Shepherd's pie is a dish that has been popular in the north of England and in Scotland since time immemorial. For its preparation, traditionally used meat of young lamb, vegetables, and in some cases peas.

There are many ways to make a shepherd’s pie. Consider the most popular.

Classic recipe

The classic shepherd’s pie recipe is pretty simple.

To prepare it, you will need the composition of the products:

  • 550-600 g of potatoes;
  • 250 g of pork or lamb meat;
  • 3-4 bulbs;
  • 150 g of dense cheese;
  • egg;
  • 50 ml cream;
  • 50 g of tomato paste;
  • 2-3 tablespoons of flour;
  • salt and spices.

Operating procedure:

  1. Cut peeled and washed potatoes, boil in salted water.
  2. Remove the peel from the onion, fry until golden brown, then add the ground meat, salt and seasonings, and continue cooking for a few more minutes.
  3. Remove the pan from the heat, put the tomato paste in the filling, mix.
  4. Puree the boiled potatoes and dilute with cream, and when it cools down a bit, add the egg, flour and mix until smooth.
  5. Grind the cheese and sprinkle it in mashed potatoes.
  6. Put half of the prepared mass in a high-walled dish, place the minced meat on top, then cover it with the rest of the potatoes and send to bake.

The shepherd’s pie will be ready when its top is browned and covered with a light golden crust.

Jamie Oliver, nicknamed the Naked Cook, is a host of popular cooking shows and the author of many recipes. Currently, more than a dozen cookbooks written by him have been issued, among which there is a step-by-step instruction for preparing a shepherd’s pie.

For work you will need:

  • 400 g of potatoes;
  • 250 g of lamb meat;
  • 150 g of frozen peas;
  • 250 g canned tomatoes;
  • 30 g butter;
  • 25-30 g of curry paste;
  • medium-sized red onion;
  • one red pepper fruit;
  • several garlic cloves;
  • a small piece of ginger root;
  • fresh coriander;
  • mustard seeds;
  • olive oil;
  • salt and black pepper.

Recipe from Jamie Oliver:

  1. Halve the onion and red pepper, finely chop one part, and mashed the second part in a blender with ginger and garlic cloves.
  2. Fry the minced meat of lamb flavored with curry paste in butter, and when it becomes light brown, add chopped onion, red pepper and continue cooking until they soften.
  3. Put chopped tomatoes in the minced meat, mix and wait until it boils, then reduce the heat to a minimum and simmer the mass until it becomes thick, introduce peas, salt and ground pepper.
  4. Boil potatoes, puree and mix with mustard seeds, chopped coriander, chopped garlic, ginger, onion and pepper, blended in salt, do not forget to salt.
  5. Put the minced meat in a baking dish, put mashed potatoes on top, flatten and send to the oven.

On a note. If it is not possible to purchase curry paste, you can replace it with dry seasoning, and instead of coriander, take other herbs.

To prepare a shepherd’s pie according to the recipe of this cook, you will need the components:

  • 600 g of lamb;
  • 800 g of potatoes;
  • 100 g of dense cheese;
  • 2 egg yolks;
  • 0.5 l of meat broth;
  • a glass of red wine;
  • bulb;
  • carrot;
  • several garlic cloves;
  • 30 ml of Worcester sauce;
  • 30 ml of tomato puree;
  • thyme;
  • rosemary;
  • olive oil;
  • salt and ground pepper.

Recipe from Gordon Ramsay:

  1. Fry chopped lamb for several minutes, then add chopped onions, garlic, carrots, and continue cooking.
  2. Add minced tomato puree, wine, sauce, thyme, rosemary and stew, stirring constantly.
  3. When the alcohol evaporates, pour the broth into the minced meat, and then wait until it boils and thickens.
  4. Cook potatoes, mix with egg yolk and half of grated cheese, put spices and salt.
  5. Spread the minced meat on the bottom of the heat-resistant dishes, lay the potato mass on top and sprinkle with the remaining cheese.

Such a pie will need to be baked in the oven for a little over a quarter of an hour. It will be ready when the surface turns golden brown.

