Previously, zucchini fritters were exclusively seasonal dishes. Indeed, during storage, such vegetables quickly become stiff and lose their taste. But today, fresh little young zucchini can be bought in supermarkets at any time of the year.

Lush zucchini fritters

Ingredients: 2 small zucchini, a chicken egg, 4 teaspoons of high-grade flour, a pinch of salt, fresh garlic to taste, 1 teaspoon of baking powder.

  1. Zucchini peeled and rub on a medium grater. If the vegetables are young, then you can immediately grind them without peeling.
  2. Zucchini immediately salted and set aside. When the mass releases a large amount of juice, it must be squeezed and combined with the egg.

Ingredients: 2-3 zucchini, onion, half a carrot, fresh garlic, large egg, 1 teaspoon of sea salt, 3 tbsp. tablespoons high-grade flour, 1 tbsp. a spoonful of refined oil.

  1. First of all, the oven is turned on, so that by the time the dough is ready, it is already hot.
  2. Vegetables are washed, peeled and chopped if necessary using a grater with the largest divisions. Salt is added to the mass. After 5-6 minutes, grated squash is well wrung out from the allocated juice.
  3. Finely grated carrot and chopped onion with miniature cubes are laid out to the resulting mass. If desired, it can also be grated.
  4. Egg, flour and refined butter are added to the squash dough.
  5. At the end, finely chopped garlic cloves are laid in the mass.Their quantity can be adjusted according to your own taste.
  6. The mixture is well kneaded, peppered to taste or flavored with other favorite seasonings.
  7. Spoon the dough onto a baking sheet covered with oiled parchment.

Appetizing pancakes from zucchini in the oven are baked for 12-14 minutes for roast. Turning them over is not necessary.

With cheese and garlic

Ingredients: a kilo of zucchini, 320 g of fine flour, 220 g of hard cheese, 3 eggs, 4-5 garlic cloves, a bunch of dill, 1 teaspoon of rock salt.

  1. Vegetables are washed, the edges are cut off from them. If necessary, remove the skin from the zucchini. Further, the vegetables rub coarsely, salt, and after 6-7 minutes they are wrung out from excess fluid.
  2. Zucchini spread all the other ingredients stated in the recipe. Fresh dill must first be chopped, and garlic is passed through a press. Cheese is grated with the smallest divisions. The taste of ready-made fritters depends to a greater extent on the quality of this product.
  3. With a spoon, the resulting mass is laid out in a frying pan with hot oil.

Pancakes with zucchini and cheese are fried on both sides and immediately served on the table.

How to cook fritters with semolina?

Ingredients: 330 g fresh zucchini, 3 tbsp. tablespoons of semolina, 1 teaspoon of table salt, chicken egg, any fragrant herbs.

  1. Young vegetables are thoroughly washed and grated with large divisions. The resulting “chips” are sprinkled with salt, mixed and left for several minutes, after which it is well squeezed from the juice.
  2. Gradually, other ingredients from the recipe are added to the mass, starting with a raw testicle. You can choose any fragrant herbs.
  3. After mixing, the "dough" is left for half an hour until the semolina swells. If there is no time for this process, you can immediately start frying treats.

Well-heated oil prepares products until golden brown.

Ingredients: 3 small zucchini, 85 g of hard Dutch cheese, chicken egg, 4 tbsp. tablespoons of high-grade flour, salt, a mixture of peppers.

  1. Vegetables are processed first. If necessary, they get rid of the skin and rub coarsely. Then they salt and leave for a couple of minutes.
  2. Vegetable "chips" are wrung out, after which all other declared products are sent to it in order. Hard cheese is very finely rubbed. Instead of a mixture of ground colored peppers, you can choose any other favorite seasonings.
  3. The resulting "dough" is poured into a hot pan with a deep spoon. The pancakes are baked on both sides.

A treat is served with regular sour cream or spicy garlic sauce.

Spinach Diet

Ingredients: large zucchini, onion, 180 g frozen spinach, 3 tbsp. tablespoons of flour, fine salt, ground black pepper.

  1. Zucchini is washed, cleaned, rubs coarsely, sprinkled with salt, and after a while it is wrung out from excess moisture.
  2. The beam is finely chopped with a sharp knife. Spinach thawed in advance is ground in the same way.
  3. All products are mixed in one bowl. Flavored with pepper. Flour is added to them.

Squash pancakes are formed from the mass, which are fried until cooked on both sides. Bright green patches of spinach in the resulting dish look very appetizing.

With the addition of minced meat

Ingredients: 370 g of zucchini, 2 chicken eggs, 230 g of any minced meat, a clove of garlic, 2 tbsp. tablespoons of wheat flour, salt to taste, any spices.

  1. Vegetables are peeled and rubbed with medium holes. Salt is added to the mass. After a while, it is wrung out from the secreted juice. If this is not done, the future vegetable dough will turn out to be too liquid.
  2. Now you can drive raw eggs into the mass. After stirring, minced meat is added. You can take any, including mixed. For example, from chicken and pork.
  3. Chopped garlic and any selected spices are added to the mixture.
  4. After falling asleep, you need to knead all products well again.
  5. On heated vegetable oil, the products are fried on both sides.It is convenient to spread each new portion of the dough with a tablespoon.

Tortillas are served with any side dish or just with your favorite sauce.

Eggless Lenten Recipe

Ingredients: large young squash, medium onion, 3 tbsp. tablespoons of small oatmeal, 2 tbsp. tablespoons of high-grade wheat flour, table salt, a pinch of thyme, sweet paprika, black ground pepper.

  1. Zucchini is well washed, and also, if necessary, is brushed. Next, the vegetable is rubbed on a grater with large divisions. The resulting “shavings” are salted and left for 5-6 minutes. Next, you need to squeeze it out of the released excess moisture.
  2. The onion is peeled, washed and finely chopped with a sharp knife. But it is best to grate it at all, so as not to feel the bitterness of the vegetable in the finished dish. After this treatment, only the onion flavor will remain.
  3. All other ingredients declared in the recipe are added to the vegetable mass. Oatmeal is not necessary to grind. But if you wish, you can do this with a coffee grinder.
  4. To make fritters diet, it is best to bake them in the oven on parchment. But you can and habitually fry the treat in a small amount of oil in a pan.

The finished dish is laid out on a paper towel to remove excess oil.
