What is udon noodle
Noodles in Japan are second most popular after rice. It is made from buckwheat, rice, wheat and even bean flour.
Udon noodles in diameter does not exceed 4 mm. The hue of such noodles, depending on the flour from which it is made, may vary and may be from white to gray. In our supermarkets, such a product can be found in the department of Japanese cuisine.
According to tradition, such noodles are paired with broth. You can eat it both hot and cold. It goes well with seafood, vegetables and meat.
The composition of udon noodles is simple - flour, water and salt. Flour is often wheat, but sometimes other types are mixed into it, as if combining tastes. There are about 30 varieties of udon noodles in Japan!
Udon has no contraindications, contains vitamins B1 and B3, promotes weight loss and is perfectly digested by the stomach.
How to make Japanese wheat noodles with your own hands
A great alternative to homemade noodles.
To do this, take:
- wheat flour (200 g);
- water (90 ml);
- salt (1 tsp).
In fact, udon is ordinary thick noodles. It’s only different from the classical way of cooking. In this case, you need to strictly observe the proportions. The Japanese people are very painstaking, so even 5 grams of excess flour can ruin everything. If you go too far with water, the noodles will stretch very much and lose their shape.
We take the right amount of water at room temperature, add salt and stir so that it dissolves.
If you want to cook udon in different colors, you can use natural dyes, for example, beet juice.
It is added to water, but in proportion.
- Measure out the flour, pour salted water into it and start kneading the dough when it becomes even, place in a bag removing air. Leave on for 30 minutes.
- Next, spread a towel on the floor, put a bag of dough on it and cover it again with a towel. Kicked udon feet! In this way, according to professionals, it is possible to achieve the desired result.
- Carefully moving, you need to go one way, and then the other way through the test until it becomes flat. This process will take no more than half a minute.
- Next, we remove it from the bag, give it a round shape, put it back in the bag and knead it in the same way. Repeat three times.
- After kneading is finished, put it back in the bag and let stand for about 3 hours.
You can start cooking.
- The table can be sprinkled with a little flour or starch. We put the dough and roll out a thickness of about 3 mm. It is better that the edges of the cake are square, then the noodles will be smooth.
- Sprinkle the surface of the cake and spread the starch evenly over it. Then fold one edge to the middle, after the other also. Lay the dough with the seam down and cut strips about 4 mm wide.
- When done, mix the strips with your hands. Wheat noodles are ready!

Udon noodles with chicken and vegetables
This recipe is not only tasty, but also incredibly useful, because it contains a whole list of vitamins.
We will need:
- 200 g of noodles;
- 1 bell pepper;
- 1 carrot;
- 200 g chicken fillet;
- 1 onion;
- A pair of green onion feathers;
- 2 cloves of garlic;
- 2 tsp soy sauce;
- ½ tsp Ginger
Cooking progress:
- Pepper and carrots are cut into strips, onions are cut arbitrarily. Garlic must be squeezed out by a press. Chicken fillet is cut into small cubes. Ginger rubs.
- On fire we heat a saucepan with a dense bottom, pour vegetable oil there. Garlic and onions are fried until a blush appears. Then pour the carrots, peppers and chopped green onions, fry.
- After the chicken is fried. It must be constantly stirred. When it is almost ready, add ginger and soy sauce. There we pour about a glass of clean water. The saucepan is covered with a lid and then everything is stewed over low heat, constantly stirring.
- When the water is almost completely extinguished, turning into a thick sauce, turn off and remove to the side.
- Now let's do the noodles. We put a saucepan with water, add salt to it, boil it - put udon in it for about 4 minutes. Are you ready? Fine! We rinse and filter the noodles, wait until the excess moisture drains.

Cooking with Pork
We leave the ingredients from the previous recipe, but instead of poultry we take 200 g of fresh pork.
Cooking progress:
- Vegetables are cut into strips. Fry the meat in a pan, when a golden crust appears, pour the vegetables there and continue cooking, stirring over medium heat.
- Water, soy sauce and starch are mixed in a separate container. Let it brew for about five minutes.
- Add the resulting sauce to the pan with meat and vegetables, and as soon as it begins to boil, put the noodles in the same place. Everything is thoroughly mixed and fried in just a couple of minutes.

With seafood
This recipe is also easy to execute, but the taste of this dish will be remembered for a long time.
So, we will prepare:
- mix “sea cocktail” by weight at your discretion;
- champignons;
- small ginger root;
- a few cloves of garlic;
- 1 onion;
- ½ bell pepper;
- carrot;
- some celery;
- hot peppers;
- soy sauce;
- sesame oil (dark).
Working process:
- Cut ginger and garlic into a deep pan. Vegetables need to be cut into strips, and onions with celery are half rings. With hot pepper you need to be more careful and it is better to cut it into thin rings to taste.
- If the mushrooms are small, you can put the whole, if large, cut into strips as well.
- Everything is poured with several tablespoons of oil and fried.
- Just a minute later we put the same seafood there.
- Next, pour in soy sauce and put udon.
- Everything is well mixed.
According to the same scheme, you can cook udon only with shrimp or any other seafood.
The most important thing is not to digest the noodles, because then it will lose its structure, and the dish will not be so delicious.
Udon noodles soup with champignons
The fact that udon goes well with meat noodles, we have already said. But with it you can cook fantastically delicious soup!
For him we need:
- pork;
- noodles;
- carrots and onions;
- champignons (canned);
- vegetable oil;
- salt;
- spice.
Work process:
- Pork is cut into strips and cooked for about 15 minutes.
- Mushrooms, carrots and onions are also chopped and fried.
- Add noodles to the pork broth. After we place the pre-fried vegetables in a saucepan with soup. Spices can be very different, but a mixture of vegetables or “five peppers” is best.
- Next, the soup is boiled for 5-7 minutes. Everything, the soup is ready, you can serve it to the table.
Japanese noodle chicken hearts
A recipe that will decorate any table and will definitely please guests.
For him you will need:
- ½ kg of chicken hearts;
- 1 color pepper;
- 1 onion;
- about 300 g of noodles;
- 50 g of soy sauce;
- 1.5 tsp starch;
- 4 tbsp. l vegetable oil;
- a pinch of seasoning;
- 50 ml of rice wine;
- salt, ground pepper and a little sugar;
- green onions.
Cooking process:
- Hearts need to be washed, cleaned and dried, then fry for 10 minutes in a pan.
- Vegetables are cut into small pieces.
- When the hearts are ready, they need to be removed from the pan and send the onion there for 5 minutes, and then also remove it from the pan in a separate container.
- We stew vegetables for about 8 minutes, add oil if necessary. After pepper is ready, previously removed ingredients can be returned to the pan.
- Starch is diluted in 70 ml of water. Send the resulting liquid to the pan, there, you need to put spices and rice wine. Everything is well mixed and a few minutes before being ready, a green onion is put.
