This is a kind of cream based on lemons. Its mass is thick, somewhat similar to pudding. Kurds are most common in Britain and North America.

Previously, it was used as a spread for buns instead of jam or as a filling for baking, but over time many other recipes appeared and cakes and pies began to be prepared with it.

How to make real lemon kurd?

It’s easy to make lemon kurd, the most important thing is to follow the instructions exactly.

Required Products:

  • about 75 grams of sugar;
  • zest of one lemon;
  • 60 grams of butter;
  • four yolks;
  • 120 milliliters of lemon juice.

Cooking process:

  1. Peel the lemon, and grate its peel on a fine grater.
  2. Squeeze the juice from the lemons into a container, so that it turns out about 120 milliliters.
  3. Drive there only the yellow parts of the eggs, put the indicated amount of sugar and butter, add the zest.
  4. Put this mixture on a small fire, and stirring constantly, bring to the desired state. It should be thick enough.
  5. Pour the cream into a jar, cover with something, cool and put in the refrigerator overnight.

Where can I apply lemon cream?

Such lemon Kurd can be eaten with toasts, well-coated with them and getting a sweet dessert for breakfast.

Required Products:

  • four yolks;
  • 100 grams of corn starch;
  • vanillin to taste;
  • a spoon of lemon zest;
  • butter packaging;
  • 130 milliliters of lemon juice;
  • 450 grams of sugar;
  • four squirrels;
  • 200 grams of flour;
  • 320 milliliters of water.

Cooking process:

  1. We put 130 grams of butter in a blender, the indicated amount of flour, a pinch of sugar and salt, and interrupt until we get crumbs.
  2. Then quickly pour two tablespoons of cool water, again mix everything and bring to the state of the test. We form a ball and remove it for 40 minutes in the refrigerator.
  3. We turn the mass into a thin layer and carefully transfer it to a round shape, so that the layer covers the bottom and sides. We cook for about 15 minutes in an oven heated to 170 degrees.
  4. In a deep container we combine the grated zest with sugar, starch, lemon juice and the indicated amount of water.
  5. Bring the mass to a boil, wait until it thickens and remove. Pour pre-lightly whipped yolks to it and heat it again, after which we introduce the butter and put it all on the already cooled baked cake.
  6. In another container, combine the proteins with sugar, beat thoroughly, and beautifully spread the mixture onto a lemon filling with a spoon or pastry bag.
  7. Keep in the oven for about 10 minutes at 170 degrees, until it becomes rosy.

Lemon Kurdish Pie

Necessary products for the dough:

  • 6 grams of baking powder;
  • egg and yolk;
  • 100 grams of cold butter;
  • about 300 grams of flour;
  • the right amount of cold water;
  • 130 grams of sugar.

For Kurdish:

  • 20 grams of butter;
  • zest of two lemons;
  • two eggs;
  • 120 milliliters of lemon juice;
  • 100 grams of sugar.

Cooking process:

  1. Let's start by making the dough. It is done very simply: we send all the ingredients listed for it to a food processor and quickly grind it.
  2. What happened, wrap in cling film, put in the refrigerator for about 30 minutes.
  3. We squeeze the juice from two lemons, rub the zest on a fine grater and combine this with previously slightly beaten eggs, sugar and butter.
  4. We send the mass to medium heat, do not let it boil, constantly stir and bring to the desired density.
  5. We divide the dough into two parts, so that the second is smaller. Roll out thin layers. The first one is sent to the form, so that it covers the bottom and sides.
  6. Pour prepared kurd from above and cover with a second sheet of dough.
  7. We bring to full readiness in a hot oven for 30 minutes, setting the heating to 170 degrees.

Required Products:

  • a glass of sugar;
  • 100 grams of butter;

  2. Mix sugar with eggs, grind, add butter and combine this mass with squeezed juices and zest.
  3. We put it on low heat, not letting it boil and constantly stirring until the mixture becomes thick.

Lemon Lime Kurd

Required Products:

  • 3 eggs;
  • two lemons and as much lime;
  • 50 grams of butter;
  • 200 grams of sugar.

Cooking process:

  1. Remove the zest from lemons and lime, chop, combine with sugar.
  2. We squeeze the juice out of them, so that about 120 milliliters come out, and pour it into the sugar.
  3. We put the mass in a water bath, start to warm, introduce oil, and then pre-beaten eggs.
  4. We keep everything for about 15 minutes, until the Kurd thickens.

How to cook without eggs?

Required Products:

  • butter packaging;
  • a glass of sugar;
  • four lemons;
  • 150 grams of flour.

Cooking process:

  1. Rub the zest on a fine grater, squeeze the juice out of lemons.
  2. Combine, add sugar and put on the stove.When almost all of the sugar has dissolved, we start adding flour one spoonful each.
  3. After you see that the mass has become thicker, you can lay out the oil and continue to keep everything on fire for about 6 minutes, whisking slightly.

Kurd from lemon and gelatin

Required Products:

  • 80 grams of butter;
  • 3 grams of gelatin;
  • 120 grams of sugar;
  • three eggs;
  • 2 lemons;
  • approximately 100 milliliters of water.

Cooking process:

  1. Pour gelatin with water and leave for a while.
  2. Grind lemon zest, mix with squeezed juice, half sugar and heat a little.
  3. Beat the contents of the eggs, combine with sugar and pour into the lemon mass.
  4. Keep on the stove for about three minutes, without boiling, add oil and gelatin.
  5. Place the mass in a blender, beat well and cool.

Lemon Kurd with cream

Required Products:

  • two lemons;
  • half a glass of sugar;
  • about 50 grams of butter;
  • 3 eggs;
  • icing sugar - 25 grams.

Cooking process:

  1. Combine the sugar with the contents of the eggs, kill. Add to them the juice from the squeezed lemon and heat in a water bath.
  2. Having achieved the desired density, add chopped zest and oil.
  3. Whip the cream and powder and add them to the already chilled lemon mixture.

How much lemon kurd is stored?

You can store the finished Kurd for about two weeks, but only subject to certain rules:

  • need to be cooled at room temperature;
  • keep the cream in a clean, sterilized jar with a lid in the refrigerator. In this case, the temperature should be at least 6 degrees.
