on top of the wet layer in the mold. Oil.
- Repeat the boiling procedure with two more sheets of dough. Spread half the filling evenly with the next layer. Then boil a few more sheets of dough. On the penultimate layer, lay out the remains of the filling. Everyone needs to be oiled. The last, final layer of dough should remain moist. Wrap the edges inward. Cut the pie into 4, 6, 8 parts and fill in the cuts with the remaining oil.
- We bake in the oven at 200 degrees for 30-40 minutes, until a brownish-golden crust appears.
In the process of laying the dough in layers, it may tear or stack unevenly. This is not scary - this is how the pie will turn out inside with an openwork, layered structure.
