  • milk - 3 glasses;
  • butter (butter) - 0.2 kg;
  • yeast (fresh) - 0.1 kg.

Execution Sequence:

  1. Prepare all the components immediately and place them on the table. At the time of preparation, they should have room temperature.
  2. Pour salt in one cup and yeast in another.
  3. In the pan, collect milk and heat it.
  4. Pour one cup of warm milk from the pan. Pour the yeast in the first half of the milk, and salt in the second half.
  5. The pan with milk should continue to warm. Now add the butter and sugar inside. These components should dissolve quickly.
  6. Sift 1 cup flour and add it to milk. Mix everything and remove the pan from the heat. The consistency of the mixture is liquid sour cream.
  7. When the milk mixture has cooled slightly, add all the remaining flour to it. All mix.
  8. Now add soaked yeast and salt to the pan.
  9. Break 4 eggs to other components. Mix everything very quickly. As a result, the dough should turn out to be warm.
  10. Cover the pan with the dough with a plastic bag. Put it in the refrigerator for 35-40 minutes.

Recipe for making kefir dough

Ingredients:

  • kefir - 0.3 l;
  • olive oil - 0.15 l;
  • sugar - 1.5 tbsp. spoons;
  • milk - 0.1 l;
  • dry yeast - 10 g.

  1. Heat all milk, add sugar and yeast to it. Mix everything and leave for 10 minutes.
  2. Pour kefir into a deep bowl, add olive oil to it. Heat this mixture a little on the stove.

Puff pastry base

The size of the glass that is used to measure the components is 250 milliliters.

The composition of the components:

  • flour - 2/3 cup;
  • margarine - 0.2 kg;

The second dough:

  • salt - 1 pinch;
  • egg - 1 piece;
  • flour - 2 glasses;
  • lemon - ¼ part.

Cooking:

  1. Take the cold margarine and cut it into small cubes.
  2. Sift 2/3 cups flour and add them to margarine. Mix everything and pour this mixture on a cutting board.
  3. Now finely chop the margarine with flour with a knife. The smaller the cubes, the better. Now collect all the small pieces into one big bowl. Knead this dough at this stage is not necessary.
  4. Now make the second dough. Pour 1.5 cups of sifted flour into a large bowl. Squeeze the juice from the fourth part of the lemon to it. Add some salt.
  5. Break the egg into a small bowl and fill it with boiled water, which has cooled to room temperature. Mix the egg with water and pour it into the dough.
  6. Stir the dough in a bowl. Add the remaining half a glass of flour and knead the mass with your hands.
  7. Roll the dough into a long layer. Its width should be about 0.5-0.7 cm.
  8. Put a lump of margarine with flour in the middle. Wrap it in an envelope with the main layer of dough.
  9. Place the dough with the seam down and place it in the refrigerator for 30 minutes. There is no need to cover the dough.
  10. After the specified time - take out the dough and roll it the same width. Fold the layer in several layers and put it in the refrigerator again for half an hour. Repeat this step 2 more times.
  11. Puff base is ready! If you will not bake the cake immediately, then wrap its bag and put in the refrigerator. Such a dough can also be frozen, then it can be stored much longer.

Choux pastry

Ingredients:

  • water - 0.1 l;
  • oil (cream) - 0.15 kg;
  • flour - 0.28 kg;
  • salt - 1 tsp.

Cooking:

  1. Take a thick-walled pan and pour water into it.
  2. Finely chop the butter and add it to the water.
  3. Bring butter and milk to a boil. Add some salt.
  4. Remove this mixture from the heat and add the flour. Mix everything very quickly.
  5. That's all - the choux dough for meat pie is ready.

Butter yeast dough

  • fresh yeast - 70 g;
  • milk - 2 glasses;
  • vanilla sugar - 1 pack;
  • purified water - 1 cup;
  • eggs - 3 pieces;
  • vegetable oil - 4 tbsp. spoons;
  • salt - 1 teaspoon;
  • margarine (can be replaced with butter) - 0.17 kg;
  • sugar - 2 glasses;
  • flour - 12 glasses.

Execution Sequence:

  1. Pour the yeast with warm water. Add a spoonful of sugar and 2 cups flour. Leave the dough to brew.
  2. Pour milk into the pan. Add chopped margarine and sugar to it. Heat this mixture on gas. Let it cool slightly.
  3. Add a little salt and all the vanilla sugar to the milk mixture.
  4. Pour the milk mixture into the yeast in a thin stream. Mix everything thoroughly.
  5. Break 3 eggs into the dough.
  6. Introduce one flour each. When it becomes elastic, lay it on the surface and wrinkle it with your hands. For convenience, grease your hands with vegetable oil, then the dough will not stick to your palms.
  7. Butter yeast dough is ready. This amount is enough for three pies.

