Shortbread curd cheese cake with strawberries without baking

Components:

  • cookies "Jubilee" - 400 g;
  • cream 33% - 90 ml;
  • fresh low-fat cottage cheese - 450 g;
  • grated sugar in a mortar - 220 g;
  • vanillin - on the tip of a knife;
  • butter - 220 g;
  • gelatin - 10 g;
  • sour cream - 150 ml;
  • ripe berry - 250 g;
  • lemon - 0.5 pcs.

Step by step recipe:

  1. Before starting to cook a sweet treat, you need to rinse the strawberries well and dry each berry. If you neglect this advice, the berries will begin to stick together and can turn into a shapeless mixture, which will not have the best effect on the appearance of the delicacy and its taste.
  2. In a small enamelled bucket, melt the butter until liquid.
  3. Put the baking in a strong bag and grind it through the bag with a rolling pin.
  4. Mix shortcrust with butter.
  5. Put the resulting mass in a glass form.
  6. Place the cake in a cold place for 45 minutes.
  7. Pour gelatin into a small container and pour warm water on it, mix and cool this mixture.

  • fresh egg - 3 pcs;
  • strawberry berries - 0.4 kg;

  • ground sugar - 2 tbsp. l;
  • gelatin - 20 g.

To prepare a delicate treat, beat the strawberries with a blender to a mushy state. In a separate bowl, dilute gelatin in a small amount of heated water. Combine the resulting mixture with berry puree and sugar, beat the components until they are combined and put in the cold for half an hour. Mix cheese with beaten eggs, a pinch of vanillin and starch. Knead the air meringues lightly, put them into a mold and pour in the finished creamy mass. Bake the cake in the oven at a temperature of 200º no more than 12 minutes. Then lower the temperature by 50º and cook the cake for another 45 minutes. When the base of the dessert is ready, leave it in the oven turned off for 10 minutes. When the cake has cooled completely, put mashed berries on it and cover the treat with foil. After that, it must be kept in the refrigerator for at least 12 hours. Before serving, the cake is decorated with even circles of fragrant berries.

Components:

  • friable cookies - 200 g;
  • butter - 75 g;
  • chocolate - 2 tiles;
  • high fat cottage cheese - 0.5 kg;
  • ground sugar - 180 g;
  • low-fat sour cream - 0.5 kg;
  • milk - the third part of a glass;
  • fresh berries - 0.3 kg;
  • gelatin - a bag;
  • water - 80 ml.

Rinse the berries thoroughly under running water and cut into neat circles. Crush the cookies until crumbs are formed. Grate 50 g of chocolate on a fine grater and mix it with cookies and melted butter over low heat. Cover the tin with a foil and put in the cake blank. In a mug soak the gelatin with water, mix the resulting mixture and let it brew. Then grind the gelatin mixture in a steam bath. To prepare the filling, melt the remaining part of the chocolate by mixing with milk. Knead fresh cottage cheese with a fork and pour in the resulting milk-chocolate consistency and swollen gelatin. Turn the berries into a homogeneous consistency using a mixer. Gradually add mashed curd into the puree. Beat the egg with sour cream and sugar in a glass bowl. Add flour and salt to the tip of the knife. Mix all the ingredients together. Pour the cake base into a greased piece of butter. Bake for 50 minutes at 150º.
