Serving round sweets included an entire ceremony.At receptions and balls, servants carried trays with spaced porcelain saucers, on the surface of which lay macrons. Ingredients:
- almond flour - 125 g or 110 g of almonds;
- proteins - 95 g;
- icing sugar - 125 g;
- sugar - 150 g;
- food coloring - optional.
Cooking:
- Flour, combined with icing sugar and sift through a sieve. Repeat the procedure twice. Tip. You can take ready-made almond flour or cook it yourself. To do this, almonds should be peeled, dried and chopped in a blender or in a food processor. The resulting powder can be used as flour.
- Beat the proteins with a mixer until soft peaks form, slowly introduce sugar, gradually making the peaks stiff. Add the dye of the desired color.
- Introduce about a third of the mixed bulk components into the whipped proteins and mix using a spatula. Add the rest of the mixture and mix again.
- The resulting mass must be filled into a pastry bag and squeezed on the parchment the same round billets with a diameter of about 3 cm.
- Future pasta is left outdoors for about 20 minutes. This time is necessary for cooling the workpieces. Tip. Before sending dessert into the oven, you need to determine the degree of readiness of the halves for baking. To do this, gently touch the surface of one of the circles - the dough can be sent to the oven if the finger remains completely clean. Otherwise, you need to wait another 15 minutes.
- Send the “ripened” macaroons to the oven, where they will be baked at a temperature of 150 degrees.
- The cake remains in the oven for about a quarter of an hour. After this time, the oven lid needs to be slightly opened, and after another minute turn off the device. Allow the pasta to cool and separate from the parchment only after it has cooled completely.
Cake blanks are ready. It remains only to fasten them with a suitable filling.
Chocolate Ganache Recipe
Fragrant chocolate cream called ganache - the perfect filling for air pasta.
The recipe can be divided into two parts:
- Cooking cakes according to the basic recipe.
- Making chocolate ganache.
Ganash is prepared using dark chocolate and cream with a high percentage of fat content.
- Chocolate (100 g) is first broken into pieces and mixed with 100 ml of cream.
- The ingredients are mixed with a spatula, and then the container in which the mass is located must be wrapped with cling film and sent to the refrigerator for 12 hours.
- After this time, delicious chocolate ganache can be used to glue pasta halves.
Lemon Flavored
Bright, life-affirming lemon macaroons not only delight the eye, but also sweeten the taste with wonderful refreshing notes.
The peculiarity of the dish lies in its layer. It is superimposed between halves of baked pasta according to the classic recipe.
To prepare the cream you will need 100 g of butter, 30 grams of powdered sugar and the juice of one small lemon. The cooking process is quite simple.
- Beat the butter with a mixer, slowly adding powdered sugar.
- Add lemon juice at the end.
- Put the finished cream on one half of pasta, place the second on top.
Tip. Before serving pasta on the table, they are recommended to stand in the refrigerator for a day.
Colored pastries “Macaroni” with strawberries
The secret of gorgeous colored pasta with strawberries lies in the original combination of jam and ganache. They are specially prepared for exfoliating bright red halves of sweets.
To make the filling you will need the following ingredients:
- strawberries - 300 g;
- "Zhelfiks" (a special culinary mixture containing pectin) - 15 g;
- vanilla - 1 pod;
- cream (fatty) - 100 ml;
- sugar;
- food coloring (red).
Stages of preparation of the filling:
- Grind strawberries in mashed potatoes with a blender. Take 70 g for ganache from the total mass, pour the rest into a separate container.
- Mix Zhelfiks with 50 g of sugar and pour into strawberry puree, mixing the contents with a spatula.
- Put the container on fire, bring the mixture to a boil, having stood for two to three minutes. The future jam should thicken during this time, after which it should be poured into another container and left to cool.
- At this time, you can cook ganache. Pour the cream into a stewpan and bring to a boil. To the resulting mass add seeds scraped from the vanilla pod and a crushed bar of chocolate. Mix the ingredients (chocolate should melt completely).
- Add to the ganache previously deferred 70g of strawberry puree. All components are mixed well again.
- Cook pasta according to the classic recipe. On one of the ready-made halves, apply ganache over the entire area, drip jam in the middle and cover with the second half.
Cooking with Coconut
Another variant of unusually tasty half-cakes with exotic coconut flavor.
Ingredients:
- proteins - 100 g;
- sugar - 50 g;
- almond flour - 50 g;
- coconut flour - 50 g;
- icing sugar - 200 g;
- salt is a pinch.
Cooking:
- Stir loose ingredients in a bowl. They can be sifted through a sieve twice or beat for 30 seconds in a blender. If desired, you can add the dye of the desired color.
- Beat the whites with a pinch of salt until soft peaks. Gradually introducing sugar, continue to beat the mass until stable peaks and a pearly shade are obtained. Pour dry ingredients into the mixture and stir in a quick circular motion.
