Draniki are potato pancakes, and the name comes from the cooking process - rubbing the fruit on a grater. You can cook delicious pancakes not only by adding potatoes and eggs - potato pancakes with mushrooms, herbs, meat, cheese are also tasty and satisfying.

Potato pancakes with mushrooms

Potato pancakes with the addition of forest or porcini mushrooms are especially aromatic. Serve them with sour cream and herbs, and about 12-15 pieces come from the proportions of the products in the recipe.

Ingredients:

  • 700 grams of potatoes;
  • a handful of champignons;
  • 2 onions;
  • 50 grams of flour;
  • 1 chicken egg;
  • salt to taste;
  • 30 milliliters of vegetable oil.

Finely chop the onion with a knife. Prepare the mushroom filling. If the choice fell on Champignons or Oyster mushrooms, then you do not need to wash them. Forest mushrooms are washed from debris and parasites. Cut the fruit into a small cube.

Forest mushrooms are pre-boiled for 20-30 minutes, draining the first broth.

Pass the chopped onion over very low heat until the golden hue appears, and then add the mushrooms and wait about twenty minutes until all the liquid has evaporated.

Peel potatoes, grate or with a food processor. Add the egg, seasoning and salt to the potato mixture to taste, mix until smooth.

Add the fried onions and mushrooms to the grated potatoes, mix and start frying. To do this, spread a tablespoon of the mass on a preheated pan and fry for about two minutes on each side for readiness.

Draniki with pickled mushrooms

 

Added pickled mushrooms instead of fresh fruits give the finished dish a sour note. In addition, mushrooms are already ready, which means that the cooking time is significantly reduced.

Recipe Components:

  • potatoes - 8 pcs.;
  • pickled mushrooms - 350 g;
  • onion - 1 pc.;
  • chicken eggs - 3 pcs.;
  • wheat flour - 3 tbsp. l .;
  • salt to taste;
  • seasonings to taste.

Peel the potatoes, grate with medium-sized holes. Add finely chopped mushrooms and onions to it. Salt and pepper the mixture, beat the eggs and sprinkle with flour, mix. At this stage, you can taste the mixture - if all the spices are enough, then you can start frying.

The finished mixture must be laid out on the fire in small portions. Potato pancakes are fried for two minutes on each side.

Forest mushrooms with a special aroma and taste are added to the dish. In the absence of forest products, champignons can be used, but then the taste may be affected.

Ingredients:

  • potatoes - 10 pcs.;
  • forest mushrooms - 300 g;
  • onions - 2 pcs.;
  • 2 eggs;
  • sour cream - 4 tbsp;
  • wheat flour - 4 tbsp;
  • salt (not iodized) - 0.75 tsp;
  • refined oil - 100 ml.

Fry the mushrooms by chopping them into small pieces. Add finely chopped onions to them and continue frying over medium heat without a lid until all moisture is evaporated. Mushrooms should be well cooked, but not stewed.

Parallel to this process, peel the potatoes and the remaining two onions. Grind vegetables to a puree condition using a grater. If the potato is too watery and emits too much juice when rubbed, then it must be carefully separated from the pulp and drained. Add to the resulting puree finely chopped into a homogeneous slurry with a combine harvester mushrooms and onions, mix. Season with salt, season to taste and beat eggs with flour. Pancakes should be fried in a thick-walled pan with medium heat until tender.

Cheese pancakes

Fried potatoes with cheese in a pan is a delicious creamy dish that quickly cooks. They can surprise guests or quickly prepare dinner for the whole family.

You will need:

  • potatoes - 7 pcs.;
  • 3 medium onions;
  • hard cheese - 150 g;
  • 4 cloves of garlic;
  • flour - 4 tablespoons;
  • vegetable oil - 70 ml;
  • 2 chicken eggs.

Wash the potato fruits under ice water to remove excess starch, dry the surface with a towel and grind it with a combine or grater. Cut cheese, grate or with a food processor. Chop onions into small cubes, cut the garlic into slices. Mix all the ingredients, salt and pepper to taste, beat the eggs.

If necessary, add such an amount of flour so that it completely absorbs potato juice.

Preheat the pan, fry the mixture over medium heat until cooked, spreading it with a tablespoon. Ready-made pancakes have a brown tint.

Potato pancakes with mushrooms and chicken

Familiar potato pancakes can be diversified with a successful combination of toppings - mushrooms and chicken. The dish turns out quite juicy and aromatic.

Ingredients:

  • potatoes - 650 g;
  • butter - 60 g;
  • sour cream or heavy cream - 150 ml;
  • onion - 1 pc.;
  • mushrooms - 250 g;
  • eggs - 3 pcs.;
  • chicken - 250 g;
  • flour - 4 tablespoons;
  • seasonings to taste.

Cut the mushrooms into small cubes and fry in butter. Grate the potatoes on a fine grater and drain the resulting juice. When choosing a potato variety for potato pancakes, you need to be guided by its color - it should be a bright yellow hue.

  • 9 medium sized potatoes;
  • three eggs;
  • 1 large onion;
  • 3 cloves of garlic;
  • 4 tablespoons of wheat flour;
  • salt and spices to taste;
  • 300 grams of minced meat;
  • sour cream for serving.

Peel the potatoes, wash them under water and leave them in ice water in a container for a while - this will give the vegetable extra starch.

Peel the onion, let the garlic pass through the garlic press. Next, grate the fruits on a fine grater, and you need to do this quickly, since the potatoes begin to darken when in the air - this can ruin the appearance of the pancakes.

Add eggs, spices and wheat flour to the resulting mass. Mix thoroughly and fry in a pan with a thick bottom, spreading with a tablespoon. Frying one side, turn over the fritters and spread a small amount of minced meat. Leave to bake. Fry on both sides until golden brown.

Potato pancakes with mushrooms, cheese in pots

You will need:

  • more than half a kilogram of mushrooms;
  • potato pancakes (about 25 pieces);
  • a little more than half a glass of sour cream;
  • 50 grams of butter;
  • one and a half tablespoons of flour;
  • salt and spices to taste;
  • 2 medium onions;
  • frying oil.

Wash mushrooms under water, dry with a paper towel. Cut them into slices, put in a preheated pan and fry until the liquid boils completely. Peel the onion, cut into half rings. Add it to the mushrooms and mix, fry for another five minutes.

In another stewpan, melt the butter, pass the flour into it, and then add the sour cream and spices.

Grate the cheese with large holes, pour the sauce. Put pancakes and sauce, alternating layers. Bake the dish in the oven for half an hour.
