Cold cooked smoked brisket

  • pork belly - 2 kg;
  • salt - 6 tbsp. l .;
  • sugar - 1 tbsp. l .;
  • 3 pcs. bay leaf;

  • spices to taste;
  • garlic - 5-6 cloves.

How to cook:

  1. A mixture of mashed garlic, bay leaves and spices is made.
  2. For the marinade, half the spices, in addition to garlic, are added to the pot with water, boiled for 2-3 minutes and cooled.
  3. The breast should be processed with spices, pour marinade and put in the cold for 7-8 days.
  4. Then the meat should be soaked in water for about 10 hours, then left to dry.
  5. Hang the dried pieces in the smokehouse for one to two days, periodically adding wood chips. Ready brisket can be stored in the refrigerator for up to three weeks.

Hot smoking at home

To cook the brisket in a smoke-cured smokehouse, you will need the same products as for cold-smoked.

 

Required Products:

  • brisket - 1kg;
  • bay leaf 3 leaves;
  • salt - 10 tbsp. l .;
  • red pepper 0.5 tsp;
  • garlic 4-5 cloves;
  • sugar 1 tbsp;
  • water 1.5 l.

How to cook:

  1. The meat should be grated with salt and spices, placed in a cold place for several hours, so that it is saturated with spicy odors. This is a dry pickling method.To marinate the brisket in a cold way, you need to soak it in a marinade of salt, water, sugar, pepper and bay leaf.
  2. After marinating, the meat is dried in the air and hung in a smokehouse. Cooking time - approximately 3 hours depending on the characteristics of the unit.

In onion peel

For cooking you will need:

  • 1 liter of water;
  • 100 g of salt;
  • 2 handfuls of onion husks;
  • 3 cloves of garlic;
  • spices to taste and preference.

Cooking method:

  1. Rinse onion peel under a tap in a strainer.
  2. Then the husk is laid out on a towel and dries.
  3. Rinse the breast and pat it dry with a napkin.
  4. Place dried husks, salt, cold water in a pan and put this mixture on high heat. As soon as the brine begins to boil, put pieces of meat there.
  5. The brisket is cooked for about 20 minutes at low heat. After this, remove the pan from the heat, cover and let cool.
  6. Send the cooled pan to the refrigerator for 10 hours to marinate the meat.
  7. Then get the meat out of the water, wipe with a napkin and sprinkle with garlic and spices passed through the press.
  8. Wrap the breast in plastic wrap and send it to the refrigerator for 5 hours.

After a while, you can cut into thin slices.

Important! It is better to cook the dish in a dark bowl so that the pan does not stain with husk.

Smoked brisket with liquid smoke

Most recipes, including those for industrial cooking, are based on liquid smoke. Concentrate made from natural ingredients is safe and approved by experts. The recipe for cooking brisket with liquid smoke is similar to the method in onion husks.

The differences are as follows:

  1. Divide the husk into 2 parts, put the brisket on the first, and cover the second.
  2. Pour water into a pan with meat, add one tablespoon of liquid smoke.
  3. The pan is put on high heat, after boiling the brisket is cooked for 10 minutes. You do not need to cover with a lid, but you can install oppression on top.

  1. Chop the garlic and mix with salt.

  3. Put the meat in a container, cover and leave at room temperature for the whole day. Drain the resulting liquid, grate the meat with liquid smoke, cover with cling film and set aside for 30 minutes.
