Fragrant and bright strawberries are an ideal berry for the preparation of the most delicious desserts. At the same time, it goes well with various fruits, as well as with chocolate, vanilla, mint and other ingredients used in the confectionery business. So why not make strawberry cake? Strawberry Mousse Cake

Strawberry mousse cake pleases with its bright appearance and gives a terrific taste. It may seem to many that it is rather difficult to make such a dessert, but if you follow the recipe, it turns out that not everything is so scary. For the recipe you will need two forms. One with a diameter of 20 cm - in it we will bake a cake, the other - 22 cm - for the assembly of dessert.

The dough will require the use of such products:

  • 160 ml of kefir;
  • 110 ml of coffee;
  • one egg;
  • 160 g of sweet sand;
  • teaspoon of vanillin;
  • 35 g of cocoa;
  • 55 ml of oil;
  • 160 g of flour;
  • one and a half teaspoons of ripper.

The strawberry mousse will leave:

  • a kilo of fresh / frozen strawberries (a third - in jelly);
  • 420 ml cream (33%);
  • 110 sweet powder, plus two spoons - in jelly;
  • a spoonful of lemon juice;
  • 25 g of gelatin (6 g for jelly).

Cooking method:

  1. In one bowl, mix all the dry ingredients for the dough, in another bowl shake the liquid (except coffee). Now we combine the two masses and mix until a viscous dough is formed.
  2. Now we make coffee. You can cook it in a Turk or just pour boiling water over the soluble composition. In our case, this is not so important, the main thing is that the drink is fragrant and hot. Pour it into the dough and mix.
  3. We take the form and bake the cake in it for 30 minutes (temperature - 180 ° C). As soon as it is ready, cool and remove from the mold.
  4. In a blender bowl we put strawberries, pour in citrus juice and chop.The resulting berry mass is ground using a sieve.
  5. Beat cream together with sweet powder until a dense mass. We put the grated berry, mix and taste - if not sweet enough, add a little more white powder.
  6. We pass to gelatin. We fill it with cold water (120 ml) and after 10 minutes we warm it in the microwave or in a water bath. The main thing is that the gelatin does not boil, otherwise it will become useless.
  7. The cooled gelatin is poured into a creamy-strawberry composition and sent to the cold for half an hour. Do not overexpose the resulting mousse in the cold so that it does not freeze in a bowl.
  8. Putting the cake together. To do this, take a detachable shape, walls and cover the bottom with parchment. Cut the cakes along and lay one half exactly in the center of the form. We pour out part of the cream, distribute it so that it fills the empty space between the baked goods and the metal. We send the workpiece in the cold for half an hour.
  9. If the mousse layer “grabbed”, then we also lay the second cake in the center, fill it with the remaining cream and again stand the future dessert in the cold, but for three hours already.
  10. In the meantime, cook the jelly. To do this, grind the berries with sweet powder with a blender. Pour gelatin with water and as soon as its granules swell, we warm up until they are completely dissolved. We combine the sweet berries with gelatin and pour the resulting mass over an already frozen cream. We put the "design" in the refrigerator until it completely solidifies.
  11. After, carefully unfasten the ring, remove the paper and transfer the cake to the dish. If desired, decorate with fresh berries.

Dessert with strawberry confit

Strawberry confit for cake is one of the most popular types of filling, which is used for making biscuit and mousse desserts. We offer a recipe for an amazing strawberry cake with a filling that perfectly combines the taste of juicy berries and basil.

In the dough you will need:

  • 185 g butter;
  • 85 g of sweet powder;
  • 425 g of flour;
  • one large egg.

Go to confit:

  • up to one kilo of strawberries;
  • 120 sweet sand;
  • 17 g of gelatin.

In mousse use:

  • liter of cream;
  • 25 g dried basil;
  • 110 g of sweet sand;
  • two egg yolks;
  • 12 g of gelatin.

For mirror glaze:

  • 200 g of white chocolate, syrup and sweet sand;
  • 120 ml of water and milk;
  • 17 g of gelatin.

