Samsa is one of the most delicious dishes of oriental cuisine. Traditionally, lamb is used for the filling, cut into slices and seasoned with herbs and spices. But in our area, the dish plays with new colors - samsa is filled with all the various methods, various types of meat and other products. Below are the most interesting and delicious options for this dish.

Samsa from ready-made puff pastry with meat

Ready-made dough, pre-made by yourself or bought in a store, significantly speeds up the cooking process. And samsa with meat from the finished dough is prepared in just an hour, even taking into account the time of its baking.

Products for the preparation of 6 puff pastries:

  • 1 kg frozen puff pastry
  • 0.4 kg of any kind of meat
  • 0.3 kg onion
  • 40 gr sesame seeds
  • 1 egg
  • 1 tsp of salt and black pepper.

The cooking method is as follows:

  1. Put the dough out of the freezer to defrost. While it is thawing, we prepare the filling: rinse the meat and chop into small cubes. You can buy ready-made minced meat or skip the meat through a meat grinder.
  2. Peel the onions and finely chop, add to the minced meat. Also add spices to the filling and mix well.
  3. By the time the filling is ready, the dough can already be used. It needs to be slightly rolled out, cut into square layers measuring approximately 10 by 10 centimeters.
  4. In the center of each square we lay out approximately a tablespoon of the filling. We pinch samsa so that we get a triangle. To make the seam exactly strong, you can pinch the plucks with a fork.
  5. We cover the baking sheet with parchment or a special silicone baking mat. We spread the resulting pies and turn on the oven for heating.
  6. Beat the egg in a cup and grease the pastries with it. Sprinkle with sesame seeds on top.
  7. We send the dish to the oven and cook from a third of an hour at a temperature of 200 degrees.

Ready meat samsa from puff pastry immediately after the oven is transferred to the dish and covered with a towel for 10 minutes, and then you can serve it to the table.

On a note. The amount of onion should never be reduced - by tradition, it is added in approximately the same amount as meat. The juiciness of the dish depends on the amount of this vegetable. A larger number will kill the taste of meat.

Recipe for yeast-free dough

 

A simple yeast-free dough can be prepared even by a novice in culinary skills. Samsa made from the dough according to this recipe is tender and crispy.

For the test, take:

  • 0.5 kg of wheat flour
  • 0.4 kg butter
  • 0.18 L cold water
  • 1 tbsp vinegar
  • 1 large egg
  • ½ tsp salt.

For filling:

  • 0.4 kg minced meat
  • 0.35 kg of onions
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp of a mixture of meat spices.

For registration:

  • 50 gr black or white sesame seeds
  • 1 egg

Cooking method:

  1. Oil must be frozen in advance. It is enough to hold the product in the freezer for about half an hour. Then grate it on a coarse grater and mix with sifted flour.
  2. Take a separate container for mixing and use a mixer to mix water, egg, salt and vinegar. Having received a homogeneous liquid, combine it with a flour mixture. Knead the dough manually. After that you can immediately start cooking baking or send in the refrigerator. You can store the dough for no more than two months.
  3. To prepare samsa, it remains only to prepare the filling. To do this, grind the peeled onions and add it to the prepared meat. Pour salt in there and season with spices.
  4. Roll out the dough with a layer up to 3-4 mm thick into small squares. Put the filling in them and fasten the edges.
  5. Beat the egg until smooth and grease the surface of the eastern pies. Sprinkle with sesame seeds and send to the preheated oven for 20-25 minutes.

With chicken in the oven

Tender and juicy samsa with chicken is obtained. If not everyone likes lamb or does not want to eat high-calorie pork - this recipe is perfect!

Products for samsa:

  • 0.6 kg skinless and boneless chicken
  • 0.4 kg onions
  • 0.3 kg flour
  • 80 gr sour cream
  • 1/2 glass of water
  • 1-2 tbsp sunflower oil
  • salt pepper.

Cooking Method:

  1. Put fresh chicken fillet in the freezer for a third of an hour - a slightly frosted product will be easier to cut into pieces. After rinse and chop with a knife.
  2. Peel and chop the onion in a small cube and add to the chicken.
  3. To ensure the filling is guaranteed juicy, pour a couple of tablespoons of water into the onion-chicken mixture. Pepper and salt, mix well.
  4. Pour the remaining water into a bowl and sift flour into it, slightly salt. The simplest dough for samsa will consist of these three ingredients. It remains to knead well, adding flour if necessary - the dough should not be tight, but also not stick to your hands.
  5. Divide the resulting dough into 10 pieces and roll each into a flat cake. Put a filling in the center of each and close up the edges of the tortilla.
  6. Lay out all the pies on a baking sheet and put in the oven for a third of an hour at maximum temperature. Chicken meat is cooked very quickly, so it makes no sense to bake longer.
  7. Hot samsa with chicken is served on a large dish. It is recommended to put a teaspoon of sour cream on top of each pie.

On a note. To make the dish crisp, sprinkle cold water on the pastry every 10 minutes during baking.

From puff pastry with cheese

 

Samsa with cheese just melts in your mouth.

