The recipe for the “Dairy Girl” cake was brought to us from Germany, where famous chefs used condensed milk with the same name in its manufacture. Despite the fact that they began to use their products everywhere, they did not change anything. Easy to manufacture, it is also gaining popularity with its delicate taste, and many cakes allow it to be perfectly saturated.

Classic Cake "Milk Girl"

For cakes we take:

  • 140 g of flour;
  • 10 g of baking powder;
  • 2 eggs;
  • 370 g of condensed milk.

Guided by a step-by-step recipe, you will not make common mistakes:

  1. In a deep cup, whisk the eggs with condensed milk.
  2. Sift the flour, mix with baking powder and only then add to the cup.
  3. Knead thoroughly so that there are no lumps left. The consistency of the mass should resemble a dough for pancakes.
  4. For baking, you will need a baking sheet and parchment paper, which we cut into the size of the sheet. In order not to make a mistake with the form, you can draw circles on the reverse side, using a suitable plate.
  5. Pour a couple of spoons of dough into the middle of each and level.
  6. Bake at 200 degrees until a rosy color is formed (usually it takes 5 to 10 minutes for each cake).

You should get 6 or 7 blanks, from which we immediately remove the parchment and cut off evenly dry edges. The preparation of various creams and fillings will be considered further.

"Milk girl" with ice cream

Perhaps the most common assembly option that is used in our country.

To smear cakes you will need:

  • 120 ml of heavy cream;
  • 70 g of butter;
  • 300 ml of milk;
  • 120 g of sugar;
  • 2 tsp potato starch;
  • 1.5 tbsp flour.

We start cooking the cream:

  1. In a stewpan in a small amount of milk with a whisk, mix sugar, flour and starch, constantly adding the rest of the liquid.
  2. When a homogeneous mass is achieved, put on a slow fire and, without stopping to interfere, bring to a boil. The mass should thicken.
  3. Let cool a little and add butter. We mix.
  4. Separately, whip with a mixer, first on a small, and then at a high speed, chilled cream.
  5. Mix the ingredients.

Assembling a cake resembles working with Napoleon. Decorate with chopped scraps.

Step by step recipe for cake from Andy Chef

The famous chef uses a more original way of assembly.

For a “cream” cream he takes:

  • egg - 1 pc.;
  • sour cream - 350 g;
  • flour - 3 tbsp. l .;
  • butter - 120 g;
  • sugar - 110 g.

Cooking begins by mixing all the ingredients except oil. Cook the cream in a water bath, stirring constantly.

Do not be afraid that at first it will become very liquid, then lumps will begin to appear. After a while, it will thicken.

Cool and whisk with a butter mixer.

There will be a filling for which we will buy:

  • white chocolate - 50 g;
  • cottage cheese - 200 g;
  • powdered sugar - 4 tbsp. l .;
  • any berries;
  • cream - 500 ml;
  • butter - 40 g.

We start with the curd and butter. We carefully knead them together with a fork and wipe through a sieve. Separately, with a mixer, whip the cream that was previously held in the refrigerator with powdered sugar. We mix the two components.

We begin assembling a recipe for cake from Andy Chef. For convenience, you can take a special round shape in which we put the first cake and cover with a layer of filling. Sprinkle with berries and cover with the next billet. So repeat to the end. Cover with foil and put a small load. Hold in the refrigerator for a while. For leveling we have a “filling” cream, with which we lubricate the edges and top.

After solidification, apply another layer, and Andy Chef offers to paint the bottom half yellow. They will also change the color of the glaze (melted chocolate), which we pour on top at the edges, and lay the berries on it.

With sour cream layer

If you do not like custard or are afraid that you will not succeed, then use this option.

 

Take in equal proportions sour cream and sugar (in our case, a glass) and beat with a whisk or mixer until the crystals are completely dissolved.

You should not be zealous if you use a rustic product. Otherwise, get oil.

Dissolve gelatin in warm cream, let it brew and strain. In small portions, stirring, add to sour cream.

Note that such a cream can not be kept for a long time, since the mass will be difficult to align.

With fruit

You can diversify the taste using fruits that are perfect for this cake and make it elegant.

If you use fresh, be sure to let the water drain completely after washing, remove the stalks and damaged parts. It is better to pre-soak dried fruits in boiling water.

It is only worth noting that it is better to add them to the cream or filling. The cakes are too thin and when cooked with fruit, you won’t get the desired result.

With curd cream

For those who prefer this product, you can use this way.

We will need:

  • 5 tbsp. l powdered sugar;
  • 200 g of curd;
  • 500 ml cream 33-35% fat.

We start by whipping cold cream at an average mixer speed. Then we fall asleep powder and increase the speed of revolutions. When a clear relief begins to appear, turn off the device. It's time to add the cottage cheese. If the product used is coarse-grained, then it is worth rubbing it through a sieve.

Use the usual assembly of the cake, as for the "Milk Girl" with "ice cream" cream.

Milk Girl Cake with Mascarpone

Purchase in advance:

  • 250 g of mascarpone;
  • ½ cans of condensed milk;
  • 400 ml cream;
  • 10 g vanilla sugar.

Making a cream will not even make a novice cook. Only one caveat is that all products must be chilled.Just mix everything in a deep cup at once with a whisk, and then beat with a mixer until thickened. We lubricate each cake during assembly, give a flat look to the top layer and sides. Leave to insist in the refrigerator.

Chocolate treat

For sweet tooth who prefer to use cocoa or chocolate for baking. Diversify the recipe for the Milk Girl Cake.

There are four ways to do this:

  1. Add the cocoa product to the dough. It should be borne in mind that the number of spoons put in the mass should be subtracted from the amount of flour, so as not to get dry cakes.
