It is unlikely that you have met at least one person in your life who has never tried potato pancakes in his life. This original Russian dish is popular to this day, and modern housewives have come up with many variations of the classic recipe with the addition of various ingredients. A little about choosing products:

It is advisable to purchase potatoes with less starch. Tubers of such a vegetable, as a rule, have a more yellow color. Or the young potato is perfect, in the process of frying it will get a softer texture, and you will get rid of the taste of starch in the dish.

Cheese is better to take the one that smells best and tastes better. It makes no sense to spend money on “Parmesan” when you like ordinary cream cheese more. You can try happiness with cream cheese, but this is for very specific gourmets, not everyone likes it.

Onions in this dish are needed to neutralize the darkening of potatoes. Many housewives neglect its addition, and as a result, a shapeless, gray mass is obtained in the pan, which strives to decompose.

Cooking

Rinse the potatoes, peel, grate on a coarse or fine grater. If desired, juice can be drained from it, or liquid can be left for “juiciness”. It is better to grate the peeled prepared onion on a fine grater to get a puree from which you can drain the excess juice. Grate the cheese on a coarse grater.

Important! Grated potatoes must be combined with all the ingredients immediately so that it does not have time to darken.

In a plastic bowl, mix onions, potatoes, eggs, add cheese, salt, pepper and seasonings. The flour is laid last, after which the mass is mixed. By consistency, it should resemble oily sour cream.

For frying, you will need either a cast-iron skillet or with a non-stick coating. Before frying, heat the oil in a pan, then put the fritters with a spoon and fry on both sides.

The amount of oil may vary from personal preference: for “fry” fritters, add more oil, while the thickness of the fritters should be left within half a centimeter - this is the “golden mean”.

If you add less oil, and the pancakes should be made thinner, otherwise they just will not bake, but eating half-baked potatoes is not a pleasant pleasure.

Ham and cheese pancakes

 

In classic cheese pancakes, you can add a little ham. The recipe for this does not change much, just ham is added to the remaining components, cut into small cubes.

Zucchini pancakes with cheese

Using zucchini instead of potatoes will help to achieve a more delicate taste. Fried zucchini in itself acquires a certain sweetness, which, coupled with a creamy flavor, gives a wonderful taste. Often in zucchini pancakes add garlic and herbs.

By the way, a little advice about greens: dill goes well with potatoes, while parsley is best added to zucchini pancakes with cheese - it will add a little piquancy.

There can be many variations and combinations of chicken with vegetables: someone prefers seasonal vegetables, and someone over the eternal classics.

For chicken under cheese you will need:

  • potatoes - 600 gr;
  • chicken fillet - 500 gr.;
  • tomatoes - 1-2 pcs.;
  • onion - 1 pc.;
  • Bulgarian pepper - ½ pc.;
  • hard cheese - 300 gr.;
  • salt, pepper - to taste.

Rinse the potatoes, peel, grate, or cut into small circles. Onion, pepper, tomatoes cut into rings, straws and slices. Salt the fillet, pepper, cut into small steaks and lightly beat, or cut the fillet into pieces. Put all the ingredients on a baking sheet in layers: potato -> chicken -> onion -> tomatoes -> bell pepper, or alternatively change products in places if desired. Sprinkle with grated hard cheese from above and send to bake in the oven for about half an hour at a temperature of 180 degrees.
