Recipe:
- Cool the eggs.
- Separate the whites and yolks.
- Beat whites with a mixer at high power, even better - with a hand blender. Add half a sugar over a teaspoon.
- Beat the yolks with a fork or whisk. Mix with the remaining sugar.
- Pass the flour through a sieve 2-3 times - for oxygen saturation, so the dough turns out airy and light.

- puff pastry - 250 gr;
- milk - 50 gr;
- quince - 2 pcs;
- pine nuts - zhmen;
- chicken egg - 1 pc;
- sugar - 4 tbsp;
- melted butter - 50 gr;
- dark chocolate - 100 gr.
Cooking:
- Wash quince and use a brush or glove to peel vegetables to remove fluff from the surface.
- Cut quince into slices. Put on a baking sheet lined with baking paper. Apply melted butter with a silicone brush and bake at 200 degrees for approximately 20 minutes.

- kefir - 1 cup;

- soda - on the tip of a teaspoon;
- baking powder for dough - 1 tsp
Step by step recipe:

- quince - 2 fruits;
- semolina - 4 tablespoons;
- milk or cream (you can use sour cream) - 100 gr;
- cottage cheese - 600 gr;
- chicken egg - 2 pcs;
- sugar - 5 tbsp;
- soda - 1 tsp;
- vanillin - 1 sachet;
- lemon juice - 2 tbsp;
- honey - 20 gr;
- butter - 40 gr;
- turmeric or saffron - 1/3 tsp;
- cinnamon or lemon zest - for sprinkling.
Your actions:
- Quince the fruits carefully cleaned from the core, keeping the fruits intact.
- Then cut into rings.
- Melt butter in a bucket.
- Sprinkle quince rings with sugar and turmeric / saffron and put in a preheated pan. Passivate 15-20 minutes - until softened.
- Mix semolina and milk. Give semolina to swell - this requires at least half an hour, and preferably 2-3 hours.
- Add cottage cheese, eggs, sugar, vanillin, soda to semolina with milk.
- Put the quince rings in the mold. Do not throw the syrup remaining in the pan!
- Pour quince with dough - note that the pie will rise. Choose a form with high sides.
- Bake for 40-60 minutes at 160-180 degrees. Check readiness with a match.
- Syrup mixed with honey and lemon juice.
- When the cake is ready, let it cool in the oven. If pulled to cool, it can flatten.
- After cooling, turn the cake over and brush it with syrup on all sides with a silicone brush.

Hungarian quince pie

Ingredients:
- flour - 500 gr;
- sugar - 300 gr;
- quince - 2-3 pcs;
- butter - 250 gr;

How to cook:
- Separate the proteins and yolks in the eggs.
- Beat the yolks with 1/3 sugar and butter until white.

- Peel and grate quince.
