If you want something tasty for tea, but there is no desire to spend a long time at the stove and indulge yourself with store buns, then there is nothing easier than making strawberry cheesecake! This dessert is relevant at any time of the year, because ripe strawberries are sold in any supermarket today. Delicate, aromatic, incredibly tasty and light cheese cake will delight all sweet tooth. Even those who closely monitor their figure can enjoy this cake.

Classic Strawberry Cheesecake

To make a classic cheese cake, certain ingredients are required.

It is mandatory to use Philadelphia cheese, but if there is none, any cheese with a pronounced creamy taste is taken.

To make a strawberry cheesecake, you need the following grocery set.

The basis:

  • 100 grams of any shortbread cookies (ideal with the taste of baked milk);
  • 70 grams of butter;
  • a tablespoon (without a hill) of sugar.

Filling:

  • 450 grams suitable for making cheese;
  • 130-150 grams of sugar;
  • two eggs;
  • a pinch of salt (without it, the cheesecake will turn out fresh);
  • for tsp vanilla and lemon peel;
  • 100-120 grams of sour cream.

Strawberry Top Layer:

  • 250 grams of strawberries (you can take both fresh and frozen);
  • 3 tbsp. l Sahara;
  • Art. l water;
  • tsp gelatin.

To make strawberry cheesecake meet all the requirements, they are prepared from products of room temperature, so a couple of hours before cooking, take the ingredients out of the refrigerator and leave to warm on the kitchen table.

Cooking:

  1. Grind cookies, or place them in a blender. Melt the chopped butter, put in the cookie, put the sugar, rub everything together with a fork until you get a thick slurry.
  2. A mold with a diameter of 20 cm is ideal for baking from the prescribed amount of ingredients. Lubricate it with a small amount of butter, put the dough out of cookies, spread over the entire surface, making low edges along the edges. Tamp. Bake for 5-7 minutes at 180 degrees. Remove the base from the oven, put to cool.
  3. We reduce the temperature in the oven to 150 degrees.
  4. Grind cheese (it’s easier to start whipping), with a mixer or a blender, beat until smooth. Enter sugar and salt, without stopping to beat, first break one egg, after a few seconds and a second. The last thing to add is the zest, vanilla extract and sour cream, again, beat well.
  5. Pour the filling on the base, which is again placed in the form, put in the oven for 50 minutes.

In the oven, the cheese pie must be exactly the agreed time, otherwise the filling will be too dense. After taking out the cheesecake, refrigerate it at room temperature, and then put it in the refrigerator for several hours.

Strawberry jelly will have to tinker a bit, but only for the first time the procedure will seem long and complicated. Next time, you won’t even notice how to prepare the top layer of the future cheesecake.

  1. Mix berries with sugar, chop in a combine or using a blender.
  2. Put the resulting mass on a small fire, keep stirring until sugar is completely dissolved. Do not hold to a boil!
  3. Pour gelatin with ordinary water, let it swell for a couple of minutes, then send it to the berry sauce, put on fire. Stir while dissolving the gelatin. Remove the cup from the stove, leave to cool (if foam appears, remove).

You can cook a delicious cheese pie without using an oven! How? Very simple!

Products will require the simplest:

  • 200-250 grams of cookies;
  • packaging of cottage cheese (250-280 grams);
  • half a glass of powdered sugar;
  • 2 teaspoons of lemon juice;
  • 200 grams of strawberries;
  • a glass of thick cream;
  • 50-80 grams of butter;
  • two large spoons of gelatin (in powder form).

Cooking Instructions:

  1. As in the first case, for the preparation of cottage cheese and strawberry cheesecake, a mold with a diameter of 20 cm is required. Cover it with paper (if the quality of the coating requires it) or grease with a drop of oil. Grind cookies with melted butter until gruel, put tightly in a mold, refrigerate for 2-3 hours.
  2. In the gelatin, enter the prepared lemon juice + 2 tablespoons of cold water. Put the cup in a water bath, dissolve the gelatin.
  3. Pour the powdered sugar into the cottage cheese, mix with strawberries chopped in a puree, whisk. Add the gelatin mass, whisk again.
  4. Whip cream until foam, mix in the cottage cheese with strawberries, whisk.
  5. Put the cream on the base of the cookies, smooth, remove for 3-4 hours on the shelf of the refrigerator.

