Secrets of making a Christmas cake
- The baking dish must be greased with butter, close the bottom and sides with parchment paper. Some confectioners fasten paper joints with a stapler.
- In order for the cake to be well baked, and the dried fruits not to burn, the dessert must be baked at low temperatures for 1 to 3 hours. It all depends on the size of the form, the density of the dough and the quality of the ingredients.
- Before you get the dessert out of shape, you need to wait until it has completely cooled. This is important to ensure that the cake is compacted and resilient.
- The dough can be sweetened with honey or jam - so the dessert does not become stale ahead of time.
Classic recipe
By tradition, a Christmas cake is baked 6 weeks before Christmas, and after that, it is constantly saturated with alcohol. This is how you can get delicious, juicy and incredibly fragrant pastries.
British culinary experts advise making a dessert at least two weeks before the holiday in order to appreciate the true taste of Christmas.Today there are many options for making a Christmas cake, but you can achieve the classic taste of holiday baking if you use the recipe from a real English pastry chef.
Ingredients:
- 250 g of flour;
- 4 eggs;
- 480 g of dried fruits;
- 220 g of sugar;
- 120 ml cream (20%);
- 2 tsp spices;
- 50 ml of brandy;
- 2 tsp baking powder;
- 60 g almonds;
- zest of orange and lemon.
Cooking method:
- Prepare the filling. We take dried fruits (prunes, dates, dried apricots), candied orange, as well as dark and light raisins of 140 grams. It should turn out 280 g of raisins and 200 g of other dried fruits. All dried ingredients need to be washed well, remove seeds from them and cut into small pieces.
- Put the chopped “dryer” in a small container, fill it with cognac, mix and put in the refrigerator for a week. Periodically, the composition must be mixed so that all dried fruits can absorb the aroma of cognac.
- Almonds also need to be prepared and dried. Preheat the oven to 190 degrees, put the nuts on a baking sheet and set them to dry for 7 minutes. Grind the cooled almonds into small pieces.
- As soon as everything is ready for the filling, you can begin the process of preparing the cake itself. To begin, beat the sugar (here you can use white, and preferably cane) with softened butter. Without turning off the mixer, we begin to introduce eggs one at a time.
- Add the zest of one lemon and orange. Pour ground spices: cinnamon, nutmeg, cardamom, star anise and cloves. Gradually pour flour with baking powder and add cream.
- Now you can add nuts, aromatic dried fruits to the dough and mix everything thoroughly.
- We take a special muffin baking dish and grease it with oil. We cover with baking paper, spread the dough on top of it and put in the oven preheated to 140 degrees for 3 hours.
- The finished cupcake, without removing it from the mold, is directly saturated with cognac, wrapped in foil and left for 12 hours.
Then we get the dessert out of the mold, wrap it in paper, then in foil and, finally, in cling film. We store the month at room temperature, not forgetting to lubricate it with cognac at least once a week. During storage, the entire alcohol evaporates, and the incredible flavor remains.
