Cookies are usually sold for tiramisu, but to try the delicious taste of homemade savoyardi, you should make cookies at home. It is tastier, less high in calories, as it does not contain much sugar.

Recall that the Italians invented the classic Savoyardi cookies, according to which tiramisu can be made from this loose cookie, light and dry. It quickly absorbs coffee and becomes the softest in the dessert. Ladies' fingers are non-nutritious, and this is a plus in a rather satisfying composition of the whole tiramisu. So, what is a classic cookie, how do Italians cook it?
We will need:
- 4 medium-sized chicken eggs;
- 145 g premium flour;
- 180 g of fine sugar;
- a pinch of salt;
- 1 tsp liquid vanilla extract or a little vanilla powder;
- 1 tsp lemon zest (you can do without it);
- coarsely granulated sugar - cookies are sprinkled with it.
To prepare the dough, it is finely granulated sugar that is required; it lends itself better to whipping meringues. But you can’t take the powder, it is badly whipped. Well, maybe add a little powder at the very end. In addition, a little starch is usually present in powdered sugar in stores.
Working process.
- Set the oven temperature to 180 ° C.
- Prepare molds from silicone - grease them with vegetable oil. If there are no suitable forms, you can plant cookies on baking paper, leaving a little space between the items. In the process of baking, they will increase in volume.
- Take two eggs and separate two squirrels in a separate bowl.
- Add the two remaining eggs to the two yolks, mix, pour in the eggs, sugar and beat with a mixer until smooth. When the mass becomes whitish, add vanillin and zest.
- Combine two proteins with salt and beat with a whisk until a firm foam is formed.
- Pour the sifted flour into the yolk mixture.
- There, neatly, interfering from the bottom up, introduce whipped proteins.
- Fill up to half of all forms or put cookies on a piece of paper.
- Sprinkle large sugar on top of cookies.
- Oven 12 minutes.
Air baking
Sometimes lady’s fingers cookies for tiramisu get a little flattened, as the dough spreads, which gives them such a look. How to avoid this?
Try this version of high air and crispy cookies.
Cooking products:
- 60 g of wheat flour and 70 g of flour for biscuits (you can buy it today in large stores, but if not at hand, take ordinary flour with a minimum gluten content);
- 2 eggs;
- 50 g of sugar;
- 1 tsp vanilla concentrate;
- on the tip of a salt knife;
- 10 g of potato starch;
- 2 tsp powdered sugar.
This biscuit cookie is prepared like this.
- Heat the oven to 180 degrees.
- Sift the flour.
- Separate squirrels and yolks.
- Warm warm (room temperature) yolks with half sugar, beat, so that the grains are completely dissolved.
- Beat the whites and the second half of sugar until foam is stable. You can add a few drops of lemon juice while whipping.
- Carefully insert a quarter of the whipped protein foam into the yolks with a spatula and mix without crushing the lush mass.
- Sift a third of the flour into this mass, but do not mix the dough.
- Gently put a quarter of the proteins on top without stirring. Again, sift another third of the flour. Do not interfere!
- Put the last quarter of the protein over the dough again and sift through all the remaining flour. Do not interfere!
- Now add the sifted starch on top and very carefully, trying not to crush the air proteins, mix the dough with a spatula.
- Using a pastry bag, form strips of dough on a sheet of baking paper. Do not stack tightly, leaving about 2 cm between the cookies.
- Sprinkle with powdered sugar and transfer to the oven on the middle shelf.
- After a quarter of an hour the cookies will rise, now you need to make a fire of 140 degrees and bake another ten minutes.
- After baking, immediately remove the cookies from the sheet. This is done by simply dragging one edge of the sheet through the side along the laying of cookies with pulling the sheet on the other side. It all sounds complicated, although in reality everything is simple. Savoyards, lush and tall, themselves bounce off the paper.
Recipe from Julia Vysotskaya
The tiramisu recipe from Julia Vysotskaya gives a slightly different recipe for ladies fingers.
To prepare 36 pieces of cookies you will need:
- 3 eggs - divide 3 proteins and separate 2 yolks;
- 60 g of granulated sugar;
- 50 g of premium wheat flour;
- 30 g of powder.
- Proteins are whipped until smooth and soft, then half the sugar is added, everything is whipped until the crystals dissolve.
- Separately, beat the yolks with the remaining sugar until light.
- Connect everything carefully and sift the flour on top.
- Shuffle by moving the scapula from the bottom up, keeping air.
- To plant fingers and sprinkle with powder twice on top, leaving for a quarter of an hour to insist on a baking sheet.
- Bake in an oven heated to 200 degrees for 10 minutes.
Fast Cooking Ladies' Fingers
Based on the previous recipe, you can bake cookies even faster. To do this, divide three eggs into proteins and yolks, in one bowl beat the yolks with half the sugar (30 g), in the other - the proteins with the rest of the sugar (30 g). Combine everything and sprinkle with flour and then do everything as in the previous recipe.The only difference is that the dough is laid out on a sheet with a single cake. Cinnamon Sponge Cookies
Tiramisu is sometimes prepared with cookies, in which flavoring additives are added. For example, cinnamon.
You will need:
- 4 yolks;
- 3 squirrels;
- 100 g of flour;
- 100 g of sugar;
- 2 g of cinnamon.
All cooking steps are ordinary, only cinnamon is added to the dough before sifting.

- 170 g of cottage cheese;

- 180 g of sugar;
- 3 medium eggs;
- 1 tsp baking powder;
- 30 g of cocoa powder;
- a handful of raisins.

- Beat 2 eggs and, while continuing to beat with a mixer, gradually introduce sugar.

- At this point, introduce raisins into the cottage cheese - pour it in hot water for 10 minutes beforehand and dry it with a towel.
- Put half of the dough on a sheet of parchment, roll out, for convenience, cover with cling film. After removing the film, send the workpiece to the freezer directly on the parchment.
- Meanwhile, roll the second part of the dough between two pieces of film. Remove the top film.
- Remove the workpiece from the freezer. Put and curd the curd mass on it with a spoon.
- Put the second part of the dough on top of the curd from the film.
- Transfer the prepared workpiece with the filling onto a baking sheet with parchment. 20 minutes to bake with medium heat (180 degrees).
- Cut into portioned pieces - first with squares, then, cutting each in half, with triangles. Serve to cool.
Recipes with Savoyardi cookies
Everyone knows what tiramisu is and how to cook it. But you can make many other interesting desserts based on cookies.
- Dessert with pear and mascarpone: add 300 g of low-fat cream and 80 g of powdered sugar to 300 g of mascarpone cheese. Grind with a mixer to a density by splashing a spoonful of cognac.
