  1. At the initial stage, it is necessary to melt the chocolate. To do this, we heat a water bath or use a conventional microwave. The main condition is to constantly stir the mass and prevent its overheating. The temperature of the chocolate should be approximately 45-50 ° C.

For a more accurate determination of the degree of heating, a small amount of the mixture should be applied to the wrist. Heated to the right temperature, the mass will not burn the skin, while you feel noticeable heat.

  1. Next, heat the cream to 70 ° C, after which we add them to the melted chocolate. The resulting mixture is thoroughly stirred until a homogeneous consistency.Manually connecting the two components is extremely difficult, so we recommend using a blender or mixer. As a result, you should get a uniform dense consistency that resembles jelly.
  2. At the final stage, add soft butter. The amount of this ingredient depends on your taste preferences. If you wish, you can not use oil at all in the process of making truffle sweets. The finished consistency is put in the refrigerator for 12-18 hours, after which they take out the chilled ganache and form small balls from it. Formed sweets are dipped in melted chocolate mass, and cocoa is sprinkled on top.

A simple version of milk powder

Ingredients:

  • 300 g of milk powder;
  • 100 g butter;
  • 3 tbsp Sahara;
  • 2 tablespoons water;
  • 2 tbsp cocoa.

How to Make Caramel Truffles at Home

Caramel truffles have a rather dense chocolate shell on the outside, but inside the delicacy turns out to be very soft and viscous. A homemade recipe for sweets involves the use of milk chocolate, but if you are a supporter of dark varieties, you can add classic dark chocolate instead of milk.

You will need:

  • milk chocolate - 2 tiles;
  • sugar - 1/2 cup;
  • butter - 20 g;
  • fat cream - 1/3 cup;
  • water - tablespoon

Cooking:

  1. Pour sugar into the stewpan with water, mix the ingredients and cook the mixture on low heat until it acquires a light amber hue.
  2. Bring the cream to a boil, remove from heat, add the butter and mix the ingredients thoroughly until smooth.
  3. Combine the finished mixture with caramel, and then add the finely ground chocolate. The mixed mass is removed in the refrigerator for 2 hours, after which we make small balls out of it. Formed sweets we wrap in cling film and cool for one hour.

  • fat cream (33%) - 100 g;
  • sugar -6 tablespoons;
  • nuts - 100 g;
  • cognac - 30 g.

Cooking process:

  1. Put cocoa, cream, sugar and cognac in the stewpan, mix the ingredients thoroughly and bring the mixture to a boil.
  2. Turn off the heat and add pre-chopped nuts to the icing. We remove the finished mass in the refrigerator until the morning.

Ingredients:

  • dark chocolate (from 60%) - 1 bar;
  • cream (from 33%) - 100 gr.;
  • cashew nuts - 50 gr.;
  • cocoa - 3 tablespoons

Cooking:

  1. Remove the boiling cream from the heat, add the crushed chocolate and mix thoroughly until the ingredient is completely dissolved.
  2. We cover the finished ganache from above with cling film so that it fits snugly against the chocolate mass. We remove the capacity in the refrigerator for one hour.
  3. We take out the cooled mass from the refrigerator, leave it for 5 minutes, then beat the ganache with a mixer until an airy texture is formed. From the finished mass, we mold the balls of the desired size and roll them in finely chopped nuts.

White Chocolate Nutella Dessert

You will need:

  • 2 tiles of dark chocolate;
  • 1/3 cup fat cream;
  • 4 tbsp Nutella

To decorate:

  • 2 bars of white chocolate;
  • tbsp vegetable oil;
  • 50 g of crushed chocolate chips.

Cooking process:

  1. Using a water bath, warm the cream with chocolate and Nutella, then mix the mixture well.
  2. Remove the hot glaze from the heat, wait 10 minutes for it to cool, then cover the ganache with foil and put it in the refrigerator for 3 hours.