Cooking method:

  1. The basis of our dessert is shortbread dough. Cooking it is easy enough, but you need to do everything quickly. We take out the oil from the refrigerator, grind it with a knife, mix it with flour, powder and an egg. For special chic, the dough can be dyed green using food coloring.
  2. We form a gingerbread man from the finished mass, put it in a bag and send it to cool for an hour.
  3. We get it, put it in the form, make the sides. We prick the base with a fork and again send for an hour in the cold.
  4. While we prepare the mirror glaze. It's not hard. Just soak the gelatin in cool water, and then melt it in a water bath. Pour water, syrup into a stewpan, add sugar and as soon as the ingredients warm up to 100 degrees, put pieces of chocolate. Melt it, then pour in the milk and beat the mass until smooth. We cover the composition with a film and send it to cool. Glaze can also be tinted, for example, in red.
  5. We pass to the strawberry confit. To do this, first soak the gelatin, and then melt it. Grind strawberries with a blender, put in a stewpan, pour sweet sand to it and warm the mass until the sweet granules are completely dissolved. Cool it a little and pour in the gelatin. Mix.
  6. It's time to get the dough. We send it to the oven for 15 minutes (temperature - 180 ° C). Cool the finished cake and fill the base with berry confit. Pour the remaining stuffing into a mold (smaller diameter) and put in the freezer for four hours.
  7. At this time, pour half the cream into the stewpan, put the basil, put the dishes on the fire and cook its contents for 10 minutes. Then the cream needs to be filtered.
  8. Combine the yolks with the sweetener and pour the resulting mass into the cream.We again put the stewpan on the fire, pour the dissolved gelatin into it and prepare the cream until a homogeneous delicate texture is obtained.
  9. Whip the remaining cream, and as soon as the cream has cooled, we combine the compounds together. Mix - our mousse with basil is ready.
  10. We get the base with the strawberry mass, fill it with part of the cream, on top of which we put the pre-chilled confit. We pour out the remaining cream and again send the dessert to the refrigerator until it cools completely.
  11. Once the cake has completely hardened, remove the ring, pour it with mirror glaze and decorate as you wish. Let the delicacy stand in the refrigerator to freeze the icing. After that, guests can solemnly make a treat.

With berry kurd

Kurd is a dessert cream based on berries or fruits.

We offer a dessert recipe with strawberry cream, the basis of which will be shortbread dough. The algorithm for its preparation can be seen in the previous recipe.

Ingredients for Strawberry Kurd:

  • a third kilo of strawberries;
  • half a glass of sweet powder;
  • two chicken eggs;
  • 85 g butter;
  • 45 ml of water;
  • a spoonful of starch;
  • one lemon.

Cooking method:

  1. Let's make shortbread dough and send it in the refrigerator for an hour. Then we lay out the base in the form, prick it with a fork and cover it with parchment. We put the load on top (for example, a bag of beans) and bake the cake for 20 minutes (temperature - 190 ° C). Then we remove the beans and keep the sand base in the oven a little more.
  2. As soon as we send the pieces of berries, fill them with water and cook for 40 minutes.
  3. Then we send the berry composition to a water bath, add the sweetener and lemon zest to it. After, put the pieces of butter and as soon as it melts, remove the mass from the heat, drive the eggs in and quickly stir everything until they are cooked.
  4. We return the composition to the fire, add the starch, which must be stirred in advance in water. Cook the Kurd until thickened.
  5. Then it should cool. Only then can it be poured on top of the sand base. Dessert sent to the refrigerator, and before serving, decorate with fresh berries.

Cake Strawberry Kiss

Summer has come, which means you can pamper your loved ones with delicious berry desserts. One of them is a cake with the beautiful name “Strawberry Kiss”.

Ingredients for the dough:

  • six eggs;
  • 185 g of flour and as much sweet sand;
  • poppy.

For custard:

  • 420 ml of milk;
  • two yolks;
  • 110 g of sweet powder;
  • pack of butter;
  • a spoonful of flour and as much starch;
  • a bag of vanillin.

For strawberry jelly:

  • 480 g of strawberries;
  • 16 g of gelatin;
  • 90 g of sweet sand.

For cream:

  • 245 g of sweet sand;
  • four squirrels;
  • a bag of vanillin;
  • on the tip of a knife of citric acid;
  • water.

Cooking method:

  1. First of all, prepare the biscuit dough. To do this, divide the eggs into components. Beat whites in dense foam along with sand. Add the yolks and whip again until smooth.
  2. Then we introduce the flour and gently mix everything with a spatula.
  3. We take two forms. Pour 1/3 of the dough into one, pour a little poppy into the other and fill with the remaining biscuit base. We bake cakes at the same time, the temperature is 180 degrees. We take out thin cake in 15 minutes and after another 15 we take out the second.
  4. We turn to the custard. To do this, measure the glass from the total amount of milk, and put the rest on the stove and heat it with vanilla. Shake the left milk with eggs, and mix with vanilla and sand. Pour the mixture into warmed milk and mix thoroughly so that there are no lumps. As soon as the cream thickens, put the oil and mix everything well (you can use a mixer).
  5. The next step is berry jelly. Put berries in a blender bowl, add sugar and beat. Then pour in the swollen and melted gelatin. Jelly is poured into two forms and sent to solidify. It is better to cover the form with a film so that later it is convenient to get jelly out of it.
  6. Cakes will be soaked in syrup.To this end, we take half a glass of white sugar and the same amount of water, warm the ingredients until the sweet crystals are completely dissolved.
  7. It’s the turn of the cream. Pour the sweetener into the stewpan, pour in a little water and put the composition on fire. We are waiting for five minutes. Beat whites in dense foam, without turning off the mixer, pour hot syrup. Then add acid, vanillin and beat for another 15 minutes.
  8. Putting the cake together. Divide the poppy seed cake in half and soak each part with sweet syrup. We take a detachable form, spread the impregnated poppy seed cake, distribute custard on top, then strawberry jelly. We cover everything with white cake, on which we also smear custard, berry jelly and cream again. It remains to lay on top of all this splendor the remaining poppy seed cake.
  9. Lubricate the surface and sides of the cake with a protein composition. We decorate the dessert at our discretion and let it soak in coolness.