Ingredients:

  • 1 standard pack of finished puff pastry
  • 400 g fresh suluguni cheese
  • 2 medium eggs
  • 2-3 cloves of garlic
  • salt (amount taken depending on how salty the cheese is)
  • 1 tsp pepper
  • 1 pinch of thyme.

Step by step cooking:

  1. Cut as finely as possible or grate the cheese on a coarse grater, mix with spices and 1 egg.
  2. Roll out the dough and cut into slices approximately 15 by 20 cm.
  3. Spread the filling in equal amounts on the plates and connect the dough so that you get rectangles. Spread the resulting samsa on a greased baking sheet.
  4. Divide the remaining egg into yolk and protein. Dilute the yolk with a couple of teaspoons of water and grease them with pies.
  5. Bake the dish with a warmed oven 180 degrees for half an hour.

Samsa with minced yeast dough is hearty, tender and soft.

Eastern samsa with herbs

 

Samsa with herbs has an interesting piquant taste. It is prepared very quickly, however, as it is eaten in the family circle at dinner.

To prepare, take:

  • 3 stacks of flour
  • 200 ml of kefir
  • 3 eggs
  • 300 gr of greens (we recommend taking green onions, dill and spinach)
  • 200 g butter
  • ⅕ nutmeg, salt and as much ground pepper.

Cook as follows:

  1. It will take a small bowl. Sift flour into it and put chilled butter. Chop the butter with a knife, add kefir and salt. Knead well until smooth. As a result, the dough should be slightly tight.
  2. Chop green onion feathers and spinach and fry in oil. Beat eggs into them and, stirring constantly, bring to readiness. Chop dill and mix with egg mixture. Leave to cool.
  3. Roll out the dough, cut into squares or circles using a cup / bowl. Fill the filling in the middle and connect the edges.
  4. Bake at 200 degrees for about a third of an hour. Serve to the table, slightly sprinkled with herbs.

On a note. Homemade dough is tastier than store dough. Therefore, it is recommended to prepare the dough in advance and store it in a small freezer in unpacked packages.

Cooking classic samsa with beef

Samsa with beef comes out very satisfying. It is worth noting that in the traditional preparation of samsa, meat is cut into pieces, and the use of minced meat is a Slavic option.

To prepare, take:

  • 500 gr beef
  • 300 gr onions
  • 1 tsp salt
  • ½ tsp pepper, dried garlic and thyme
  • 1 large egg
  • 200 g butter
  • glass of water
  • 30 grams of starch
  • 20 g sesame seeds
  • 2 yolks

Preparation Scheme:

  1. Rinse the meat under running water and cut into a cube measuring about 1 to 1 cm.
  2. Peel and dice the onion a little less than the meat. Mix meat cubes, onions and spices.
  3. In a separate container, mix 50 grams of oil, water and egg. In this case, the water should be hot. Mix flour and liquid, knead the dough. The consistency of the dough should resemble plasticine.
  4. Melt the remaining oil over low heat and bring to the separation of fat and whey. Remove the fat in a separate bowl - it is needed for cooking.
  5. Cut the dough into equal parts and roll it thinly (no more than 2 mm). To prevent the product from sticking to the rolling pin, use starch by spraying it on the surface of the cake. Grease the cooked fat on top.Fold all three layers on top of each other, greasing, roll up and cut into bars. Send to the freezer for 15-20 minutes.
  6. Remove the dough from the refrigerator. Roll out each cake and put the filling. Glue and bake in the oven for 20 minutes. After greasing with yolk, sprinkle with sesame seeds and bake for another half hour.

Lamb recipe

 

Lamb is considered a traditional filling for oriental samsa.

To prepare a delicious traditional samsa, you need to take:

  • 1 kg of lamb
  • 300 gr beef fat
  • 10 gr zira
  • 20 g salt
  • 5 gr pepper
  • 700 gr onion
  • 50 g of sunflower oil
  • 20 gr sesame seeds
  • 1 kg of finished puff and yeast dough.

Preparation Scheme:

  1. Clean the lamb from the veins and layers, very finely chopped or mince with fat.
  2. Peel and finely chop the onion. Mix with minced meat, spices and butter.
  3. Roll the dough thinly and cut into squares. Spread the filling in the middle. Connect the edges of samsa to make envelopes. Grease with yolk and sprinkle with sesame seeds.
  4. Bake 25 minutes in preheated 180 degrees in the oven.

Deep fried cottage cheese

Curd puff is a great dessert for tea gatherings.

A very tasty dish is obtained according to this recipe:

  • 600 gr fat cottage cheese
  • 500 g of ready puff pastry
  • 1 sachet of vanillin or vanilla sugar
  • egg
  • ½ tsp sugar
  • a stack of milk.

Preparation Scheme:

  1. Roll out the thawed dough in advance and cut into squares.
  2. Mix the egg with cottage cheese, milk, sugar and vanilla.
  3. Put the filling on the dough, glue it with triangles. Heat oil deep-fried and lower envelopes for 5-7 minutes. Leave the finished sweet samsa on paper towels under the lid so that excess oil is absorbed into the paper.

Sweet samsa is served with green or herbal tea with honey. The filling can be supplemented with apples, candied fruits or raisins.