Shepherd's pie from Julia Vysotskaya

To prepare a shepherd’s pie according to the recipe of Julia Vysotskaya, the following components are required:

  • 5-7 potatoes;
  • 800 g of lamb or ground beef;
  • 2 onions;
  • carrot;
  • garlic cloves;
  • 100 ml of meat broth;
  • 50 ml of milk;
  • some butter;
  • a few drops of Tabasco sauce;
  • vegetable oil;
  • salt and black pepper.

Sequencing:

  1. Boil potatoes and mashed with butter and milk.
  2. Grind carrots on a grater, cut onions into cubes and fry in vegetable fat.
  3. Add minced meat, garlic, broth, salt, spices and continue cooking.
  4. A few minutes before removing the pan from the heat, add Tabasco sauce and mix.
  5. Put minced meat with vegetables in a form, put mashed potatoes on top and send the dish to the oven for half an hour.

On a note. If desired, it is permissible to supplement the meat filling with leek, chopped in half rings.

Cooking option with chicken

There is always a place for creativity in culinary, and you can safely make adjustments to the classic recipes for preparing certain dishes. For example, make a shepherd’s pie with chicken, canned corn and a mixture of Provencal herbs.

For cooking you will need:

  • 400 g chicken;
  • 800 g of potatoes;
  • 500 ml of milk;
  • 250 g of green peas;
  • 150 g sweet corn;
  • 120 g of dense cheese;
  • 2-3 garlic cloves;
  • 50 g of flour;
  • a mixture of provence herbs;
  • salt.

Procedure:

  1. Cook potatoes, mashed potatoes and add butter, milk, flour and crushed garlic.
  2. Cut chicken into small pieces and fry until golden brown.
  3. Mix meat with salt, spices and herbs, add peas, corn and continue cooking.
  4. Put the meat stuffing in a refractory dish, cover with mashed potatoes and sprinkle with grated cheese, then send to the oven.

The shepherd’s chicken pie will be ready to eat in about half an hour.

Lamb and Mushroom Baking

Another option for preparing shepherd’s pie is the addition of minced lamb stuffing with fresh or canned mushrooms.

For cooking you will need:

  • 600 g of mutton;
  • 750 g of potatoes;
  • 450 g of mushrooms;
  • 100 g sweet corn;
  • bulb;
  • carrot;
  • 100 ml of milk;
  • greasy sour cream for lubrication;
  • butter;
  • some flour;
  • salt and seasoning.

Work sequence:

  1. Peel onions, mushrooms, carrots, chop and fry until soft.
  2. Add minced meat, salt, seasonings to the frying and cook until the mass becomes golden and crumbly, then add sweet corn, mix the filling and remove from heat.
  3. Cook potatoes, crush in mashed potatoes, adding butter, flour and salt, and then dilute with milk.
  4. Put half the mashed potatoes in a mold, place the filling on top, cover with the remaining potatoes and grease the top of the pie with sour cream.

If you wish, you can replace sweet corn with boiled beans, green peas, or not add beans at all.

Traditional english shepherd’s pie

A traditional English shepherd’s pie is prepared on the basis of lamb or pork.

For work you will need:

  • 500 g of meat;
  • 700 g of potatoes;
  • 120 g of hard cheese;
  • 2 eggs;
  • 100 ml of milk;
  • 50 g butter;
  • bulb;
  • several garlic cloves;
  • tomato puree;
  • salt and seasoning.

Work sequence:

  1. Cook potatoes, salt, crush in mashed potatoes.
  2. Add milk, butter and grated cheese, leaving a little to powder, then beat in eggs and knead until smooth.
  3. Fry chopped onions and garlic, then add minced meat and tomato paste, salt, pepper and continue cooking.
  4. Put half the potato mass into the mold, distribute the filling and cover with the remaining mashed potatoes.
  5. Sprinkle cheese pie and bake in the oven.

Ready serving shepherd's pie before serving, you can sprinkle with chopped fresh herbs.
