Basic recipe

From several oblong tubers of medium-sized potatoes, a slice of cervelat and a small slice of cheese, you can prepare a tasty and uncomplicated dish - accordion potato.

The ingredients of the basic recipe listed above should be taken in the following quantities:

  • 400 g of potatoes;
  • 200 g of cervelat;
  • 50 - 70 g of hard cheese;
  • salt, pepper and herbs for serving.

Roasting recipe step by step:

  1. Peel the potatoes. Then make deep cuts along each through 5 - 7 mm. If you take young root vegetables for the accordion, then you do not need to peel them, it will only be sufficient to thoroughly wash the tubers with the hard side of the dish sponge.
  2. Chop the cervelat into thin slices. Pepper-salt and fill the cuts in it with sausage slices.

Harmonica potato with bacon - a dish, for one serving of which you only need:

  • 5 large oblong potato tubers;
  • bacon, salt and spices to taste.

How to bake with bacon:

  1. A well-washed young (or peeled already mature) potato is cut transversely without literally cutting a couple of millimeters to the end. To carefully cut the potato, not being afraid to cut it, you need to put a tuber between two bamboo sticks and cut the root crop exactly before them.
  2. Thin strips of bacon cut into pieces approximately equal to the diameter of the potatoes and insert them into the slots of root crops. Prepared "accordions" tightly lay in a fireproof form with high sides.
  3. Salt potatoes in a form and season with spices, given the fact that bacon will also give its salt to the dish. Bake until soft at 180 - 200 ° C.

  • 200 g butter;
  • 200 g of hard cheese;

  1. Rinse washed and peeled potatoes at the same distance (1 - 2 cm) with transverse cuts, preserving the integrity of each.
  2. Slice the cheese into thin slices, and thoroughly freeze the butter and turn it into thin slices.
  3. Salt the resulting cuts in potatoes, pepper and fill with plates of frozen oil. Prepared in this way, "accordions" send for 50 - 60 minutes to bake in the oven at 200 ° C.

  • 600 g of potato tubers of approximately the same size;
  • 200 g pork tenderloin;
  • 20 ml of olive oil;
  • salt, garlic and meat seasonings to taste.

How to cook:

  1. Using a sharp knife or a special knife for peeling vegetables, thinly peel the potatoes. Then make transverse cuts in them at the same distance, but so as not to completely cut the potato.
  2. Cut the meat pulp into thick medallions that fit perfectly in the cuts of root crops. The hard fibers in the meat should be beaten off a bit.