Dessert with cottage cheese in the oven

Cheesecake and strawberry cheesecake is not as easy to cook as we would like, but still, this dessert is worth trying to bake on your own at least once! Although, according to the classical recipe, cheese is required, but with cottage cheese the pie turns out to be no less tasty.

For cooking you will need:

  • 200 grams of cookies;
  • 70-100 butter sweet butter (I want to note that the spread or margarine will not work);
  • 700 grams of soft curd;
  • 4 eggs;
  • half a glass of fat cream;
  • 700 grams of strawberries;
  • one and a half glasses of granulated sugar;
  • a pinch of salt;
  • tsp gelatin.

Execution is not much different from the classic version:

  1. Pound cookies into crumbs, grind with melted butter. Spread on the bottom of the mold, put in the refrigerator for 2 hours.
  2. Mix cottage cheese with sugar and salt, beat, add 2 eggs, beat, 2 more eggs, beat again. Pour in the cream, whisk.
  3. Dissolve gelatin in a water bath, mixed with a tablespoon of water. Add to the curd mass, whisk.
  4. In the form with the base, lay out half the filling.
  5. Cut the strawberries into slices, lay out evenly over the filling. Pour on top and evenly distribute the second part of the curd mass.
  6. Preheat the oven to 200 degrees, place the baked cheesecake. After 5 minutes, reduce the heat to 110 degrees, and cook the cake from 70 to 90 minutes (see by consistency, the filling should tremble).

Recipe with Mascarpone

This kind of cheese is great for making strawberry cheesecake, it tastes no worse than Philadelphia, but the price, especially the Russian counterpart, is much more affordable.

Components:

  • 250 grams of dry (shortbread) cookies;
  • 100 grams of butter;
  • 400 grams of Mascarpone cheese;
  • a glass of cream (fat content from 25%);
  • 2/3 cup sugar;
  • 1 tbsp. l gelatin powder;
  • packaging of vanillin;
  • several berries of strawberries;
  • a pack of strawberry jelly.

Cooking method:

  1. Break the cookies, melt the butter, mix, put in a greased form and well, but without fanaticism, tamp. Remove the cake in the refrigerator.
  2. Pour the jelly with two tablespoons of water, leave to swell for 30 minutes. Then dissolve by putting on a slow fire.
  3. Whip cream with sugar, salt, vanilla, then add cheese, with a whisk, beat the mass until smooth. Pour in the prepared gelatin, again, beat everything well.
  4. Put the filling on the cooked cake, on top - slices of strawberries, put in the refrigerator.
  5. Prepare jelly, as it is written in the instructions on the package, pour a thin layer on the cake, put in the refrigerator for 3-4 hours.

Option for dieters

Even if you tirelessly keep track of calories consumed, you still from time to time are drawn to feast on sweets, especially attractive cakes and cakes. In order not to feel remorse after the next piece of baking, try cooking a diet cheesecake with frozen strawberries and low-fat cottage cheese.

For the basics:

  • 50-60 grams of oatmeal;
  • 2 egg whites;

The last layer of strawberries:

  • 200 grams of frozen berries;
  • two tsp gelatin;
  • half a glass of water;
  • sugar substitute - to taste.

Cooking Technique:

  1. Grind oatmeal to a state of flour, a coffee grinder will help.
  2. Beat the whites, combine with oatmeal and all the other ingredients for the base. Spread in an even layer on the form, bake at 180 degrees 10 minutes. Remove to cool.
  3. In any order, mix all the ingredients for the filling, whisk with a whisk until you get a homogeneous curd mass, similar to melted cheese. Put the cake, bake for 40-45 minutes at the same temperature as it was.
  4. Dissolve gelatin by placing a cup of water and powder in a water bath.