Chocolate treat

A delicious berry treat is best prepared from fresh strawberries, as there is a lot of moisture in frozen berries.

 

For cream, it is desirable to use sweet powder, since sand does not allow you to create a sufficiently thick mass.

Ingredients:

  • five eggs;
  • three tablespoons of cocoa;
  • 65 g of chocolate;
  • 95 g of sweet powder;
  • 145 g of sand;
  • 320 g of strawberries;
  • 155 g of flour;
  • 580 ml sour cream.

Cooking method:

  1. Mix flour with cocoa and a cultivator. Beat eggs with sugar. If your mixer is "weak", then it is better to beat the whites and yolks separately.
  2. Then pour the dry ingredients into the egg mass, pour the chocolate melted in the water bath and knead the dough. Bake a biscuit for 40 minutes (temperature - 170 ° C).
  3. Mix sour cream with powder, cut the berries into thin plates.
  4. The cooled chocolate biscuit is divided into three cakes. Soak each cream and make a layer of berries between them.
  5. The sides and the surface of the dessert are also carefully covered with sour cream and decorated with strawberries. Send the treat to the refrigerator for five hours.

With strawberry souffle

Ingredients:

  • 145 g of flour and sweet sand;
  • four eggs;
  • teaspoon of baking powder;
  • 255 ml cream (33%);
  • 16 g of gelatin;
  • a glass of strawberries;

Cooking method:

  1. Beat eggs with sand, pour flour and a cultivator. The resulting mass is poured onto a baking sheet covered with parchment and sent to the oven for 20 minutes.
  2. We cut warm cake into equal strips, turn them and cool.
  3. Whip the cream. Grind strawberries with sand and send to whipped cream along with melted and cooled gelatin.

Bananas and strawberries are an excellent combination of ingredients that can be used to make a wide variety of desserts. Let's try to bake a banana-strawberry cake together.

Ingredients:

  • five eggs;
  • 185 g of flour;
  • 380 g of sweet sand (half for cream);
  • half a teaspoon of slaked soda;
  • 550 ml sour cream;
  • 18 g of gelatin;
  • 320 g of strawberries;
  • two bananas.

Cooking method:

  1. First, prepare a biscuit. To do this, shake the eggs with a sweetener, introduce the flour with soda, mix.
  2. We pour the resulting composition into a mold and send it to the oven for half an hour (temperature - 200 ° C). Cool the finished biscuit and cut into cubes.

  4. Mix sour cream with sand, pour dissolved gelatin.

Ingredients:

  • packing butter;
  • 550 g of cookies;
  • two packs of cottage cheese;
  • 110 g of sweet sand;
  • a bag of vanillin;
  • 110 ml sour cream;
  • 28 g of gelatin;
  • two bags of strawberry jelly;
  • 280 g of fresh strawberries.

Cooking method:

  1. First, break the cookies into pieces and put them in the blender bowl. Grind until crumbs and add melted butter. Mix.
  2. We put the detachable form (without bottom) on the dish, put the sweet base in it, which we ram directly with our hands. We send the workpiece to the cold.
  3. Now we soak the gelatin in warm water and prepare the curd cream. To do this, mix sour cream, sweet sand, vanilla and cottage cheese with a mixer. After, we introduce gelatin and mix everything again.
  4. On top of the sand base, spread the curd cream and return the “design” to the cold for an hour.
  5. We make jelly from the packaging, and cut the strawberries into thin slices.
  6. As soon as the curd cream hardens, lay out the berries on it, which we immediately fill in jelly. Do not rush into this process, otherwise the strawberries will pop up. First, make a layer of jelly with a thickness of 2 to 4 mm and put the dessert in the refrigerator for half an hour. Then we pour out the remaining gelling composition and again allow the dessert to cool.
  7. If the cake is completely frozen, you can remove the ring and proceed to decorate the dessert.
