In Georgia, housewives sometimes instead of collecting whole herbs take only the greenish seeds of fenugreek, which is the main component of the fragrance set. They have a tart nutty taste and aroma.
To some extent, Curry may be an alternative to Suneli Hmeli. It consists of identical ingredients. This seasoning has the same persistent pleasant aroma, but the taste is softer.
How to make at home
Many housewives prefer to experiment. So the Suneli Hops for them ceased to be a traditional spice of the Caucasus and was re-qualified as a branded “chip”. Below are 2 recipes: one of them is a simplified version of seasoning, the other is the result of a culinary experiment.
Recipe number 1
To prepare homemade seasoning, take fenugreek seeds (2 tsp), savory and coriander (1 tbsp each), dill (1.5 tsp), lavrushka (2 leaves), ground red pepper (0, 5 tsp).
Then they act according to this algorithm:
- seeds and laurel grind in a coffee grinder;
- powder the remaining ingredients;
- all components are combined and mixed well.
A small composition and a minimum of effort will allow you to have a fragrant seasoning reminiscent of suneli hops on hand.
Recipe number 2
Here the list of components is more extensive. Take not only fenugreek seeds, but also its leaves. The composition includes marjoram, thyme, savory, mint, bay leaf, turmeric. You will also need seeds of celery, dill and coriander, a small cinnamon stick, sea salt and black pepper. Do not forget about ether saffron, but its composition should be no more than 1 tsp.
In order to obtain a high-quality spicy seasoning, the sequence of connecting the components is maintained:
- first grind together the lavrushka and cinnamon;
- then crushed all cooked seeds, salt, pepper and savory;
- mixing both powders add turmeric;
- chopped herbs are placed in the end and mixed well.
No matter how varied the compositions of the seasonings being prepared, fenugreek should always remain the main component. Without its leaves or seeds, it’s hard to imagine the Suneli Hops. All herbs used in recipes must be thoroughly dried.
