Whole-baked beef

A piece of baked beef will never turn dry or stiff. The marinade will make the meat soft, and the foil will retain all the juices of the product.

To make the dish surely turn out delicious, for roasting it is better to take roast beef (a part of the dorsal muscle of a young bull, located closer to the neck). Such a piece will be cooked faster and guaranteed to retain its tenderness.

For the dish you will need:

  • fresh beef - 0.5 kg;
  • soy sauce - 2 - 3 tbsp. l .;
  • vegetable oil - 1 tbsp. l .;
  • grain mustard - 1 tbsp. l .;
  • ground black pepper - ½ tsp;
  • zira - ½ tsp;
  • curry - ½ tsp;
  • paprika - 1 tsp;
  • coriander - 1 tsp;
  • garlic - 2 cloves.

Cooking Algorithm:

  1. Wash the meat thoroughly, pat dry with paper towels, and clean from scum.
  2. For the marinade, mix the mustard, soy sauce, finely chopped garlic and spices in a large bowl. Additionally, you do not need to salt the composition: soy sauce will give the mixture its salt.
  3. Transfer the beef to the marinade and carefully roll the meat in it, while rubbing the spices into a piece.
  4. Cover the container with cling film and put it in the refrigerator for about 2 hours so that the roast beef is marinated. It is advisable to turn the piece every 30 minutes for uniform impregnation.
  5. Grease the prepared meat with refined vegetable oil (to preserve juice during cooking).
  6. Wrap beef in a couple of sheets of foil, carefully sealing all the holes.Make a few holes in the wrapper on top so that steam can escape.
  7. Put the workpiece on a baking sheet, pour a glass of water into it and send the dish to bake in a preheated oven to 250 ° C.
  8. After 10 minutes, reduce the temperature to 200 ° C. As the liquid evaporates, add additional water. The last time this is best done 30 minutes before the end of baking.
  9. Remove the finished meat from the oven, but do not unwrap for about 20 minutes so that the beef has absorbed all the remaining juices.

A small roast beef (0.5 - 1 kg) will be baked for about 90 minutes, and a larger piece should preferably be kept in the oven for about 2 hours.

The readiness of the dish can be determined by piercing the meat with a knife. The transparent juice that is released indicates the need to complete the baking process.

Hearty dinner with potatoes

The classic combination of baked beef with potatoes in the oven will be an excellent option for a family dinner and a festive feast.

 

For cooking, you need to take:

  • 0.5 kg of beef tenderloin;
  • 10 medium potatoes;
  • 2 to 3 onions;
  • 3 cloves of garlic;
  • 2 tbsp. l tomato paste;
  • 2 tbsp. l table vinegar;
  • 2 tbsp. l soy sauce;
  • 2 tsp pomegranate juice;
  • 1 tsp olive oil;
  • salt and spices are optional.

You can use ready-made seasoning for meat.

How to cook:

  1. Combine oil, juice, tomato paste, vinegar and soy sauce for the marinade in a deep bowl. Mix.
  2. Put the prepared piece of meat in the resulting composition and send it in the refrigerator to marinate for the whole night.
  3. Peel, wash and cut the onions in half rings.
  4. Fold the foil in several layers and lay the mold.
  5. Put onion in a baking sheet and pour it with marinade.
  6. Chop the beef in portions, stuff each of them with garlic.
  7. Peel, wash and cut the potatoes in circles.
  8. Mix meat with potatoes, add spices and pieces of butter. Stir and put on foil.
  9. Wrap the ingredients tightly and send to bake in an oven heated to 250 ° C for 40 minutes. Then lower the temperature to 180 ° C and cook the meat for another hour.

After the cooking time has elapsed, unfold the foil, put the dish on a large plate and serve.

Oven in the oven

Beef pork in beef foil is a real delicacy that can be served as a cold starter or as a main course with a side dish and sauce.

The main ingredients:

  • 700 - 800 g of whole beef brisket;
  • 4 cloves of garlic;
  • 2 tbsp. l acute mustard;
  • 1 tsp Paprika
  • 1 tsp Basilica
  • 0.5 tsp peppercorns;
  • 0.5 tsp thyme
  • 0.5 tsp coarse salt.

Step by step cooking:

  1. Grind peppercorns in a mortar to a powder. Combine it with the rest of the spices and salt.
  2. Peel and slice the garlic. Roll it in a mixture of spices.
  3. Wash and towel dry the beef. Make cuts in it with a knife, where to insert the pieces of garlic.
  4. Grate meat with spices and mustard, carefully rubbing the composition with your hands.
  5. Cover the dishes with beef wrap and send it in the refrigerator for 3 hours.
  6. Maintain a bowl of meat at room temperature for another 1.5 hours to warm the product.
  7. Put prepared meat on foil, seal on all sides so that juice does not leak.
  8. Transfer the bundle to a baking sheet and send in a preheated oven to 200 ° C to bake for 40 minutes.
  9. Then reduce the temperature in the oven to 180 ° C and hold for another 20 minutes.

So that the meat does not burn and turns out to be juicy, it is advisable to periodically pour water into the pan during cooking. It is better to get boiled pork from foil slightly “rested”.

How to bake meat steak

The best beef for steak is the meat of a dark red color from a mature animal. At the same time, it is worth choosing a part of the carcass without tendons and motor muscles. So the dish will turn out really tasty.

 

Required Products:

  • 0.5 kg of beef fillet;
  • ground pepper and spices to taste;
  • olive oil;
  • salt.

Cooking method:

  1. Wash the meat and dry it thoroughly with paper towels. Remove all transparencies. Cut the beef across the fibers into 5 pieces of equal thickness.
  2. Place the pan on a strong burner and pour oil into it. Put the steak and fry it on each side for 3 minutes.
  3. Mix the remaining oil with spices, salt, pepper and grease the surface of beef meat from 2 sides.

For the dish you will need:

  • 0.4 kg of beef fillet or tenderloin;
  • 3 tbsp. l soy sauce;
  • 2 ripe tomatoes;
  • 250 g of hard cheese;
  • 1 large zucchini;
  • 2 sweet carrots;
  • 2 onions;
  • 1 large eggplant;
  • 2 Bulgarian multi-colored peppers;
  • olive oil;
  • spices to taste.

Cooking process:

  1. Cut the beef into plates with a thickness of about 1.5 cm. Transfer it to a bulk container, add salt, pour in soy sauce and send to marinate for 1 hour.
  2. Wash, peel and chop the vegetables in circles, and chop the onion and garlic finely.
  3. Oil deep pan. Put the beef and vegetables in it. Salt again.
  4. Cover the mold with foil and put in a preheated oven to 200 ° C to bake.
  5. After 40 minutes, remove the mold and remove the foil. Sprinkle with cheese. Return the pan to the oven for another 15 minutes.
