Sour cream cakes are a fairly simple dish to make. They can be served instead of bread for tea, and if supplemented with sauce, meat or vegetable filling, then it would completely be a separate, nutritious meal.

Pancakes on sour cream, like a grandmother's, fried in a pan

You can fry cakes on sour cream not only at home. This cooking method is suitable for a picnic in nature or in the country.

Essential products for yeast cake dough:

  • fresh yeast (you can use instant ones - 1 sachet) - 20 g;
  • water - 100 ml;
  • sour cream 15-20% fat - 150 ml;
  • sugar - 1 tbsp. spoon with top;
  • wheat flour - 3 cups;
  • any vegetable oil for frying;
  • egg - 1 piece;
  • salt -1 tsp.

Step-by-step instruction

  1. Preheat the water to such a state that it is slightly warmer than room temperature. Dissolve a bag of yeast in it.
  2. Pour sugar, salt and sour cream.
  3. Mix everything thoroughly with a fork and let rise, 10 minutes are enough.
  4. Pour in one egg and stir again.
  5. Pour millet flour in advance one glass each and knead the dough, for convenience, first stir with a spatula, and then with your hands. You need to add flour as necessary, but so that the dough easily sticks off your hands.
  6. When the dough has been kneaded, cover it with a clean kitchen towel and put where there is more heat for proofing for an hour. It should become magnificent and twice as large as the original volume.
  7. All dough should be distributed on the same 4 pieces for tortillas.
  8. Now you need to roll each piece of dough about 1.5 -2 cm in thickness and pierce it with a fork. Cakes leave to rise for 5 minutes.
  9. In a frying pan preheated to hot, fry the cakes until cooked on both sides.

It is not worth frying over high heat, otherwise there is a risk that the cakes will not bake inside. Drain the fat by spreading it on paper napkins. It can be consumed hot.

Cooking in the oven

For those who do not like fried, there is an option to bake cakes in the oven, like my grandmother or in the oven.

You will need:

  • sour cream - 250 g;
  • flour - 400-450 g;
  • granulated sugar - 150 g;
  • half a teaspoon of soda.

Description of the preparation:

  1. Sour cream should be chilled, and flour sifted through a sieve, so it will be saturated with oxygen, and the kneaded dough will become more magnificent.
  2. Sour cream with sugar must be beaten.
  3. Mix flour with soda.
  4. Put everything together and knead the dough.
  5. When the dough is ready, divide it into two pieces.
  6. Each part is rolled up to 0.5 cm in thickness in turn.
  7. From the dough, cut out the mugs with a form, a special knife or a glass.
  8. You can spread baking paper on a baking sheet and grease it with oil.
  9. Stack mugs in pairs - one on one.
  10. Send in an oven preheated to 200 degrees for 10 - 15 minutes.

Baked cakes in the oven can be cut in the middle and spread with jam, butter, condensed milk, and sprinkled with powdered sugar on top, or pour over melted chocolate.

No eggs added

Necessary products for cooking:

  • sour cream - 250 ml;
  • spices, it is better to take "Provencal herbs" - 1 tbsp. a spoon;
  • wheat flour - 500 g;
  • soda - 1 teaspoon;
  • butter - 1 tbsp. spoon and for greasing hot cakes;
  • Adyghe cheese - 200 g;
  • fresh greens - 1 bunch;
  • turmeric - 1 tbsp. a spoon.

A method of making tortillas on sour cream, like my grandmother’s:

  1. As in other recipes, sift the flour and add soda and Provencal herbs to it.
  2. Mix sour cream with melted butter, soda and salt if desired.
  3. Mix everything, add turmeric and knead the dough so that it sticks off your hands and keeps its shape.
  4. Mash cheese with a fork in a plate.
  5. Cut fresh herbs, and mix in a plate with cheese.
  6. From the test, make 5 cakes.
  7. Roll each to 2-3 mm thick.
  8. In the middle lay the filling of cheese and herbs.
  9. Fasten all the ends in the center.
  10. Roll out the resulting "envelope" with cheese inside with a rolling pin so that the cake fits on the bottom of the pan.
  11. Fry cakes, turning from one side to the other.
  12. Fry flat cakes, while still hot, grease with butter.

Such cheese cakes inside can be served hot or cold to the dining table. And you can also diversify the dish with different varieties of cheese and spices.

How to cook without yeast

To make the dough rise quickly it is not necessary to use only yeast, sour-milk products, such as yogurt, kefir, spoiled milk or sour cream, are suitable for the dough.

Essential Ingredients:

  • flour - 3-4 glasses;
  • 1 teaspoon of soda;
  • any vegetable oil for frying;
  • sour cream - 1 glass;
  • margarine - 50 g;
  • granulated sugar - 30 g;
  • egg - 1 piece;
  • 1 teaspoon of salt.

Cooking recommendations:

  1. Melt margarine in a steam bath, but do not boil. Then remove from heat and let cool.
  2. Beat the egg slightly.
  3. Add sour cream and continue whisking the mass.
  4. Introduce melted margarine and continue whisking.
  5. Pour granulated sugar, soda and salt.
  6. Gradually pour the prepared flour into a glass after a glass, kneading the dough.
  7. Leave the dough to rise under a clean kitchen towel for 20 minutes.
  8. To knead the raised dough and to form cakes. Size can be done as you wish.
  9. Sprinkle the formed pieces with flour and roll out to 5 mm thick.
  10. Fry the cakes in a pan until they are rosy in color on each side.

Grandma’s Butter Cake Recipe

Essential products for sour cream dough:

  • water - ¾ cup;
  • sour cream - 4 tablespoons;
  • granulated sugar - 5 tablespoons;
  • butter - 2 tablespoons or 80 g;
  • wheat flour - 4 cups;
  • salt - half a teaspoon;
  • instant yeast - 1 sachet (5 g);
  • an egg - 1 piece.

Step by Step Instructions:

  1. Dissolve yeast in warm water.
  2. Melt the butter in a steam bath and cool to room temperature.
  3. Mix everything with sour cream, salt, granulated sugar.
  4. Pour the egg into two cups, separating the protein and the yolk.
  5. Beat the whites until foam and add to the dough piece.
  6. Introduce flour and knead smooth dough.
  7. Cover with a towel and put in a warm place to stand.
  8. Knead the risen dough and divide in half.
  9. Roll out each part and cut out circles from it.
  10. Laying out on a baking sheet, pierce the circles with a fork, or make indentations with your fingers.
  11. Lubricate the surface of the cakes with a brush in yolk and put the baking sheet in the oven preheated to 200 degrees for 20 -25 minutes.
  12. Cooked still hot pastry cakes can be greased with a brush, dipped in butter. So they will become even more appetizing and more beautiful.
