Classic recipe

Since we start with the classics, it is worth revealing some of the features of the American apple pie. First, to make the cake come out thin and crispy, use two types of fat for the dough: butter (provides a rich taste) and margarine (gives layering). Secondly, apples are best taken at least two varieties.

Pie according to this recipe is baked by many American housewives. There is nothing extraordinary in its composition, but the taste is delicious.

You will need products:

  • natural cow butter (solid, only from the refrigerator) - take 130 g;
  • flour - from 2 to 2.5 cups;
  • water (need cold) - at least 5 tablespoons;
  • salt is just a little.

This is for the test.

For filling:

  • apples - 400 g;
  • lemon juice - a tablespoon;
  • granulated sugar - approximately 100 g (or to taste);
  • flour - 3 tablespoons is enough;
  • cinnamon - a teaspoon is quite enough.

You can also add half a teaspoon of nutmeg.

For lubrication:

  • egg;
  • milk - no more than 50 g.

Sift the right amount of flour onto the board. We put in it solid cold butter and chop: it should get a kind of crumb. Pour it into a bowl deeper, add salt and mash further, using an ordinary fork. We will stop when we get very small grains. Pour in water and knead the dough with your hands. At first it will be crumbly, but in a few minutes it will acquire the necessary density.

We divide the mass into two parts - smaller and larger. We wrap each in a film and put it in the refrigerator. Let the dough freeze there for 30 to 40 minutes.

At this time, as the classic recipe prescribes, you need to do the filling. We turn the apples into small cubes about 2 cm in diameter. Sweeten them and flavored with cinnamon. Then add the rest of the ingredients. It remains to mix all this well, making sure that the apple slices are evenly covered with spices. The composition is also sent to the refrigerator.

While the oven is heating up to 200 C, we roll out most of the dough into a cake that is not too thin (somewhere in a centimeter thick). Carefully so that it does not tear, we wrap it on a rocking chair, and deploy it already in a baking dish.

We cut the smaller part, turned into a similar cake, with “ribbons” up to 3 cm wide.

Put the filling with apples and spices on the base of the dough so that a uniform layer comes out. And we hide under the "lattice" of test tapes. We pinch the edges, and cut off the excess dough. Ask the children to make a cake decoration out of them. They will be happy to help you.

Lubricate the raw cake with the milk-egg mixture (it needs to be quickly, literally in a minute, beat with a fork) and put it in the oven. Somewhere in 45 minutes it will be baked.

How to cook with caramel

A traditional American apple pie is a sweet dessert. But sometimes Americans depart from the classics and add “zest” to the dessert - salted caramel. It turns out very original.

Will be needed for the test:

  • flour and granulated sugar - 200 g each one and the second;
  • egg - take 5 pieces;
  • baking powder - you need a couple of teaspoons;
  • apples (preferably hard sweet varieties) - enough 4 pieces.

For caramel:

  • high-quality butter - a little less than 100 g;
  • granulated sugar - a glass with a "cap";
  • salt - at least 2 teaspoons.

A caramel pie is good because it is very easy to prepare the dough for it, just like for charlotte. The sequence is: beat eggs; pour sugar in and beat again; send loose ingredients to the egg-sugar mixture; whisk completely.

Proceed to the caramel. Choose a saucepan with a thicker bottom and melt in it granulated sugar with salt. Our main task is to prevent sweet crystals from burning and notice in time when the composition acquires a “caramel” shade. Immediately put the butter in the hot sugar “lava” and stir quickly: you need a uniform consistency. We will be vigilant and protect our hands from burns: the butter in sugar will begin to boil, hiss, spray and rise with a hat.

Without yawning, until we get the toffee, pour the caramel into the baking dish. We place apple slices on it, and on top we put an even layer of dough.

The oven has already heated up to 200 C, so it's time to set the pie inside. After 40 minutes, he will be ready.

What will be needed to quickly bake a small apple pie for a cozy evening tea party? Quite a bit of effort and time, because you don’t have to knead the dough yourself: we use puff pastry.

  • Ready dough - take one sheet;
  • apples - 6 pieces;
  • granulated sugar - you need 2 tablespoons. But the amount of sugar is allowed to vary. If the fruit is sweet, take less than the specified norm, add more to the sour ones.
  • cinnamon - a teaspoon (you can do without it);
  • sugar, but already vanilla (for sprinkling the finished pie) - the same amount.

We are taken for apples, turning them into thin slices. This is best done with a peeler, but you can also use a knife. Mix apples with cinnamon.

Then we roll out the dough and divide the sheet into 2 parts. The one that is larger should be slightly wider than the baking dish, moreover, taking into account the sides.

We put it in a container with greased oil and an additionally “dusted” flour bottom. Upstairs - half the apples, then sugar. And we repeat again - sprinkle the next layer of apple slices with sugar.

Decorate the top with strips cut from a smaller part of the dough and grease with an egg. Whipped, naturally.

Meanwhile, the oven scored 200 C. In it, a quick pie from Emma's grandmother will reach the condition in 15 minutes. And after spending 10 at a temperature of 160 C, it will acquire a pleasant goldenness.

