For lovers of Italian cuisine, the name of pizza "Carbonara" will resemble the famous sauce with the same name for pasta. Many are accustomed to being guided by the opinion that on a “cake” with baked filling, you can put everything found in the refrigerator. However, each recipe was developed by upscale chefs.

Classic pizza "Carbonara" with bacon and egg

In this recipe, only those products that were originally added to this baking were used.

Thin pizza recipe

Italians use simple yeast dough.

Prepare:

  • a small pack of dry yeast;
  • 2 tsp granulated sugar;
  • 2 tbsp. l olive oil;
  • 0.5 kg of flour;
  • 300 ml of water.

We dilute yeast and sugar in liquid at room temperature. When everything is dissolved, pour the oil and begin to pour flour, which was sifted in advance.

We cover the dough with a film and let it rise once (increase in volume by 2 times).

The correct composition of the filling

There are rules according to which the products that make up the pizza "Carbonara" are divided into mandatory and additional.

The first ones needed for our baking:

  • 125 g of bacon, carbonade or brisket;
  • red onion head;
  • 150 g Mozzarella cheese.

Here the approach to preparation may vary. If, for example, you use a brisket, then it can be fried. Often the onions are laid out before being laid out.

In our case, grease the rolled cake from yeast dough with olive oil, put the sliced ​​strips of bacon, cover them with finely chopped onions, and mozzarella cheese on top. We send pizza for preliminary heat treatment literally for 5 minutes.

The dough is rolled so that the sides remain, which will not allow the sauce to flow out during baking.

Separately, cooks can add eggs, mushrooms and another type of cheese to the composition.

What is included in a classic sauce

The necessary set of products, without which carbonara sauce for pizza will not work:

  • 80 ml cream;
  • 2 yolks;
  • 50 g Parmesan;
  • green onions;
  • 2 cloves of garlic;
  • a mixture of Italian herbs.

Interestingly, initially there was no cream in the composition. It was made from salted cheese cooked from sheep’s milk.

Cooking it is easy. With a whisk, mix the cream with the yolks, achieving uniformity. We add finely grated cheese, chopped garlic, seasonings and green onions, which we cut beforehand.

Pour on the surface of the pizza when a small blush appears on it in the oven. We return to the oven, and after 10 minutes the dish will be ready.

Pizza "Carbonara" with suluguni and ketchup

You can use this option.

Take:

  • about 200 g of yeast dough;
  • 2 tbsp. l ketchup;
  • 1 tbsp. l olive oil;
  • 150 g smoked bacon;
  • 1 onion;
  • a raw egg;
  • ground pepper;
  • 150 g Mozzarella cheese;
  • in the sauce we change Parmesan to Suluguni.

From the dough we form a thin cake with sides. Lubricate with a brush first oil, and then apply a layer of ketchup. Cut fat into strips. Fry the onions in half rings in a small amount of oil. We lay out everything on the surface and sprinkle with mozzarella.

If you did not find the desired type of cheese in the store, replace with a suitable one.

While the first layer is baked, prepare the sauce, as in the classic version. We take out the pizza from the oven, break the egg in the middle and pour the milk mixture around. Next is the remaining cheese.

With ham and hard cheese

Correctly prepare pizza "Carbonara" with bacon, but in this recipe we will proceed from the fact that some products could not be purchased.

For 250 g of finished dough you will need:

  • 130 g of ham;
  • 1 tomato
  • 200 g of any hard cheese;
  • egg;
  • 5 tbsp. l cream;
  • ground black pepper;
  • greenery.

We put a thin layer of dough for a couple of minutes in a preheated oven, remove it, grease it with olive oil. Cut the ham into small cubes (sometimes I fry the housewives with onions) and distribute in an even layer. Wash the tomato, remove the stalk. With a knife we ​​give the form of thin circles. They will go on top of the sausage.

In a small bowl with a fork or whisk, first mix the cream with the egg. Grate the cheese on a fine grater and add to the mixture along with chopped herbs and spices. Pour over the surface, sprinkle with the remaining cheese and put in a hot oven.

Cooking with mushrooms

Make pizza with this ingredient.

The set of products is as follows:

  • 100 g of ham;
  • 100 g of champignons;
  • 4 tbsp. l tomato paste;
  • 2 tbsp. l olive oil;
  • onion;
  • green onions;
  • 2 yolks;
  • ground black pepper;
  • 2 tbsp. l sour cream;
  • 50 ml cream;
  • seasoning mixture;
  • 150 g of cheese;
  • 250 g of finished dough.

We start with the preparation of the filling. We wash the champignons with water and with a sharp knife we ​​remove all damaged areas, cut into plates. We send immediately to a hot pan with oil and fry, without closing the lid. When all the moisture has evaporated, add chopped onions and continue to fry until cooked.

We roll out the base from the dough, grease with oil and tomato paste. We spread the mushroom mixture, and then the ham plastics. Sprinkle a third of the grated cheese and put in a roasting pan for several minutes.

It's time for the sauce. Pour cream, sour cream and separated yolks into the mixer bowl. Beat a little. Add the second third of the cheese, seasoning, black pepper. Pour over the hot surface of the pizza. The remaining cheese will go from above.

Sometimes Italian cooks pour a little white wine in mushroom sauce.

Put in the oven. Readiness can be determined by the color of the edges of the dough, the cheese should melt. When you get the pastries, immediately, until the crust appears, sprinkle with chopped green onions.

Calorie-ready meals

Keep in mind that the exact number of calories is difficult to calculate, since it depends on many factors.

 

Typically, the convenience store for this baking is about 270 kcal. But, everything changes dramatically when you try to make homemade pizza. Firstly, not everyone uses scales to determine the exact amount of products. Secondly, products from different manufacturers have a different calorie content.

To reduce the content of proteins, fats and carbohydrates, it is enough to make a replacement of products in the composition. For example, use wholemeal flour, use a finely rolled base, add boiled meat or mushrooms instead of smoked bacon, as pizza with ham, cream and cheese contains more than 300 Kcal.

The main thing is that at home, using some tricks, you can control not only the calorie content, but also useful substances.
