Draniki is a dish that is associated first and foremost with potatoes, so it’s better to master the preparation of grated vegetable pancakes with this classic recipe, which will help you master the basics of technology and reveal the main secrets.

Potato pancakes in the oven are prepared from the following products:

  • 750-800 g of medium potatoes;
  • 1 egg
  • 120 g turnip onions;
  • 50 g sour cream;
  • 50 g of flour;
  • 6-12 g of garlic;
  • vegetable (sunflower or other) oil for lubricating the pan;
  • salt and pepper to taste.

Step by step cooking technology:

  1. Peel and carefully wash vegetables used in the cooking process. Grind onion turnips and other burning vegetables (garlic) using a knife;
  2. Having picked up a grater with large openings, rub the potatoes in small portions so that it is easier to squeeze the allocated juice.

  • 500 g of fresh young zucchini;
  • 2 chicken eggs;
  • 100 g of flour;
  • 30 g of fresh dill;
  • salt and spices to taste.

How to cook:

  1. In a suitable size, grate the vessel with cleanly washed zucchini with pre-cut places for attachment of the inflorescence and the stalk. It is permissible to grind both a coarse grater and medium holes;
  2. Let the grated squash mass stand for a while, to isolate the juice, which then will need to be carefully squeezed and drained;
  3. After that, raw eggs, finely chopped greens and flour are added to the squeezed squash. You should not be zealous with the last product, so that the finished pancakes do not turn out to be scum;
  4. Send the finished dough (with the consistency of thick sour cream) with a tablespoon to the prepared baking sheet, spreading it in separate cakes, and bake in a preheated oven at 200 degrees, this will take about 20 minutes.

Minced meat recipe

The recipe for these pancakes in the oven will appeal to men, because thanks to the minced meat from the ingredients, the pancakes are quite satisfying. Another important point is that potato pancakes are prepared with meat filling in silicone form for cupcakes, but first things first.

To bake hearty potato and meat pancakes, you must have at hand the following products:

  • 800 g peeled potato tubers;
  • 200 g of minced meat;
  • 120 g of your favorite hard cheese;
  • 1 egg
  • salt, spices for potatoes and minced meat to taste;
  • vegetable oil for processing molds.

The method of kneading and baking potato dough:

  1. Pick a potato through a grater with teeth-holes or just grate it on a very fine grater. Be sure to squeeze the juice that will stand out. To get a potato squeezed sufficiently, you will need to repeat the procedure at least three times;
  2. Also grate the cheese on a fine grater. Combine potatoes, cheese, egg, salt and spices. Knead the dough thoroughly with your hands so that all its components are evenly mixed in it;
  3. Stuffing the minced meat with spices and salt to taste, also mix well. Grease silicone molds for muffins with vegetable oil;
  4. At the bottom of each cake pan, put a tablespoon of dough and distribute it on the walls. Then put a spoonful of minced meat, which should be covered again with potato dough;
  5. Cover the mold with food foil in the oven for 40 minutes. 10-15 minutes before the end of cooking, remove the foil so that the potato pancakes in the oven become a beautiful color, but you should not overexpose them. In this case, the crust can become very stiff.

Proportions of products needed for cooking:

  • 600 g of potatoes;
  • 300 g of champignons;
  • 30 g sour cream;
  • 1 chicken egg;
  • 70 g of onions;
  • 50 g of flour;
  • 30 g of dill;
  • vegetable oil for frying mushrooms;
  • salt and spices to taste.

Sequencing:

  1. For the filling, fry the onions and mushrooms in a small amount of vegetable oil, salt, pepper;
  2. Prepare a dough base for potato pancakes by mixing grated and squeezed potatoes with eggs, sour cream, chopped dill, salt, spices and flour;
  3. On a greased baking sheet, form pancakes. To do this, use the culinary ring (or a ring cut from a plastic bottle). A little potato dough is laid out in it, then mushroom filling and again - dough. Everything is evenly distributed over the ring, and then the ring is removed.

    Any potato pancakes with filling should not be very thick. Workpieces over 1.5 cm in thickness are guaranteed to remain moist inside.

  • 600 g of potatoes;
  • 120 g of hard cheese;
  • 2 eggs;
  • 30 g of melted butter;
  • 10 g of green onions;
  • 1 clove of garlic;
  • salt, oregano and pepper to taste.

Working process:

  1. After peeling and washing in water, cut the potatoes on a coarse grater. Transfer it for ten minutes in a bowl or other suitable container with ice water. Then squeeze it well, add melted butter to it, drive in raw eggs, large cheese chips, chopped onions and garlic, salt and spices;
  2. Stir the mass well. After wetting the hands, stick a round or oval shape of pancakes, put out on a greased baking sheet. Bake the pancakes until cooked in a well-heated oven. The optimum cooking temperature is 200-220 degrees Celsius;
  3. There is another technology for cooking cheese pancakes in the oven. From potato (but without cheese) dough, billets-pancakes are formed and stacked on a baking sheet, which are sprinkled with cheese chips, and then baked.
