Classic potato zrazy with mushrooms in a pan

To prepare zraz, it is important to choose and cook potatoes correctly; it must be starchy, with a white peel. You can cook it in uniform or peeling it in a small amount of water.

Products:

  • potato - kilo;
  • a pair of eggs and bulbs;
  • mushrooms 200 grams;
  • salt and pepper;
  • breadcrumbs - 50 g;
  • frying oil.

Cooking:

  1. Cook the potatoes until cooked. In addition to salt, you can add 1 bay leaf and 3 peppercorns to the water for taste.
  2. Drain the water from the finished potato, turn it into a mashed potato and let it cool.
  3. Fry the onion in oil, cutting it into half rings or small pieces.
  4. Cut mushrooms (you can take mushrooms or oyster mushroom). Fry them in oil, salt and pepper.
  5. In a cooled potato, put a pinch of salt, half the fried onions and eggs. Knead the potato dough.
  6. Add the other half of the onion to the mushrooms.
  7. Make cakes from potato dough, put a filling on each, pinch. The resulting cakes are breaded in breadcrumbs and fry in vegetable oil in a hot pan.

Wonderful golden potato cakes are deliciously hot, with pickled cucumbers or pickled cabbage.

How to cook a dish in the oven?

In the oven, zrazy is baked on a baking sheet. They turn out not so golden as in a pan, but no less tasty.

Products:

  • potatoes - 900 g;
  • larger egg;
  • bulb;
  • 200 g of champignons;
  • salt - 1 tsp;
  • vegetable oil - 2 tbsp. l .;
  • flour - as much.

Cooking:

  1. Peel the potatoes, cook and shake, completely draining the water to a puree condition.
  2. Wash the mushrooms, finely chop and fry with 1 tbsp. l butter and onions.
  3. Add flour, a pinch of salt and an egg to the potatoes. After kneading with a spoon you get a thick potato dough.
  4. Form cakes (one needs about 2 tbsp.spoons of dough).
  5. Inside each cake, put a teaspoon of minced meat.
  6. Form the pies.
  7. Bake in the oven on a greased baking sheet at 180 ° C for about half an hour.

Serve hot with mayonnaise, sour cream or tomato sauce.

Cooking with minced meat

For minced meat, you can take chicken, veal or pork - it all depends on your taste preferences.

Products:

  • potatoes - 900 g;
  • a pair of eggs;
  • fillet - 200 g;
  • 150 g of champignons;
  • bulb;
  • 100 g breadcrumbs;
  • 100 g of vegetable oil;
  • salt and pepper.

Cooking:

  1. After peeling potatoes, boil in salted water until tender. Drain the water, shake the potatoes and leave to cool.
  2. Cook the minced meat by passing the chicken fillet through a meat grinder.
  3. In a frying pan in oil, fry the washed and finely chopped mushrooms. Add chopped onion to them.
  4. In another skillet, sauté the minced meat until tender.
  5. Combine chicken and mushrooms, salt and pepper.
  6. In the mashed potatoes, add eggs and salt, knead the dough. If it turns out to be liquidy, you can add a couple of tablespoons of flour.
  7. Make small cakes from the dough, put chicken and mushroom stuffing in the middle, pinch, and form oblong pies.
  8. Bread zrazy in breadcrumbs and fry in hot oil until golden brown on both sides.

Hot potato zrazy with minced meat and mushrooms can be greased with butter for flavor.

Lean Potato Zrazy with Mushrooms

These zrazy are cooked without flour and eggs. They are crispy and tender inside.

Products:

  • potatoes - 1 kg;
  • champignon gram 700;
  • a pair of onion heads;
  • 100 g semolina;
  • salt and pepper;
  • frying oil.

Cooking:

  1. After peeling the potatoes, cook it until tender. Drain and mash in mashed potatoes.
  2. Grind mushrooms and onions, fry in a pan.
  3. Make cakes from potatoes and lay the fried mushrooms inside.
  4. Dip the resulting pies in a dry semolina.
  5. Fry in a small amount of oil on both sides over medium heat.

Lenten zrazy should be turned over carefully, with a wide spatula, since they are quite soft.

Mashed potato recipe with champignons

Zrazy can be prepared not only from mashed potatoes, but also from minced meat or fish. But potato zrazy with mushrooms are more popular.

  • bulb and large egg;
  • 3-4 tbsp. l flour;
  • vegetable oil - 100 ml;
  • 20 g butter;
  • salt, spices.

Cooking:

  1. From the peeled potatoes, cook the mashed potatoes, adding 1 tbsp. a spoonful of butter and salt.
  2. Finely chop the washed mushrooms.
  3. Do the same with onions and fry it in vegetable oil.
  4. Pour mushrooms to it and fry until tender.
  5. Salt in the end, add spices.
  6. Prepare potato dough from potatoes by adding flour and 1 egg.
  7. Make small cakes from the resulting mass. In the middle of each, lay the mushrooms and pinch the edges.
  8. Fry in vegetable oil until a beautiful golden color on both sides.

With mushrooms and cheese

Grated hard cheese, added to the filling, melts during frying, and therefore makes zrazy juicy and tasty.

Products:

  • potatoes - 900 g;
  • 280 g of mushrooms;
  • cheese - 150 g;
  • 1 onion;
  • egg - 1 pc.;
  • 60 g of flour;
  • breadcrumbs.

Cooking:

  1. After boiling potatoes in salted water, prepare mashed potatoes from it.
  2. Grind the mushrooms with a knife. You can take any - oyster mushrooms or champignons. Fry them with onions in a pan.
  3. Grate the cheese.
  4. In the cooled potato mass, add flour and egg, knead the dough.
  5. Form small cakes from the dough, put mushroom stuffing in the middle and sprinkle with grated cheese.
  6. Pinch flat cakes to form even pies. They can be made oblong or round, if desired.
  7. Fry the potato cakes in hot oil, breading on both sides.

Serve with a salad of fresh vegetables and herbs.

With dried mushrooms

If there are no fresh champignons on sale, but really want to cook zrazy with mushroom filling, autumn stocks of dried mushrooms will help.

  • 1 tbsp. dried mushrooms;
  • chicken eggs - 2 pcs.;
  • 1 onion;
  • salt and spices;
  • cooking oil.

Cooking:

  1. Cook the dried mushrooms and fry them with finely chopped onions in oil in a pan. Do not forget to salt and pepper
  2. Cook the potato, you can use the remnants of yesterday's puree. Add the egg, salt and pepper to the potatoes.
  3. Prepare cakes from the dough, put the mushroom filling on top and pinch the edges.
  4. Fry zrazy over medium heat in oil until golden brown.

Serve with sour cream sauce and fresh vegetables.

Potato and carrot zrazy with mushrooms

If you add boiled carrots to the potato dough, this will give the finished dish an interesting, sweet taste and a cheerful orange color.

Products:

  • 3 large potatoes;
  • 1 large carrot;
  • egg - 1 pc.;
  • 300 g of mushrooms;
  • onion - 1 pc.;
  • salt and spices;
  • cooking oil.

Cooking:

  1. Boil jacket potatoes and carrots in a small amount of water until tender.
  2. Drain, mashed vegetables while they are hot.
  3. In a frying pan in oil, fry the mushrooms and finely chopped onions, salt and pepper to taste.
  4. In carrot and mashed potatoes, add raw egg yolk and spices to taste. It can be sweet paprika, hops-suneli or universal seasoning with dried herbs.
