Important points:
- To make the top beautiful and neat, it is better to choose small mushrooms of the same size.
- Salad-shifter is more convenient to do in detachable form.
- So that the onion does not bitter, before adding it to the dish, it can be marinated in a glass of water, 40 g of sugar and 50 ml of table vinegar for 20 minutes.

Chicken and champignon salad

Having mastered the basic recipe for “Mushroom Glade”, you can change the composition of the dish to your liking: add salty, spicy or smoked ingredients for piquancy, increase the number of favorite foods, change the order of layers.
Ingredients:
- pickled champignons - 300 g;
- boiled chicken fillet - 200 g;
- eggs - 3 pcs.;
- potatoes (medium) - 3 pcs.;
- carrots - 1 pc.;
- small onion - 1 pc.;
- dill and parsley - 30 g;
- mayonnaise - 150 g;
- salt to taste.
Step by step recipe:
- Boil hard-boiled eggs, potatoes and carrots - until soft.
- I grind the cooled ingredients on a medium grater.
- I cut cubes of boiled chicken meat.
- Finely chopped onion, parsley and dill.
- I cover the salad bowl or form with cling film. I spread the mushrooms with their legs up, sprinkle them with herbs and onions.
- The next layer is grated carrots. Squeeze a little mayonnaise on top and level it with a spoon.
- Then I spread the products in the following order: chicken, eggs, potatoes. I coat each ingredient with mayonnaise.
- I put it in the refrigerator for 30 minutes.
- Then I put a flat plate on the salad, quickly and accurately turn the form over. I remove the film.
On a note.If this is not the first time you have prepared Mushroom Meadow, you can arrange a “trick with a coup” right in front of amazed guests.
With smoked chicken and cream cheese
- Time: 1.5 hours.

To prepare a salad, any part of the chicken carcass is suitable. I usually use breast, it's easier and faster. Olives can be replaced with prunes: it will give the dish a sour-sweet taste.
It will be required:
- pickled mushrooms - 300 g;
- smoked chicken - 250 g;
- processed cheese with greens - 2 pcs.;
- potatoes - 2 pcs.;
- purple onion - 1 pc.;
- olives - 50 g;
- mayonnaise - 130 g.
Cooking steps:
- I put the champignons on the hats in a form covered with a film, sprinkle them with chopped onions.
- I put grated boiled potatoes on top and grease with mayonnaise.
- I rub the cheese (I keep them in the freezer for 15 minutes beforehand), distribute with the next layer.
- I chop the chicken into cubes and place it tightly on top of the curds. Lubricate with mayonnaise. The last layer will be olives cut in half.
- Before turning the salad with chicken and mushrooms, I keep it in the refrigerator for about an hour.
With ham and Korean carrots
- Time: 1 hour 20 minutes
- Servings Per Container: 6-8.
- Difficulty: easy.
Spicy carrots give the mushroom salad spice and moderate juiciness. Before adding it is better to lay it on a sieve to remove excess liquid.
Structure:
- pickled champignons - 200 g;
- pickled cucumber - 1 pc.;
- Korean carrots - 100 g;
- ham - 100 g;
- hard cheese - 150 g;
- large onion - 1 pc.;
- potatoes - 2 pcs.;
- fresh dill - 20 g;
- mayonnaise - 150 g.
Order of preparation:
- I put champignons in the form with their hats down.
- Sprinkle mushrooms with onions, dill and coarsely grated boiled potatoes (1 pc.). Lubricate with mayonnaise.
- I lay layers of chopped ham, cucumber. Rub the remaining potato on top, distribute the sauce.
- The penultimate layer is Korean carrots, then grated cheese.
- To let the salad soak well in mayonnaise, I keep it in the refrigerator for at least an hour.
On a note. An appetizer will look even more spectacular if you place bread sticks in a circle of a salad bowl. Such beauty can be put in the center of the festive table!