How to cook on mayonnaise?

This sauce can completely replace eggs and vegetable oil, because these components are already present in mayonnaise. In addition, the dough is very tender.

Ingredients:

  • dry yeast - 8 g;
  • mayonnaise - 0.15 kg;
  • salt - ½ teaspoon;
  • milk - 0.25 l;
  • flour (wheat) - 0.5 kg;
  • sugar - 3 tsp.

Execution Sequence:

  1. Heat the milk a little, about 2-3 minutes.
  2. Add dry yeast, salt and sugar to it.
  3. Sift flour and add only 4 tbsp. tablespoons to the milk mixture. Set aside the dough for half an hour.
  4. After the specified time, add mayonnaise to the dough, it should have room temperature.
  5. Add the rest of the flour. Enter it gradually so that the dough has the correct consistency and mixes evenly.
  6. Now knead the dough with your hands on the work surface.
  7. Cover the bowl with a towel and let it brew for about 60 minutes.
  8. After the specified time, rinse the dough and you can use it for further baking.

With dry yeast in milk

You can replace milk with water, then it turns out - a quick recipe with dry yeast on the water.

The composition of the components:

  • dry yeast - 0.02 kg;
  • eggs - 4 pieces;
  • milk - 0.5 l;
  • salt - 1 teaspoon;
  • unrefined sunflower oil - 0.22 l;
  • sugar - 0.15 kg;
  • wheat flour - 1 kg.

Stages of preparation:

  1. Heat half a glass of milk a little and pour in the yeast. Add a tablespoon of sugar. Leave the yeast for 20 minutes.
  2. Heat the remaining milk quite a bit and break 4 eggs to it. Mix everything and add yeast here. Beat everything with a whisk or mixer.
  3. Add the remaining sugar, salt and sunflower oil to the dough.
  4. Sift the flour and introduce it into the dough in small portions, beat the dough with a mixer all the time.
  5. Rinse the dough with your hands a little and return it back to the bowl. Cover with a towel and place it in a warm place for 60-90 minutes.
  6. After the specified time, remove the dough and rinse it very slightly, right in the bowl. Again let it stand in a warm place for another 40 minutes.
  7. Milk yeast dough is ready. Now knead it thoroughly with your hands, and you can make pies out of it.

Sour cream for pie

The composition of the components:

  • chicken egg;
  • granulated sugar - 0.12 kg;
  • sour cream - 0.2 kg;
  • baking powder for dough - ½ teaspoon;
  • salt - 2 pinches;
  • flour - 1.5-2 cups.

Stages of preparation:

  1. Immediately remove the egg and sour cream so that they warm to room temperature.
  2. Beat the egg. Pour sour cream, salt, baking powder and sugar to it. All mix.
  3. Sift a glass of flour and gradually add it to the rest of the dough.
  4. Now add half a cup of flour. The dough should be tight. Therefore, if necessary, add half a glass of flour.
  5. The dough is ready. You can immediately start baking a pie.

Lean yeast dough

The composition of the components:

  • flour - 1 kg;
  • vegetable oil - 5 tbsp. spoons;
  • salt - 1 teaspoon;
  • dry yeast - 1 sachet;
  • sugar - 3 tbsp. spoons;
  • purified water - 2.5 cups.

Stages of preparation:

  1. Heat the water slightly on gas. Pour yeast into it.
  2. Add 3 tablespoons of sugar and a little salt. All mix.
  3. Sift all the flour and pour it into a large bowl.
  4. Pour the yeast into the sifted flour. Mix everything and add vegetable oil.
  5. Knead the dough with your hands on the board, it will take about 10 minutes. As a result, you should have an elastic and soft dough.
  6. Cover the lean dough with a towel and place it for 1 hour in a warm place.
  7. After 60 minutes, take the dough with your hands. Now you can bake muffin from it.

Five-minute dough on kefir (With the addition of soda)

This is a very light dough, because it is prepared without the addition of fatty ingredients.

The composition of the components:

  • table egg - 2 pieces;
  • soda - 1 teaspoon;
  • kefir - 1 cup;
  • 2 pinches of salt;
  • premium flour - 1 cup.

Stages of preparation:

  1. Heat the kefir a little bit in a saucepan or in a water bath.
  2. Add soda to kefir.
  3. Break into the mixture a little salt and 2 eggs. Mix everything thoroughly.
  4. Sift the flour and add it to the dough while whipping, one tablespoon each.
