Khachapuri - in Imereti - is the national dish of Georgia, which can be prepared both according to the most usual classic version, and with the addition of other ingredients.

Traditional Khachapuri Imereti Recipe

This cake is made on water with Imereti salty cheese. Of course, you can take another cheese, but it will affect the taste.

Required Products:

  • a pinch of salt and sugar;
  • 0.7 kg of cheese;
  • egg;
  • 15 grams of fresh yeast;
  • glass of water;
  • 0.5 kg of flour.

Cooking process:

  1. In the specified amount of warm water, you need to place the yeast, stir them so that they dissolve, add a little sugar and salt. Pour this mixture into a large container and put in flour. To make a solid consistency in the form of a ball from the mass, it should not stick.
  2. We cover it with something, put it in a warm place and wait until it rises, then crush it. So two times.
  3. Grind the cheese, add the egg, a spoonful of flour, mix everything well and make small balls.
  4. We divide the finished dough into pieces, roll it into flat circles, on which we place a ball of cheese and fasten the dough in the very center, so that the bag comes out.
  5. We turn it with the seam down and press it with your hands a little to make a tortilla again, but it’s not so flat and stuffed.
  6. Having made blanks of all products, fry them in a dry frying pan on both sides until golden brown.

You can make delicious cakes with salted cheese in the oven, as they will even more resemble the original, which is baked in a tandoor.

Tasty recipe: lean cakes in a pan

Required Products:

  • bag of dry yeast;
  • a glass of warm water;
  • half a spoon of salt and sugar;
  • 0.6 kg of suluguni or other cheese;

The real Georgian recipe in Imereti is very slightly different from the one that we are used to using.

Required Products:

  • a large spoon of sugar and a small spoon of salt;
  • egg;
  • a pack of yeast - 11 grams;
  • five glasses of flour;
  • 0.5 liters of milk;
  • 2 tablespoons sour cream;
  • 0.1 liter of vegetable oil;
  • 0.9 kg of cheese;
  • a spoonful of potato starch.

Cooking process:

  1. Milk needs to be heated slightly, add bulk products from the list and one glass of flour to it, mix well and leave for 15 minutes.
  2. Then pour in the flour that remains, pour the oil and leave again, but for an hour and a half.
  3. We divide it into pieces, roll them into thin cakes, fill them with grated cheese, fasten them in the middle of the edge, crush so that the bag becomes a cake again.
  4. We coat each preparation with a mixture of eggs and sour cream, and on top a little more grated cheese and cook at 190 degrees in the oven until the khachapuri becomes rosy.

Khachapuri - Imereti in Yogurt

The dough prepared on this sour-milk product turns out to be very soft, and it can be made with or without yeast.

Required Products:

  • 3 tablespoons vegetable oil;
  • a spoonful of sugar;
  • liter of yogurt;
  • 0.8 kg of cheese;
  • some salt to taste;
  • a small spoon of soda;
  • 2 eggs;
  • flour - see how much is needed, but about 0.6 kg.

Cooking process:

  1. Mix yogurt with soda, salt, sugar and leave for 60 minutes. Then pour in the vegetable oil, put the flour. It will be needed so much that the mass is not dense and slightly sticks. Remove again for 60 minutes.
  2. We prepare the filling: we rub the cheese, mix with the egg.
  3. Divide the dough into flat cakes, they should be thin, fill with cheese, fasten, flatten with your hands so that they become flat again, but thick enough and fry in a pan on both sides until the color becomes beautiful, rosy.

Kefir dough

Almost any dough is suitable for this baking, and it will turn out especially delicious on kefir.

Required Products:

  • half a spoon of soda;
  • a glass of kefir;
  • egg;
  • three glasses of flour;
  • a spoonful of salt and sugar;
  • a large spoon of vegetable oil.

Cooking process:

  1. Pour soda, salt and sugar into kefir, alter and let stand for 15 minutes.
  2. We drive in the egg, pour the oil and begin to fill the flour, bringing the mass to the desired state.

How to replace Imereti cheese in khachapuri?

Of course, the best way to bake is with real Imereti cheese, but it’s not easy to find in our country. But replacing it with another is not difficult. Cheese should be with a mild, slightly salty taste.

 

First of all, suluguni is good, but without a lot of salt, and some use feta cheese or even feta. But making such a replacement, be prepared for the result to be different.

If nothing suitable was found at hand, then you can mix a little boiled and grated potatoes with any salty cheese, and then cook according to the recipe that you have chosen.

The difference between the Imereti and Mingrelian version of khachapuri

These two types of khachapuri are almost identical. The main difference in the test, which is preparing for baking.

For the Imereti variant, you can prepare yeast dough, on kefir, on yogurt or even without yeast.

And for Mingrelian only the yeast kneading method is suitable.And one more difference of this dish is that a few minutes before the end of cooking it is covered with cheese plates on top and kept until it melts. And some still do not put the filling separately in the rolled layer, but immediately knead it in the dough.
