It’s not at all necessary to always cook the same variation of the dish, because the Birch salad can consist of a wide variety of ingredients - try experimenting!

Classic salad "Birch" with chicken and prunes
A classic recipe is where to start. The dish is tender and slightly sweet.
Required Products:
- mayonnaise, herbs and spices to taste;
- five eggs;
- 300 grams of chicken;
- four cucumbers;
- 100 grams of prunes;
- 200 grams of champignons;
- two onions.
Cooking process:
- Dice the mushrooms and onions, fry them in a pan until cooked.
- Boil the chicken, let it cool and chop it, too, but into thin strips.
- Pour prunes with water, leave for 15 minutes and turn into small cubes.
- Wash the cucumbers, cut in the same way as chicken.
- Cook the eggs after boiling for about 10 minutes, so that they turn out “hard boiled”, then grate the proteins and yolks separately.
- It remains to put everything in a salad bowl. Please note that each layer is smeared with a small amount of mayonnaise, other spices can be added to taste.
- First comes prunes, then mushrooms with onions, chicken, cucumbers and eggs.
We decorate the salad with chicken and prunes, using the mayonnaise to form a birch trunk. We make leaves with greenery, and bark with prunes.
With pickled cucumbers
Required Products:
- one onion;
- herbs, mayonnaise and spices to taste;
- five eggs;
- five pickled cucumbers;
- 200 grams of mushrooms;
- 300 grams of chicken.
Cooking process:
- Boil eggs and chicken, cool and cut into small cubes. Eggs can be grated, with the whites and yolks rubbing individually.
- We turn cucumbers into thin strips.
- Mushrooms cut into slices and fry with onions.
- First put the fried mushrooms in a salad bowl, then chicken, squirrels, cucumbers and yolk. Do not forget to coat each layer with mayonnaise and season with spices if desired.
- We draw a tree trunk with mayonnaise, greens will replace its leaves.
Cooking with Beijing cabbage
Required Products:
- one cucumber;
- 1 tsp. sugar and vinegar;
- 300 grams of Beijing cabbage;
- two tablespoons of sour cream;
- a pinch of salt;
- five olives;
- greens to your taste.
Cooking process:
- We wash the cabbage, cut into strips of chalk and send it to the salad bowl.
- There we put finely chopped greens and cucumber, chopped in any convenient way.
- Season with salt, sugar, sour cream and vinegar, mix.
- Align the salad with a spoon and decorate with chopped olives, mayonnaise and herbs.
Salad with Crab Sticks
“Birch” with prunes and crab sticks is a relatively new recipe.
But you can be sure this is a very interesting combination of ingredients.
Required Products:
- two onions;
- 250 grams of crab sticks;
- lettuce;
- mayonnaise, spices to taste;
- 200 grams of pickled mushrooms;
- 200 grams of cheese;
- prunes - five pieces.
Cooking process:
- Cut the onion into rings and fry until golden brown.
- Mushrooms are freed from excess fluid and allowed to dry.
- Defrost crab sticks and cut into cubes.
- In the dish we place lettuce leaves, previously well washed, then crab sticks and a little mayonnaise.
- On top of it we distribute mushrooms and onions, grated cheese and again we coat with mayonnaise.
- Once again we repeat the indicated sequence and decorate the dish with prunes.
Fried Mushroom Recipe
Required Products:
- spices, mayonnaise, herbs to taste;
- two eggs;
- smoked ham weighing 500 grams;
- 150 grams of prunes;
- two potatoes;
- two onions;
- two cucumbers;
- 200 grams of champignons.
Cooking process:
- Boil eggs and potatoes, let cool, then grind, not forgetting to separate the whites and yolks.
- We turn cucumbers and chicken into thin strips, and cut the onion with mushrooms into cubes and fry until golden brown.
- Pour prunes with water and leave for 15 minutes to make it softer.
- We prepare a deep container and begin to form a salad. At the bottom we put potatoes, coated with mayonnaise, then mushrooms, chicken and cucumbers. Lubricate with mayonnaise again.
- Sprinkle the dish with protein, spread the prunes with mayonnaise and, finally, the yolk. Decorate the salad as you like.
Appetizer with Apples and Cheese
Required Products:
- one apple and onion;
- 300 grams of chicken;
- three eggs;
- greens and lettuce;
- 150 grams of cheese;
- several olives;
- mayonnaise to taste.
Cooking process:
- First, prepare all the components. Boil the chicken and eggs and let them cool. Then we cut the meat into cubes, and grind the eggs, dividing them into white and yellow parts.
- Grind the onion and fry until rosy.
- We free the apple from the peel, remove the hard middle and grate it.
- We take a flat plate for serving and form a salad: distribute the onions, chicken, proteins and grease all with mayonnaise. Next will go an apple, grated cheese and again some mayonnaise.
Using lettuce, herbs, mayonnaise and olives, we decorate the dish.
"Birch" with walnuts
Required Products:
- one onion;
- 50 grams of nuts;
- six eggs;
- 100 grams of prunes;
- two cucumbers;
- 0.2 kg of champignons;
- 300 grams of smoked chicken;
- mayonnaise and spices to your taste.
Cooking process:
- Pour prunes with boiling water, leave for 15 minutes and cut into strips.
- Grind mushrooms and onions in any way, fry in a pan until a beautiful rosy color.
- We turn the chicken into a thin straw and chop the cucumbers in the same way.
- Boil the eggs "hard boiled", grind, mix with mayonnaise and other spices - this will be dressing.
- On a serving dish, line the cling film, then start spreading the ingredients.
- First, go chicken and some dressing. Then - prunes, nuts and again the sauce.
- On top of it are distributed cucumbers, dressing, onions with mushrooms, chicken and once again cooked sauce.
- We cover the salad with foil and put it in the refrigerator for about three hours. Before serving, remove the film and turn the salad so that a tasty “log” comes out.
Salad "Birch" is a combination of taste, originality and simplicity. The dish is great for a family or holiday dinner.