With cheese

We suggest you try a very interesting recipe similar to an apple pie casserole with shortcrust pastry. If you bake not in large form, but in small cupcakes, it looks unusual, and it’s more convenient to pick it up.

We will cook from:

  • margarine (preferably creamy) - 400 g;
  • water - enough 4 tablespoons;
  • 4 eggs are enough;
  • salts - pinch;
  • apples - take 7 fruits;
  • Cheddar cheese - 300 g (it is perfectly replaced by unsweetened cottage cheese);
  • sour cream - not less than one and a half glasses;
  • granulated sugar - 2 glasses;
  • semolina - ½ cup.

There are two types of dough in the pie: shortbread and cheese. Knead the first by combining flour, margarine, water, salt and, lastly, eggs. We roll it out, move it as a base into a baking dish. Put apples on top. An interesting point: you can traditionally turn them into slices if you bake in a sufficiently large form. Or remove the middle from the fruit and fill them with a chopped mixture of nuts (any) and raisins, since I wanted to use molds, for example, for muffins.

We cover everything with cheese (or cottage cheese) dough. Stages of its preparation: beat the cream and sugar mixture; send eggs, semolina to it and beat again.

Add "Cheddar" or cottage cheese and knock down the last time.

Bake for 50 minutes at 200 C.

Cooking apple powder

Apple crumble (apple crumb), and, in our opinion, apple powder, entered the culinary notebooks of the hostesses, as compared to recipes for other dishes, literally "yesterday" - during the Second World War, when there wasn’t enough food, grocery cards were in effect, and the family was pleased to enjoy I still wanted to. So they came up with savings to build flour crumbs instead of dough. Fortunately, all that was required for her was a little flour, margarine and sugar. Well, and a few apples, so that would completely resemble a traditional apple pie. It turned out surprisingly great.

Are needed:

  • apples (preferably large and juicy) - take 4 fruits;
  • flour and granulated sugar - 200 g of the first and 250 g of the second;
  • cinnamon - enough sticks;
  • butter (or margarine, or in half of one and the other, so that the crumb turns out to be crunchy-delicious) - 120 g.

Throw apples into a saucepan, chopped coarsely. There are cinnamon and ¾ sugar standards. All this must be put on a weak fire and put out for 30 minutes, not forgetting to cover the dishes with a lid. Be sure to stir the fruit, especially at the beginning: there is a risk that they will burn. We won’t bring mashed potatoes to the state - we need the fruits to soften. We remove them in a baking dish - cool.

During this time, we just have time to do something like bread crumbs from flour, butter and sugar residues. Nothing complicated: just knead and rub with your fingers.

Pour crumbs on apples. Do not press!

A “dessert of war years” is baked at a temperature of 150 C for about half an hour, until the crumbs are gilded.

American Cinnamon Apple Pie

 

Americans love cinnamon and put it in almost any pastry. Therefore, a separate special recipe for an American apple pie with cinnamon is unlikely to be found. Choose any similar dessert, feel free to add cinnamon to it (spice remarkably sets off the taste of apples), even if there is no such component in the instructions for cooking, and get what you want.

The composition of the products for the traditional American apple pie does not imply any special delights. But on its basis, the culinary specialists invented a lot of yummy.

You will need:

  • Calvados (apple or pear brandy, can be replaced with good cognac) - at least 3 tablespoons;
  • milk is the same;
  • dried grapes (choose seedless) - enough 50 g;
  • apples - 3 fruits;
  • eggs - enough 2 pieces;
  • sugar (ideally cane) - about 180 g;
  • lemon, more precisely, its zest;
  • high-quality butter - a little more than 200 g.

Pour raisins with calvados (or cognac). Cut the apples as small as possible. We pour it into the pan, where 15 g of butter and 50 g of cane sugar are already mixed and heated. We stir and wait for the mass to get the color and density of the hot caramel.And add “drunk” raisins.

We send apple-raisin caramel in a uniform layer to the baking dish (do not forget to grease it with oil).

Top - dough from the remaining butter and sugar, eggs, flour, lemon peel and milk.

A culinary miracle should be baked in an oven heated to 190 ° C for 40 minutes.

American-style open apple pie

In the USA, culinary experts call it Pai. This is a great option and a worthy competitor to any charlotte.

What products are needed?

  • Flour - a total of 300 g;
  • vegetable oil (odorless) - take 120 g;
  • butter (hard and cold) - enough 100 g;
  • granulated sugar - 280 g;
  • apples - 6 large sweet hard fruits;
  • milk - at least a couple of tablespoons;
  • cinnamon (preferably ground) - 5 g is enough;
  • salt is the same;
  • nutmeg - ½ teaspoon.

The dough is not cooked for long. So it’s better to turn on the oven in advance so that by the right moment it will gain 180 C.

We build dough from flour, salt, granulated sugar, milk and vegetable oil. Immediately send to the baking dish and straighten with your fingers until it lies evenly along the bottom and walls. We pinch the perimeter figuratively, creating pretty borders.

Combine finely chopped apples with cinnamon, sugar, nutmeg and flour. Mix. The filling is ready. Put it in a "pot" of dough and sprinkle with crumbs. We made it by chopping cow butter with sugar and flour, just taken out of the refrigerator.

Now - in the oven for 45 minutes. And the open American apple pie is ready.
